4 whole (to 5) Large Pears (Bosc Work Well)
2/3 c. Sugar
1/4 tsp. Salt

Topping Ingredients
1 1/2 c. All-purpose Flour
1/3 c. Sugar
1/3 c. Firmly Packed Brown Sugar
1/2 tsp. Cinnamon
1/2 c. Pecans, Very Finely Chopped
1 stick Butter, Melted

Steps:

  • Preheat oven to 350 degrees.Peel, core, and dice pears. Place into a bowl and stir together with 2/3 cup sugar and 1/4 teaspoon salt. Set aside.In a separate bowl, combine flour, sugar, brown sugar, cinnamon, and pecans. Stir together. Drizzle melted butter gradually, stirring with a fork as you go until all combined.Pour pears into a baking dish; top with crumb topping.Bake at 350 degrees for 30 minutes.Place pan on top rack of oven for an additional 10 minutes, or until topping is golden brown.Serve warm with vanilla ice cream.

  • In separate bowl, combine all remaining ingredients, then sprinkle over fruit.

Silky pears bring the sweetness, and cranberries keep things interesting with their mouth-puckering punch. A scoop of vanilla ice cream melting into the crags is, of course, a welcome addition.

1/4 cup sliced almonds
10 amaretti (1/2 cup), such as Asturi Italian, crushed
2 tablespoons unsalted butter, room temperature
1/4 cup light-brown sugar
Pinch of kosher salt
2 firm but ripe pears (each 8 to 10 ounces), peeled and sliced about 1/2 inch thick
1/3 cup fresh or frozen cranberries, thawed and drained if frozen
2 tablespoons granulated sugar
Pinch of ground cinnamon
Pinch of kosher salt
1 tablespoon fresh lemon juice
1 teaspoon cornstarch
Vanilla ice cream or crème fraîche, for serving (optional)

Steps:

  • For the Topping: Using your hands, mix together almonds, cookies, butter, brown sugar, and salt until butter is evenly distributed and mixture is crumbly. Refrigerate until cold, about 30 minutes.
  • For the Crisp: Preheat oven to 375°F. In a bowl, mix together pears, cranberries, granulated sugar, cinnamon, salt, and lemon juice. Stir in cornstarch to combine. Transfer to a mini pie dish (about 6 to 7 inches across top) or 2 individual gratin dishes (about 2 cups each).
  • Bake until juices reduce and mixture is beginning to bubble, about 15 minutes. Sprinkle evenly with amaretti mixture and continue to bake until topping is browned and crisp and mixture is bubbling in center, about 15 minutes more. Let cool 10 minutes, then serve warm with ice cream or crème fraîche.

1/2 cup sugar
1 teaspoon ground cinnamon

1 cup old-fashioned oats
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/2 cup cold butter, cubed

Steps:

  • Preheat oven to 350°. Toss pears with orange juice; place in a greased 13-in. x 9-in. baking dish. Combine the sugar, cinnamon, allspice and ginger; sprinkle over pears., For topping, in a small bowl, combine the flour, oats, brown sugar and baking powder; cut in butter until crumbly. 8 pears, chopped with cores removed
2 Tablespoons corn starch
1 cup all purpose flour
1/2 cup old fashioned rolled oats
1/3 cup white sugar
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter, melted

Steps:

  • Preheat oven to 350*F
  • Coat a 9x9 casserole dish with non-stick spray.
  • Slice and core pears, then chop into bit sized pieces. You can leave the skins on or off. (My kids wont eat the crisp unless the skins are off the pears)
  • Toss pears with corn starch and place in casserole dish. Set aside.
  • In a medium bowl, combine flour, rolled oats, white sugar, brown sugar, cinnamon, slat and melted butter. Mix well until mixture is crumbly.
  • Spread crisp topping over pears and bake for 35 minutes or until crisp is bubbly and golden.
  • Serve hot with a fresh scoop of ice cream.

Steps:
