"THIS REFRESHING SALAD goes nicely with Mom's 'famous' chicken. She tells me she found she could get her children to eat lots of lettuce when it was combined with apples, nuts and mayonnaise."

3 cups torn lettuce
2 unpeeled red apples, diced
1/2 cup diced celery
1/4 cup raisins
1/4 cup chopped walnuts
DRESSING:
1/2 cup Miracle Whip
2 tablespoons pineapple juice
1 tablespoon sugar

Steps:

In a large salad bowl, toss lettuce, apples, celery, raisins and walnuts. In a small bowl or jar with a tight fitting lid, combine dressing ingredients; mix or shake until well blended. Pour over salad and toss. Serve immediately.

5 medium tart apples, cored and diced
2 tablespoons lemon juice
1/2 cup diced celery
1/2 cup chopped pecans
1/4 cup chopped scallion, white and light green parts only
1/2 cup dried cranberries
2 ounces smoked cheddar cheese, diced small
1/2 cup low-fat mayonnaise
2 -4 tablespoons fat free sour cream
1 teaspoon Dijon mustard
2 teaspoons chopped parsley
salt and pepper
1 head romaine lettuce, washed to serve on

Steps:

In a large bowl, toss the diced apples with the lemon juice.
Stir in the celery, pecans, scallions, cranberries, cheese, mayo, sour cream, mustard, parsley. Mix well. Add salt and pepper to taste.
Serve on beds of torn romaine lettuce or greens of choice.

We often pass around plates of this vegetarian chopped salad (no bacon) to accompany the drinks before we sit down at the table. The salad is a great mix of bitter and sweet flavors, juicy and crunchy, and comforting, too. Sweet/tart, crisp juicy apples like Braeburns, Jonagolds, Honey Crisp and Granny Smith work well here.

1 tablespoon sherry vinegar or champagne vinegar
1 teaspoon balsamic vinegar
1 tablespoon freshly squeezed lemon juice
1 small garlic clove, green shoot removed, puréed (optional)
2 teaspoons Dijon mustard
Salt and freshly ground pepper to taste
2 tablespoons walnut oil
5 tablespoons extra virgin olive oil
4 to 5 cups chopped bitter lettuces such as radicchio, endive or escarole
2 crisp, tart, juicy apples, cut in small dice (1/4 inch)
1/2 cup chopped walnuts
1/2 cup crumbled blue cheese or feta
1/4 cup chopped fresh parsley or a mix of parsley, chives and tarragon

Steps:

In a small bowl or measuring cup, whisk together vinegars, lemon juice, garlic, mustard, salt and pepper. Whisk in walnut oil and olive oil.
Combine all of the salad ingredients in a large bowl. Toss with dressing until well coated, and serve.
