ORANGE SUGAR COOKIE SANDWICHES WITH CHOCOLATE RUM GANACHE



Orange Sugar Cookie Sandwiches with Chocolate Rum Ganache image

10 1/2 ounces sugar, plus more for sprinkling
8 ounces butter, at room temperature
2 eggs
Zest of 1 orange
12 ounces all-purpose flour
1 tablespoon baking powder
2 teaspoons salt
6 ounces dark chocolate
6 ounces heavy cream
Dark rum

Steps:

  • For the cookies: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the sugar and butter together until fluffy. Add the eggs, one at a time, until the mixture is smooth. Scrape down the sides of the bowl, and mix in the orange zest. Sift the flour, baking powder and salt together, and add to the butter mixture, mixing until just combined. Wrap the dough in plastic wrap, and refrigerate for 30 minutes.
  • Roll the dough to 1/4-inch thick and cut out cookies with a cookie cutter (about 20 large cookies). Place the cookies on the prepared baking sheet, and sprinkle the tops with sugar. Bake just until the edges start to brown, 8 to 14 minutes, depending on the size of the cookies. Cool the cookies completely.
  • For the ganache: Place the chocolate in a medium bowl. Bring the heavy cream to a boil and pour over the chocolate to melt. Stir until shiny and smooth, then add rum to taste. Mix until incorporated, and then rest the ganache until firm. Transfer to a piping bag and pipe the ganache onto half of the cookies. Press the second half of the cookies onto the ganache-covered cookies to make cookie sandwiches.

1 box (4-serving size) white chocolate or vanilla instant pudding and pie filling mix
1 cup milk
1 cup Cool Whip frozen whipped topping, thawed
1 can (11 oz) mandarin orange segments, well drained
1 1/2 cups Original Bisquick™ mix
1/2 cup sugar
1/3 cup milk
2 tablespoons butter or margarine, softened
1 teaspoon grated orange peel
1/2 teaspoon vanilla
2 eggs
1/2 cup grated white chocolate baking bars
Toasted slivered almonds, if desired
White chocolate curls, if desired

Steps:

  • In medium bowl, beat pudding mix and 1 cup milk with wire whisk or electric mixer on low speed about 2 minutes or until well blended. Fold in whipped topping. Reserve about 8 orange segments for garnish; stir remaining orange segments into pudding mixture. Cover; refrigerate 1 hour.
  • Meanwhile, heat oven to 350°F. Grease bottom and side of 9-inch round cake pan with shortening or cooking spray; lightly flour.
  • In medium bowl, beat cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Stir in grated baking bars. Pour into pan.
  • Bake about 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.
  • Place cake on serving plate. Spoon topping onto cake. Garnish with reserved orange segments, the almonds and chocolate curls. Store covered in refrigerator.

1 cup sugar
2 large eggs, room temperature
1 tablespoon grated orange zest
1 tablespoon orange juice

BUTTERCREAM:
1/2 cup butter, softened
1/4 teaspoon salt
2 cups confectioners' sugar

1/2 cup orange marmalade

Steps:

  • Preheat oven to 325°. Line 48 mini-muffin cups with paper liners. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in orange zest, orange juice and vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with buttermilk, beating well after each addition., Fill prepared cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 11-13 minutes. Cool in pans 5 minutes before removing to wire racks to cool completely., For buttercream, in a large bowl, beat butter and salt until creamy. Gradually beat in confectioners' sugar, milk and vanilla until smooth., Using a paring knife, cut a 1-in.-wide cone-shaped piece from top of each cupcake; discard removed portion. Fill cavity with marmalade. Pipe or spread buttercream over tops.

Easy cookie that utilizes a cake mix. It is nice to have the ingredients on hand for thse for when unexpected company pops over or you need a quick sweet treat. These are a softer cookie with a cake-like texture. Mix and match cake mix and frosting varieties for a new flavor combination.

1 (18 ounce) package cake mix (any flavor)
1/3 cup vegetable oil
2 eggs
8 ounces frosting (any flavor)

Steps:

  • Preheat oven to 350.
  • In a bowl mix together the cake mix, oil and eggs. Do this by hand as it is very stiff. You are looking for everything to just come together to form a dough.
  • Roll dough into 1" balls. Place about 2" apart on an ungreased cookie sheet.
  • Note: if dough is too sticky to roll into balls easily, refrigerate for a short time.
  • Bake cookies 8 to 11 minutes at 350. Cookies should still be soft but the tops will have a cracked appearance when done.
  • Remove cookies from baking sheets to cool.
  • Allow to cool completely.
  • Choose 2 cookies that are the same size and shape. Place about 1/2 to 1 teaspoon of frosting on the bottom of one cookie. Put the two cookies together bottoms facing each other to form the sandwich.
  • Note: I like to use the following combinations, but feel free to experiment. Chocolate cookie with fudge frosting, chocolate cookie with vanilla frosting, white cake with vanilla frosting (add about 1/2 teaspoon of almond extract to the frosting), carrot cake cookies with chream cheese frosting, funfetti cookies with rainbow chip frosting (kids love this one for the colors).

1/2 cup butter, softened
1 teaspoon orange extract

Steps:

  • Heat oven to 350°F. In a small bowl, whisk egg, food coloring, vanilla and orange extract. In large bowl, mix butter and sugar cookie mix until well blended. Then, mix in egg and food coloring mixture. Once soft dough has formed, stir in baking chips.
  • On ungreased cookie sheets, drop dough with 1 1/2 tablespoon-size cookie scoop or by rounded tablespoonfuls about 2 inches apart.
  • Bake 9 to 10 minutes or just until dough is set (do not overbake). Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely.
