MINT JULEP TRUFFLES



Mint Julep Truffles image

Feel free to decide just how boozy you want these cocktail-inspired truffles to be.

Yield 18 to 24 truffles

Number Of Ingredients 8

6 ounces good-quality semisweet chocolate (not chocolate chips), coarsely chopped
2 ounces good-quality milk chocolate (not chocolate chips), coarsely chopped
1/2 cup heavy cream
2 tablespoon unsalted butter
3 to 4 tablespoons bourbon
1/2 teaspoon pure peppermint extract
1/3 cup sugar
2 packed tablespoons fresh mint leaves

Steps:

  • Put the chopped semisweet and milk chocolate in a medium bowl. Bring the heavy cream and butter to a simmer in a small saucepan. Pour the cream mixture over the chocolate, completely covering it, and let sit for 5 minutes. Stir with a spatula until the chocolate is completely melted, smooth and glossy. (If the chocolate doesn't melt completely, microwave the mixture on high in 15-second increments, stirring in between, until fully melted.) Fold in the bourbon and peppermint extract until they are incorporated. The mixture will look separated at first, but keep stirring until it is uniform.
  • Set the bowl over a larger bowl of ice water, and let the mixture chill for 3 minutes, stirring occasionally, until it has thickened a bit and become homogeneous. Pour the mixture into a shallow 2-quart baking dish or 9-inch pie plate. Cover with plastic wrap, and refrigerate until set, about 3 hours.
  • Meanwhile, process the sugar and mint in a food processor for 1 minute until the mint is finely chopped and dispersed, scraping down the bowl with a spatula halfway through. (The mint sugar can be refrigerated in an airtight container for 2 to 3 days.)
  • Scoop tablespoon-sized balls of the chocolate mixture, and roll them between gloved hands to shape them, working quickly, as the balls melt fast. Put them on a plate or rimmed baking sheet, and refrigerate for 10 minutes. Put the mint sugar in a shallow dish, and drop the balls in a few at a time, shaking the dish to coat them on all sides; transfer the truffles to a platter, shaking off the excess, and refrigerate until you are ready to serve them. (Once the truffles have been coated, they must be served that day. Uncoated, they can be stored overnight in the refrigerated in an airtight container or covered with plastic wrap, then coated the day they're served.)

MINT SYRUP:
2 cups sugar
2 cups water
2 cups loosely packed chopped fresh mint
EACH SERVING:
1/2 to 3/4 cup crushed ice
1/2 to 1 ounce bourbon
Mint sprig

Steps:

  • For syrup, combine the sugar, water and chopped mint in a large saucepan. Bring to a boil over medium heat; cook until sugar is dissolved, stirring occasionally. Remove from the heat; cool to room temperature. , Line a mesh strainer with a double layer of cheesecloth or a coffee filter. Strain syrup; discard mint. Cover and refrigerate syrup for at least 2 hours or until chilled., For each serving, place ice in a metal julep cup or rocks glass. Pour 1/4 cup mint syrup and bourbon into the glass; stir until mixture is well chilled. Garnish with mint sprig.

1 teaspoon white sugar
5 fresh mint leaves, or to taste
1 (1.5 fluid ounce) jigger bourbon, or more to taste
4 ice cubes, or as desired

Steps:

  • Place a tall glass in the freezer until frosted.
  • Mix water and sugar together in the frosted glass until sugar is dissolved. Twist mint leaves to release the scent and flavor from each leaf; add to glass. Fill glass 1/4-full with bourbon; add ice. Garnish glass with a mint leaf.

2 cups vanilla wafers, crumbled
1 cup powdered sugar
2 tablespoons unsweetened cocoa
1 cup walnuts or 1 cup pecans, finely chopped
1/4 cup Bourbon
1 1/2 tablespoons corn syrup
1/2 teaspoon peppermint extract
powdered sugar, for rolling balls

Steps:

  • In a large bowl, combine wafer crumbs, 1 cup powdered sugar, cocoa and nuts and mix well.
  • Add bourbon, corn syrup, and peppermint extract and mix together with your hands until the mixture holds together.
  • Form the mixture into 1 inch balls and roll them in powdered sugar.
  • Store in an airtight container until ready to serve.

10 mint leaves, plus a sprig for garnish
1 1/2 teaspoons superfine sugar
Seltzer water
Crushed ice
2 1/2 ounces Kentucky bourbon whiskey

Steps:

  • Place the mint leaves in the bottom of an old-fashioned glass and top with the sugar. Muddle these together until the leaves begin to break down. Add a splash of seltzer water, fill the glass 3/4 full with crushed ice, and add the bourbon. Top with another splash of seltzer, stir, and garnish with a sprig of mint. Serve immediately.

32 fluid ounces Kentucky bourbon

  • Combine water, sugar and chopped mint leaves in a small saucepan. Bring to a boil over high heat until the sugar is completely dissolved. Allow syrup to cool, approximately 1 hour. Pour syrup through a strainer to remove mint leaves

12.5ml 2:1 sugar syrup (see tip, below)
ice , cubes and crushed
a big mint sprig and a straw

Steps:

  • Shake the bourbon, mint leaves and sugar syrup with ice and strain into a highball glass or julep tin filled with crushed ice. Churn gently with a long-handled spoon and top with more crushed ice. Garnish and serve.
