CHICKEN QUESADILLAS
This is a great recipe for parties. I freeze the leftovers; they reheat quite well. The zesty chicken and cooked peppers are a succulent delight when mixed with the melted cheeses. Cut the quesadillas into wedges and serve with sour cream and salsa.

Steps:
- Preheat the broiler. Grease a baking sheet.
- Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the oil in a large saucepan over medium heat. Stir in the green bell peppers, red bell peppers, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
- Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese, bacon bits, and Monterey Jack. Fold the tortillas in half and Place onto a baking sheet.
- Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minutes.

CHICKEN & BROCCOLI QUESADILLA
When I made this, I needed something healthy that would also satisfy my taste buds. The flavor of garlic dispersed through the healthy taste of soft broccoli and meaty chicken is more than satisfying to the mouth without causing the urge to workout after eating.

Steps:
- Rinse and separate broccoli into extra small pieces. Peel and mince garlic.
- Season chicken with sea salt, pepper, and Mrs. Dash Original. Cook chicken with 1 tbsp of the olive oil on medium heat. Cook until browned on each side.
- Remove chicken and cut/shred into flat pieces. It's okay if it's not fully cooked in the center. Cooked or not, put chicken back into the pan.
- Add remaining 3 tbsp of olive oil, the broccoli pieces, and minced garlic. Stir to evenly distribute the olive oil throughout the broccoli and chicken. Season with sea salt, pepper, and Mrs. Dash Original (if desired). Cook for several minutes, until broccoli is soft.
- Remove chicken and broccoli mixture, and set aside. Place tortilla on pan and immediately put on cheddar cheese (about 1/4 c). Sprinkle 1/4 of the broccoli and chicken mixture on top of cheddar, then add about 1/4 c of the Monterey Jack cheese. Place tortilla on top and flip. Cook for a minute or two, or until slightly crunchy. Repeat this step 3 more times. Enjoy!
BROCCOLI QUESADILLAS
Got this from Delicious Living website. So easy and quick. Here's what the recipe says: "The next time you cook broccoli for dinner, add a little extra so you can make these the next day for lunch or an after-school snack (or even a light supper). You might need to make one at a time, depending on the size of your pan. If desired, keep finished ones warm in the oven until all are cooked." I use cheddar cheese, since I have it on hand. Cook time DOES NOT include cooking the broccoli.

Steps:
- Preheat griddle or heavy skillet over medium heat for 3 minutes. Add a flour tortilla or two and sprinkle each with about 1/2 cup cheese.
- Divide broccoli (about 1 cup per quesadilla) between tortillas, sprinkling it over the cheese, then divide remaining cheese over broccoli.
- Top each tortilla with a second tortilla and cook for several minutes, until bottom of lower tortilla is light gold.
- Flip quesadilla over and cook on second side until bottom is golden. Cheese should be completely melted. Remove from pan and slice into wedges. Serve hot or warm. Cut into smaller wedges for appetizers.
