These mini savoury scones are quick to make and are cute canapés for your Christmas party

1 tbsp olive oil
1 onion , finely chopped
225g self-raising flour , plus extra for dusting
50g unsalted butter
6 sage leaves, finely chopped
125-150ml/4floz-¼pt milk
1 egg , beaten
4 tbsp cranberry sauce
140g/5oz turkey breast, sliced to scone size

Steps:

  • Heat oven 220C/200C fan/gas 7. Heat the oil in a pan and cook the onion for 5 mins until soft, then set aside to cool. In a food processor, pulse the flour and butter together until the mixture looks like crumbs, then add the sage, cooled onion and enough milk to make a soft but not sticky dough. Tip out onto a floured surface, knead briefly, then roll out to 1cm thickness. Using a 1.5cm cutter, stamp out mini scones. Brush tops with egg, put onto a baking sheet and bake for 8-10 mins until risen and golden.
  • To serve, split the scones, spread each side with cranberry sauce, then sandwich together with the turkey.

2 cups finely chopped onions
2 tablespoons olive oil
6 garlic cloves, minced
4 cups all-purpose flour
2 cups grated Parmesan cheese
4 teaspoons baking powder
1 teaspoon salt
2 cups heavy whipping cream
Additional grated Parmesan cheese, optional

Steps:

  • In a large skillet, saute onions in oil until tender. Add garlic; saute 1 minute longer. , In a large bowl, combine the flour, cheese, baking powder and salt. Stir in cream just until moistened. Stir in onion mixture. , Turn onto a floured surface; knead 10 times. Divide dough in half. Pat each portion into a 6-in. circle. Cut each circle into 6 wedges. Separate wedges and place on a greased baking sheet., Bake at 400° for 12-15 minutes or until light golden brown. If desired, sprinkle with additional cheese in last 5 minutes of baking. Serve warm.

1 pound bulk sage pork sausage
4 cups all-purpose flour
2 tablespoons baking powder
1-1/2 teaspoons ground mustard
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon pepper
6 tablespoons cold butter
4 large egg whites
1-1/2 cups buttermilk
2-1/2 cups shredded sharp cheddar cheese, divided
2 large egg yolks
2 teaspoons water
Dijon mustard

Steps:

  • In a large skillet, cook sausage until no longer pink; drain., In a large bowl, combine the flour, baking powder, ground mustard, baking soda, salt and pepper. Cut in butter until mixture resembles coarse crumbs. Whisk egg whites and buttermilk; stir into crumb mixture just until moistened. Stir in sausage and 2 cups cheese. Turn onto a floured surface; knead 10 times., Divide dough in half; pat each half into an 8-in. circle. Cut each into eight wedges. Separate wedges and place on parchment paper-lined baking sheets. Beat egg yolks and water; brush over tops. Sprinkle with remaining cheese., Bake at 400° for 14-16 minutes or until golden brown. Serve warm with Dijon mustard.

Make sure you use a punchy mature cheese to shine through these savoury scones made with mustard and buttermilk

Number Of Ingredients 7

225g self-raising flour
1 ½ tsp English mustard powder
50g cold butter , cubed
100g mature cheddar , grated
1 tbsp finely chopped sage , plus 8 small leaves
1 egg , beaten
100ml buttermilk

Steps:

  • Heat oven to 220C/200C fan/gas 7. Mix the flour, mustard powder, ½ tsp salt and a grinding of black pepper in a large bowl. Rub in the butter until the mixture resembles fine crumbs. Stir in half of the cheese and the sage. Mix together the egg and buttermilk in a separate bowl.
  • Make a well in the centre of the flour mix and pour in all but ½ tbsp of the buttermilk mix. Working quickly, stir until the mixture forms a soft, spongy dough. Tip onto a lightly floured surface and knead briefly until smooth. Roll out to a 3cm-thick square. Cut into quarters, then half each quarter diagonally, so you have 8 triangles. Place the scones on a floured baking tray, brush with the remaining buttermilk, sprinkle over the remaining cheese and top each with a sage leaf. Bake for 12-14 mins until they are well risen, golden and sound hollow when tapped on the bottom. Eat while still warm, spread with butter.

UPDATED 04/03/10: Thanks Tea Jenny, for bringing the omission to my attention! The original recipe did in fact call for 1 TBL of Baking Powder! I've been making them without it in the Mini Scone Pan and it didn't seem to make much difference, but for nicely formed scones shaped by hand or with a biscuit cutter, it's a must! I adapted this recipe from one called Quiche Lorraine Scones on the goodLife {eats} blog. I wanted to make a meatless, savory scone, suitable for my Nordic Ware Mini Scone Pan. The pan is not necessary as you can easily pat the dough into a circle and cut into wedges or use a biscuit cutter. These scones are quick and easy to make and keep in the fridge for 5-6 days. Reheat in microwave for just a few seconds to take the chill off. Enjoy with Soup, Chili, for Breakfast, as a Snack ... anytime!

2 cups all-purpose flour
1 tablespoon all-purpose flour
1 tablespoon baking powder
1 pinch cayenne pepper (I use 1/4 tsp)
1 teaspoon salt
8 tablespoons unsalted butter, cold, diced small
1/2 cup half-and-half cream, fat-free
3 eggs, large, save one for Egg Wash for top of scones
4 ounces monterey jack pepper cheese, diced small
3 green onions, sliced thin, both green and white parts

Steps:

  • Preheat oven to 400°. Spray mini scone pan with flour-added baking spray or line a baking sheet with parchment paper.
  • In small bowl, toss Pepper Jack Cheese and Green Onion with 1 Tablespoon of All-Purpose Flour and set aside.
  • In medium bowl, whisk together the All-Purpose Flour, Baking Powder, Cayenne Pepper (if using) and Salt.
  • Use a pastry blender, two knives or your fingers (my preference), cut the Butter into the Flour mixture until the butter is pea-size and the flour is silky.
  • Lightly beat (2) Eggs and the Half & Half with a fork and add it to the Flour mixture.
  • Add the Cheese/Onion mixture to the Flour mixture; use a wooden spoon to fold the mixture until it begins to come together.
  • Turn the dough onto a well-floured surface and knead gently for less than a minute.
  • Separate into 4 equal parts and pat each one into a portion of the Nordic Ware Mini Scone Pan. Or, pat dough into a 3/4 to 1-inch thick circle or rectangle and cut into desired shapes.
  • Lightly beat the remaining Egg with one teaspoon water; generously brush the tops of the scones.
  • Bake 18-20 minutes or until golden brown.

  • In a small mixing bowl, beat together buttermilk and 1 egg and put the mixture in the fridge to stay cold while you measure your dry ingredients.
  • Put flour, granulated sugar, baking powder, and salt in a large food processor and gently pulse to combine and fluff. Then, pull the buttermilk-egg mixture and unsalted butter from the fridge. Cut the butter into cubes and add it to the food processor along with the buttermilk-egg mixture. Pulse the food processor just 10-15 times to combine the ingredients. Do not overmix. Dough should be crumbly with lentil-size pieces of butter running throughout. (See TIP B for alternatives to using a food processor.)
  • Transfer dough crumbles to a large mixing bowl and add the chopped caramelized onion, sage, and Gruyere shreds. Using your hands or a fork, distribute these ingredients throughout the dough. Work quickly so that the dough does not warm too much. Dough should remain crumbly with visible bits of butter.
  • Turn the dough onto a lightly floured surface, evenly divide it into two mounds, and pat each mound into a 3.5- to 4-inch diameter circle. Circles should be about 1 inch in thickness. Briefly whisk together the remaining egg to create an egg wash, and brush it over the top of each circle. Sprinkle 1 tbsp. of poppyseeds over each circle. Using a very sharp knife, cut each of the circles into 6 even triangles. Transfer the triangles to a dinner plate leaving a little space between each section and put the entire plate in the freezer for 30-60 minutes.
