MINI CAESAR SALAD ROLLS
These go perfectly with a glass of Chardonnay.

Steps:
- Whisk dressing ingredients together and season with salt and pepper.
- Mix the lettuce with a small amount of dressing, just enough to barely coat the leaves. Place in a bowl to the side.
- Pour some warm water into a large shallow dish. Submerge one rice paper round in water until it begins to soften, about 45 seconds. Place on a sheet of parchment paper. Place a small amount of lettuce in the center of the rice paper. Tightly roll into a cylinder, enclosing the lettuce. Repeat with the remaining rounds. Cover with a dampened paper towel or wrap in plastic. Chill. Can be made 4 hours ahead.
- When ready to serve, remove from plastic and cut each roll into 2-inch-long pieces. Stand upright on a platter and top with a spot of dressing. You can put crumbled pancetta, Parmesan cheese, or chopped nuts on top for flavor and garnish.
CAESAR SALAD TACO BITES

- In a large bowl, whisk together the mayonnaise, Worcestershire, garlic, lemon juice, anchovy paste, salt and 2 tablespoons Parmesan. Add the lettuce to the dressing; toss well to coat.
- Heat a medium skillet over medium heat and spray with nonstick spray. Sprinkle 1/4 cup of the remaining Parmesan evenly over the bottom of the pan. Cook until the cheese is bubbly and beginning to brown, 3 to 4 minutes. Remove from the heat, let cool for 1 minute, and then invert the cheese onto a parchment-lined baking sheet with the help of an offset spatula. Set aside to cool completely. Repeat with the remaining Parmesan. When all of the frico is fully cooled, break into bite-size pieces.
- Scoop a small spoonful of the salad into each of the tortilla cups. Top with a piece of frico and serve.
CAESAR SALAD BITES
This can be a quick last minute appetizer or something you can throw together quickly to take to a pot luck. Generally I always have these items on hand which adds to the ease. I have also subbed out other dressings like Green Goddess with fantastic results. I love it because it looks impressive, yet it is easy to make. Serve immediately or you may put the platter in the refrigerator for a few hours.

- Preheat the oven to 375 degrees F.
- For the croutons: Combine the oil and garlic in a small bowl and whisk for 10 seconds. Add the bread cubes and toss to coat. Add the Parmesan, season to taste with salt and pepper and toss again. Transfer to a small baking sheet, drizzle with a little more oil and bake until golden and crisp, about 15 minutes.
- For the dressing: Combine the Parmesan, yolk, lemon juice, anchovies, garlic and Worcestershire in a food processor. Pulse 3 to 4 times until well combined. While the processor is running, drizzle in the oil and process until a smooth emulsion forms, about 30 seconds. Season generously with salt and pepper.
- For the bites: Tear the leaves from the romaine heart and arrange on a platter. Place a few croutons and tomato halves inside each leaf. Drizzle each leaf with about a tablespoon of dressing (you will have leftovers). Sprinkle the bites with Parmesan and salt and pepper to taste and enjoy.

- In a small bowl stir together feta cheese, sour cream, parsley, dried tomatoes, garlic, and pepper. Cover and chill for 2 to 24 hours. (Cook time reflects refrigeration time).
- Using a sharp knife, trim the ends from cucumber; discard ends. Horizontally slice the cucumbers into slices. Spoon 1-1/2 teaspoons cheese mixture onto each cucumber slice. Arrange cucumber slices on a serving platter.
- In a small bowl combine basil and olives. Spoon some of the mixture onto each cucumber slice.

- Preheat oven to 180C/350F. Fit the wonton wrappers into each hole of a standard size muffin / cupcake tin (not mini and not Texas muffin tins!). Spray the wontons lightly with olive oil. Bake for 8 to 12 minutes, until golden and crispy. Remove from oven and set aside to cool.
- Heat a small non stick pan over high heat. Spray with oil, add bacon and sauté until crispy, then remove and drain on absorbent paper towel.
- Return pan to stove, reduce heat to medium high and spray pan with oil. Add finely diced bread. Shake pan (or stir) to brown evenly. Remove mini croutons from pan, scatter over a pinch of salt and set aside.
- Place Dressing ingredients in a blender or food processor and whizz until smooth. If it seems too thick, use a tiny splash of milk to adjust the consistency.
