1 1/2 lbs fresh asparagus spears
1/2 cup extra virgin olive oil
4 plump garlic cloves, crushed and peeled
2 cups potatoes, peeled and cut into 1/2 inch cubes
3 cups chopped leeks, 1/4 inch pieces, white and green
5 quarts water
2 bay leaves
1 tablespoon coarse sea salt or 1 tablespoon kosher salt
1 cup arborio rice
fresh ground black pepper, to taste
1 cup freshly grated grana padano or 1 cup parmigiano-reggiano cheese

Steps:

  • Rinse the asparagus; snap off the tough bottom stubs.
  • Slice the spears crosswise into 1/3 inch chunks, including the tips.
  • Pour 1/3 cup olive oil into a large pot, drop in the crushed garlic, and set over med-high heat.
  • Golden the garlic for a minute or two, just until fragrant and lightly colored, and stir the potato cubes into the hot oil.
  • Cook/stir occasionally, until the potatoes are crusty and starting to stick to the bottom but not browned-lower the heat if necessary-4-5 minutes.
  • Stir in the chopped leeks; cook until softened and sizzling, 3-4 minutes.
  • Pour 5 quarts water into the pot; add in the bay leaves and tablespoon salt; stir well, scraping up any crusty potatoes on the bottom.
  • Cover, and bring to a boil over high heat; stir in all the asparagus, return to a boil, and adjust heat to keep the broth bubbling steadily and slowly reducing.
  • Cook uncovered about 1 ½ hours, stirring occasionally, until the soup volume is reduced by almost a third and the broth is full of flavor-tasting is the way to test for doneness.
  • Stir in the rice and return to a boil; cook for 10 minutes, until the grains are al dente, then turn the heat off.
  • Season with freshly ground black pepper, and more salt to taste.
  • Stir in 2 tablespoons olive oil and ½ cup grated cheese.
  • Serve immediately in warm bowls, with more cheese and oil at the table.

2 tablespoons extra-virgin olive oil
1 large clove garlic, finely chopped
1 small onion, finely chopped
1 cup arborio rice
Salt and pepper
1/2 cup dry white wine
3 to 4 cups chicken stock, 1 quart size box, available on soup aisle of the market
1/4 to 1/3 cup grated Parmigiano, a generous handful
2 tablespoons chopped flat-leaf parsley
1 cup tiny frozen peas

Steps:

  • Heat a medium skillet over medium high heat. Add extra-virgin olive oil and garlic and onion and saute, stirring constantly 2 to 3 minutes then add rice and season with a little salt and pepper. Cook another minute or so then add wine and let it completely absorb, 30 seconds. Add about 1 cup chicken stock and stir. Reduce heat a bit to medium. Stir often and continue adding a half cup of liquid each time liquid becomes completely absorbed. Cook 22 minutes, using as much stock as is necessary to result in creamy-consistency rice with a bite to it.
  • When rice is cooked to desired consistency, remove from heat and stir in cheese, parsley and peas and stir to combine and to heat peas through.

By now, those of you who follow my work have seen a number of simple pureed soups that begin with onions, potatoes and leeks. Here's another one. The beautiful pale green soup is all the more fragrant because I use the asparagus trimmings for the broth.

1 medium onion, chopped
4 garlic cloves, halved
Green of 1 large leek (optional)
Salt to taste
1/4 teaspoon freshly ground pepper
Trimmed stems from 1 pound asparagus, cut in 1-inch lengths
2 quarts water
1 tablespoon extra virgin olive oil
1 leek, white and light green parts only, sliced and cleaned optional
1 medium onion, chopped
2 garlic cloves, peeled and halved
2 medium-size russet potatoes, peeled and diced
Salt, preferably kosher salt, to taste
1 1/2 quarts asparagus broth (above)
A bouquet garni made with a bay leaf and a few sprigs each parsley and thyme
1 pound asparagus, woody ends snapped off, sliced about 1 inch thick, plus 12 whole stalks, woody ends snapped off, for the garnish
2 teaspoons fresh lemon juice
Freshly ground pepper
Chopped fresh tarragon for garnish

Steps:

  • Combine all of the ingredients for the broth, and bring to a boil. Reduce the heat, cover and simmer 30 minutes. Strain and set aside.
  • Heat the oil in a large, heavy soup pot or Dutch oven over medium heat, and add the leek, onion and 1/2 teaspoon salt. Cook gently for five minutes, stirring often, until the onion and leek have softened. Add the garlic, stir together for a minute, then add the potatoes, broth, bouquet garni and salt to taste. Bring to a boil, reduce the heat, cover and simmer 30 minutes. Add the chopped asparagus (not the 12 spears), and simmer 10 minutes. Remove from the heat, and remove the bouquet garni.
  • Puree the soup with a hand blender or, working in 1-1/2 cup batches, ladle the soup into a blender. Place a towel over the blender, and pull it down tightly to prevent splashing. Blend each batch, then (whether you pureed the soup in the pot or in a blender) put through a medium strainer, pushing it through with the bottom of your ladle or with a spatula. Return to the pot. Heat through, and add the lemon juice and salt and pepper to taste.
  • Meanwhile, steam the 12 asparagus spears for four minutes, until just tender. Refresh with cold water, then slice about 3/4 inch thick.
  • Ladle the soup into bowls, garnish each serving with a handful of sliced asparagus, sprinkle with tarragon and serve.

The classic Venetian dish of rice and peas known as risi e bisi makes for a perfect springtime Sunday lunch. This version includes the addition of baby zucchini, which is an acknowledged departure from tradition but a mighty delicious one. The desired final consistency is loose, almost brothy, not tight and creamy like risotto nor drippy like a zuppa. The Venetians use the term "all'onda," a reference to the swell of waves in the sea. Short-grain rice helps get that distinct starchy quality, but the rice can't do the job by itself; there has to be stirring throughout. Pour yourself a glass of a good Soave while you stir. You can have a nap after lunch, which is totally traditional.

5 cups Parmigiano-Reggiano rind broth or chicken broth
3 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
6 scallions, roots trimmed, then sliced
Salt and pepper
12 ounces baby zucchini, cut into coins
1 cup carnaroli or arborio rice
3 garlic cloves, peeled
10 ounces fresh shelled peas
3 tablespoons freshly grated Parmigiano-Reggiano

Steps:

  • Heat broth in a small pot on the back burner over medium-low.
  • Set a wide, shallow, long-handled pan over medium-low. Melt 2 tablespoons butter and 2 tablespoons olive oil until butter foams. Set the remaining 1 tablespoon butter back in the fridge to keep cold.
  • Add scallions, season with a pinch of salt and stir until sweated and soft, 1 to 2 minutes.
  • Add zucchini coins, season with a pinch of salt, and stir until they start to sweat, begin to soften and become a little translucent, about 2 minutes.
  • Push vegetables out to the edge of the pan in a ring, leaving an empty space in the center. Adjust heat - a tad hotter - then add the remaining 1 tablespoon olive oil, then rice. Stir rice until coated and glistening, and keep stirring until it begins sizzling slightly.
  • Microplane the garlic over the sizzling rice, then draw the vegetables into the rice as well, stirring well to combine, leaving a little space - a moatlike ring - along the edges where the vegetables were.
  • Add the peas to the empty outer space you just created. Run your spoon through them, keeping them in their outer ring, coating them in the oil and moisture. Season the whole business with another pinch of salt.
  • Ladle a generous cup of hot broth over the rice mixture in the center, seasoning with salt at each addition of broth, and stirring as the liquid is absorbed. Add another generous cupful of broth, stirring the rice while it absorbs. Repeat once more with a third cup of hot broth, stirring until the rice starts to show signs of its signature starchy and creamy nature. Keep the peas at the outer edge as much as possible. (This might remind you of making homemade pasta, when you are whisking the eggs in the well of the flour and very slowly drawing in the flour.) This entire step should take about 20 minutes. Adjust the heat slightly along the way for a very gentle, hot steaming - not hard simmering - stirring all the while.
  • Add the remaining broth all at once. The peas and vegetables will slightly float on the surface, while the rice will naturally remain submerged. Stir gently or shake and swirl the pan in the classic cresting, swelling wave style, all'onde, bringing everything together - rice, zucchini, peas, broth - about 7 more minutes, maybe 10 at most.
  • Turn off heat. Season assertively with black pepper. Stir or swirl in the remaining chilled butter, and finish with the grated cheese. Serve hot.

BUTTER-BRAISED ASPARAGUS

For the first-of-the-season asparagus, keep it simple with butter, lemon and sweet herbs. For the best texture, peeling the stalks really makes a difference.

1 1/2 pounds large or medium asparagus
6 tablespoons butter
Salt and pepper
2 tablespoons lemon juice
1/2 teaspoon lemon zest
1 tablespoon snipped chives
1 tablespoon roughly chopped parsley or chervil
1 teaspoon chopped tarragon, plus more for garnish
1 tablespoon chopped dill, plus more for garnish (optional)

Steps:

  • Snap off and discard the tough bottoms of the asparagus spears. If using large, thick asparagus, peel the lower ends with a vegetable peeler.
  • Put butter in a wide skillet over medium-high heat. Add asparagus in one layer and season with salt and pepper. Add 1/2 cup water, cover, and bring to a simmer. Cook until the asparagus is firm-tender, about 3 minutes. Take care not to overcook them; they should still be bright green. (They will continue to cook a bit once the heat is off.) Remove the asparagus from the pan and place on a serving platter.
  • Turn heat to high and simmer briskly until most of the liquid has evaporated, a minute or so. Add lemon juice and zest to the buttery juices. Turn off heat and stir in chives, parsley, tarragon and dill, if using. Check seasoning. Spoon the sauce over the asparagus, garnish with a few herb leaves, and serve.

  • To make brown chicken stock, preheat oven to 240C and roast bones in a roasting pan, turning occasionally, until browned (40-50 minutes). Transfer to a large saucepan, deglaze roasting pan with water, scraping all the residue from base, then add to saucepan with bones and just cover bones with water. Bring to a rapid simmer, ladling off scum as it surfaces, then simmer gently over medium-low heat, topping up water as necessary to keep bones just covered, until stock is well flavoured (2-2½ hours). Strain and keep hot.
  • Heat butter and oil in a large saucepan over medium-high heat, add onion and potato and sauté until soft (7-10 minutes). Add 2 litres hot stock (remaining will keep refrigerated for 3 days, or 3 months frozen) and bring to the boil. Add rice, reduce heat to low and simmer until rice is tender (10-14 minutes). Add asparagus and simmer until just tender and still bright green (1½-2½ minutes), season to taste and serve topped with parmesan.
