MINT SIMPLE SYRUP



Mint Simple Syrup image

Fresh mint leaves are steeped with sugar and water to create a minty fresh sweet syrup to add a refreshing lift to cocktails, mocktails, pastry glazes, and frozen desserts. Store in the refrigerator for up to 1 month.

1 cup water
1 cup white sugar
1 cup fresh mint leaves

Steps:

  • Combine water, sugar, and mint leaves in a small saucepan. Bring to a boil, stirring until sugar dissolves. Simmer for 1 minute. Remove from heat and let syrup steep, about 30 minutes.
  • Pour syrup into a sterilized glass jar through a mesh strainer to remove mint leaves; let cool.

Use this pretty sugar anywhere you want a bit of mint flavor and a little crunch. We love to roll chocolate truffles in it but it would also be nice sprinkled over fresh fruit.

3/4 cup sugar
1/4 cup packed fresh mint leaves

Steps:

  • Process the sugar and mint in a food processor until the mint is finely chopped and dispersed throughout the sugar, scraping down the bowl of the processor with a spatula halfway through. Refrigerate for up to 3 days in an airtight container.

1 package (8 ounces) cream cheese, softened
1 teaspoon mint extract
6-2/3 cups confectioners' sugar
Red, green and yellow food coloring

Steps:

  • In a small bowl, beat cream cheese and mint extract until smooth. Gradually beat in as much confectioners' sugar as possible; knead in remaining confectioners' sugar. , Divide mixture into four portions. Tint one pink, one green and one yellow, leaving one portion white. For each color, shape into 1/2-in. balls. Dip one side of each ball into sugar. Press sugared side into small candy molds; unmold and place on waxed paper. Let stand 1 hour or until dry before storing in airtight containers; refrigerate. May be stored for up to 1 week before serving.

This was passed on to me by a friend. At the top she had witten: This buttermint sugar cookie recipe is not your common sugar cookie. You like something a little different, so this one is for you." I'm not exactly sure just how she meant that but it sounds good.

4 ounces soft pastel butter mints
1/2 cup granulated sugar
1/2 cup salted butter, softened
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
colored sugar sprinkle, if desired

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  • Place buttermints and a 1/2 cup granulated sugar in a sturdy plastic sandwich bag and crush with rolling pin, meat mallet, or hammer.
  • In a large bowl, combine crushed mint mixture with butter, with an electric mixer set at medium speed, beat for 2-3 minutes.
  • Add egg and vanilla extract; continue beating until well mixed.
  • Reduce speed to low, and add gradually add flour mixture. Beat until well mixed.
  • Shape balls into 1-inch balls; roll in decorator sugar if desired. Place 2 inches apart onto ungreased cookie sheets.
  • Bake for 10-12 minutes or until edges are slightly browned. Immediately remove cookies and transfer to a cooling surface.

I first had this served to me a few years back when Jamie Oliver was just becoming known in the UK. I didn't think it would be good but I found it really tasty and very refreshing. Now I love serving it up to people that haven't tried it. It is best to serve this as soon as possible because it tastes its best when it is fresh and not sitting around.

1 fresh pineapple, ripe
4 tablespoons sugar
of fresh mint

Steps:

  • Core the pineapple and cut it into quarters.
  • Thinly slice of bits of the quarters. Make your slices as thin as possible.
  • Arrange the slices on a plate in one or two layers. I tend to go for one.
  • Put the sugar into a mortar and pestle and then add the mint leaves.
  • Jamie then says to 'bash the heck out of it' until the color of the sugar changes to a greenish color. I find it smells really nice at this point.
  • Sprinkle the sugar over the top of the pineapple slices and serve.
