- In a small saucepan heat the sugar and water and bring to a boil. When the sugar is completely dissolved remove from heat and cool to room temperature. Refrigerate, covered, for up to 1 week.
- Simple syrup can be used to sweeten iced tea, mint juleps or other alcohol based drinks, fruit salad, as well as a soaking liquid for in between layers of genoise cake.

- Gather the ingredients.
- In a small saucepan over medium-high heat, bring the water and sugar just to a boil, whisking to dissolve the sugar. Add the mint leaves.
- Reduce the heat to a simmer and cook, without stirring, until the syrup is slightly reduced and syrupy, about 10 minutes.
- Transfer the syrup to a small metal bowl and let stand to cool slightly, about 10 minutes.
- Discard the mint leaves. You can use the syrup immediately, or let it cool to room temperature. Store in a covered glass jar in the refrigerator for up to one month.

- Make the black tea: In a small saucepan, bring the water to a boil. Once boiling, remove the pot from the heat and add the tea bags. Steep for 5 minutes, then remove the tea bags. Transfer the tea to the refrigerator and let cool completely.
- Make the mint simple syrup: In a small saucepan, bring the water and sugar to a simmer, stirring to dissolve the sugar completely. Remove the pot from the heat and add the mint leaves. Steep for 15 minutes, then strain the syrup into a glass jar or liquid measuring cup. Discard the mint leaves. Transfer to the refrigerator and let the syrup cool completely.
- To assemble, in a large, resealable carafe, combine the black tea, sparkling lemonade, mint simple syrup, and bourbon, if using. Gently swirl the bottle to combine. Chill in the refrigerator until ready to serve.
- When ready to serve, pour the sweet tea over ice.

- In a pot, boil the water with the tea bags. Once liquid has boiled, remove the pot from heat. Remove tea bags after desired bold/mild flavor.
- In a small saucepan, add water, sugar and mint and place over medium heat. Bring liquid to a boil then remove from the heat. Allow the syrup mixture to cool. Pour syrup into tea and mix together well. Serve tea over a glass of ice.
