ORIGINAL PHILLY CHEESE STEAK

I had this in some diner in America. Have one right after work when you're hungry and tired. It's the best.

Yield 4 servings or 2 very hungry servings

Number Of Ingredients 10

2 onions, peeled and finely sliced
Extra-virgin olive oil
Freshly ground black pepper
Splash white wine vinegar
8 very thin sirloin steaks
Sea salt
8 ounces (225 grams) provolone
1 French baguette
A couple of handfuls of wild rocket, washed
French mustard

Steps:

  • Cook the onions in a little olive oil until golden brown, season with freshly ground black pepper and add a splash of white wine vinegar.
  • Drizzle olive oil over the thin slices of meat and season with sea salt and freshly ground black pepper. Cook the steaks on a very hot griddle pan, and after a couple of minutes turn them over and shave the cheese onto each steak. Warm the baguette in the oven.
  • To serve, slice the baguette in half, pile on the fried onion, then the steaks, top with rocket and finally spoon on the mustard. Place the top on the bread and slice into 4 or 2 pieces.

Chef Mario Hevia developed this Asian twist on an American classic in a quest to bring together contrasting flavors and textures of sweet and salty, tender and crunchy. And, of course, with gooey cheese on top. He melts the cheese directly in the pan before laying it on top of the sandwich fillings, making it extra gooey.

¾ pound top round beef, thinly sliced
½ cup Kalbi-style steak marinade, or as needed
2 tablespoons oil, divided
2 cups chopped onions
1 cup diced jalapeno peppers
½ cup chopped kimchi
1 cup shredded American cheese
¼ cup mayonnaise
4 sandwich rolls, split and toasted

Steps:

  • Mix beef and marinade together in a bowl; set aside to marinate.
  • Heat 1 tablespoon oil in a skillet over medium-high heat; saute onions until lightly golden but still firm, 5 to 10 minutes.
  • Heat 1 tablespoon oil in a separate skillet over medium-high heat; saute jalapeno peppers until very lightly golden, about 5 minutes. Mix jalapeno peppers into onions. Add kimchi and cook until heated through, 2 to 3 minutes. Remove skillet from heat.
  • Heat a separate skillet over medium-high heat and cook steak, stirring constantly, until browned and cooked through, about 5 minutes.
  • Return 3/4 cup kimchi mixture to skillet over medium heat; add 1/4 cup American cheese. Cover skillet and heat until cheese is melted, 2 to 3 minutes.
  • Spread 1 tablespoon mayonnaise onto the bottom half of 1 roll and top with 1/4 of the beef. Layer kimchi-cheese mixture on top of beef and top with roll. Repeat with remaining ingredients to create 3 more sandwiches.

RACHAEL RAY'S PHILLY CHEESESTEAK

I got this recipe from Rachel Ray's 30 minute meals cookbook and loved it! I use sweet Maui onions, add grilled mushrooms and use Sara Lee's hoagie rolls for freshness. You can also substitute provolone cheese for Cheez Whiz instead.

1 tablespoon extra virgin olive oil
2 large yellow onions, thinly sliced
coarse salt
pepper or steak seasoning
2 teaspoons extra virgin olive oil
1 1/2 lbs lean beef tenderloin or 1 1/2 lbs sirloin, thinly sliced
1 teaspoon garlic salt
fresh ground black pepper
8 slices provolone cheese
4 sandwich hoagie rolls, split lengthwise (I use Sara Lee)

Steps:

  • Heat a medium saucepan over medium high heat.
  • Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan.
  • Add onions and season with salt and pepper or steak seasoning blend.
  • Cook onions, stirring occasionally, 10 minutes or until onions are soft and caramel in color.
  • Heat a heavy griddle pan over medium high to high heat.
  • Wipe griddle with a drizzle of oil using a paper towel.
  • Sear and cook thin sliced steaks until brown but not crisp, about 2 minutes on each side.
  • Cook steaks in single layers in 2 batches and tenderize by cutting into meat with the side of your spatula while they cook.
  • When the steaks are browned, just before you remove them from heat, sprinkle them with garlic salt and pepper.
  • When all of the steaks are cooked, line each of your split rolls with 2 slices of provolone cheese.
  • Pile 1/4 of your meat and onions on to the griddle and mix together with your spatula.
  • Pile the meat and onions into rolls on top of the cheese.
  • The heat from the meat and onions will melt the cheese.
  • Repeat for remaining servings and serve.

These sandwiches, which are inspired by Philly cheese steaks, are made with beef marinated in classic Korean barbecue flavors. Tender rib-eye steak is thinly sliced and pounded to mimic the texture of shaved meat, then tossed in a savory garlic-soy marinade. Thin-skinned shishito peppers, a common ingredient in Korean cuisine, stand in for traditional bell peppers. Shishito peppers vary in spiciness, so once blistered, they will add mild, or sometimes bold, heat to the sandwiches. Rib-eye creates the juiciest sandwiches, but sirloin is more affordable, and a solid substitute.

1 1/2 pounds boneless rib-eye steak, sliced crosswise 1/8-inch-thick
1/2 cup low-sodium soy sauce
1/2 cup coarsely chopped scallions (from about 6 large scallions)
3 tablespoons turbinado sugar
2 tablespoons minced garlic
1 teaspoon black pepper, plus more for seasoning
1/2 teaspoon toasted sesame oil
1/2 cup safflower or canola oil
1 large yellow onion, halved and sliced 1/4-inch-thick (about 2 cups)
8 ounces shishito peppers, stemmed and halved lengthwise
Kosher salt
4 (10-inch) hoagie rolls, split lengthwise
8 slices American cheese

Steps:

  • Arrange meat in a single layer on a large cutting board. Cover with plastic wrap and pound with a meat mallet (or the bottom of a small skillet) until meat is super thin, about 1/16-inch thick.
  • In a large bowl, combine soy sauce, scallions, sugar, garlic, pepper and sesame oil. Add meat and toss to evenly coat, massaging sauce into meat.
  • In a large skillet, heat 1/4 cup of the safflower oil over medium. Add onion and shishito peppers, and season with salt and pepper. Cook, stirring occasionally, until tender and lightly caramelized, 8 to 10 minutes. Divide among the rolls.
  • In the same skillet, heat 2 tablespoons safflower oil over medium. Add half of the beef and season with salt and pepper. Cook, stirring to break up the meat, until golden brown and cooked through, about 3 minutes.
  • Form into 2 even mounds and top each mound with 2 slices of cheese. Remove from heat and let stand until cheese melts, about 1 minute. Using a flat spatula or large serving spoon, scoop into 2 rolls and drizzle with pan juices. Wipe out skillet with paper towels. Repeat with remaining safflower oil, beef and cheese to make 2 more sandwiches.
