2 pounds sweet potatoes (about 4 medium), peeled and chopped
1 large sweet onion, finely chopped
1 medium sweet red pepper, finely chopped
1-1/2 teaspoons curry powder
1 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon grated lemon zest
1/8 teaspoon coarsely ground pepper
6 cups reduced-sodium chicken broth
Salted pumpkin seeds or pepitas, optional

Steps:

  • In a 5-qt. slow cooker, combine the first 11 ingredients. Cook, covered, on low 6-8 hours or until vegetables are tender., Puree soup using an immersion blender. Or, cool soup slightly and puree in batches in a blender; return to slow cooker and heat through. If desired, top servings with pumpkin seeds.

A creamy fall soup that's easy to make any time of year. The earthiness of the sweet potato is balanced with tart apples, spicy ginger, and touch of zesty lime. If desired, garnish each serving with a dollop of sour cream, some chopped cilantro, and a few sweet, spicy nuts. A Thanksgiving favorite that's a kid favorite year-round. Freezes well!

3 tablespoons olive oil
4 shallots, sliced
1 pound tart apples, cored and cut into 1/4-inch pieces
2 tablespoons grated fresh ginger
1 lime, zested and juiced
¼ teaspoon red pepper flakes, or more to taste
¼ teaspoon ground cayenne pepper, or more to taste
2 quarts chicken broth
2 (15 ounce) cans sweet potatoes, drained
½ teaspoon salt, or to taste
1 lime, cut into wedges

Steps:

  • Heat olive oil in a large soup pot over medium heat; cook and stir shallots in the hot oil until soft, about 3 minutes. Stir apples, ginger, zest from 1 lime, red pepper flakes, and cayenne pepper into the pot. Reserve lime juice. Cook and stir mixture until apples are very soft, about 15 minutes.
  • Pour chicken broth into pot; add sweet potatoes and salt. Cover and bring to a boil. Reduce heat to low and simmer for 10 minutes. Puree soup with an immersion blender until smooth. Stir reserved lime juice into soup. Garnish with lime wedges to serve.

½ cup sour cream
1 teaspoon grated lime zest
2 large sweet potatoes, peeled and cubed
1 tablespoon butter
1 onion, sliced
2 cloves garlic, sliced
4 cups chicken stock
½ teaspoon ground cumin
¼ teaspoon crushed red pepper flakes
2 tablespoons grated fresh ginger root
¼ cup smooth peanut butter
1 lime, juiced
2 tablespoons chopped fresh cilantro
salt to taste
1 large roma (plum) tomato, seeded and diced

Steps:

  • In a small bowl, stir together the sour cream and lime zest. Set aside in the refrigerator to allow the flavors to blend.
  • Melt butter in a large pot over medium heat. Add onion and garlic, and cook for about 5 minutes, until softened. Add sweet potatoes, and chicken stock. Season with cumin, chili flakes and ginger. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, until potatoes are tender.
  • Puree the soup using an immersion blender or regular blender. If using a counter top blender, puree in small batches, filling the blender just a bit past half way to avoid spillage. Whisk peanut butter into the soup, and heat through. Stir in lime juice, and salt.
  • Ladle into warm bowls, and top with a dollop of the reserved sour cream, a few pieces of diced tomato, and a sprinkle of cilantro.

1 tablespoon vegetable oil
1 medium onion, chopped
4 cloves garlic, minced
1 (1/2 inch) piece fresh ginger, minced
½ teaspoon ground cumin, or more to taste
½ teaspoon ground turmeric
¼ teaspoon smoked paprika
¼ teaspoon red pepper flakes
5 medium sweet potatoes, peeled and diced
1 (14.5 ounce) can petite diced tomatoes
1 medium jalapeno pepper, seeded and minced
2 cups vegetable broth, or as needed
1 (14 ounce) can coconut milk
½ cup peanut butter, or more to taste
1 (10 ounce) package fresh spinach
1 teaspoon lime juice, or more to taste

Steps:

  • Heat oil in a stockpot over medium heat. Add onion and saute until translucent, about 5 minutes. Add garlic and ginger; cook until fragrant, about 1 minute. Add cumin, turmeric, paprika, and pepper flakes, then sweet potatoes, diced tomatoes, and jalapeno. Add enough broth to cover potatoes.
  • Cook until potatoes are tender, 15 to 30 minutes depending on how small you cut the potatoes. Add coconut milk and peanut butter; stir. Add spinach to the top; cover and steam until tender, 2 to 3 minutes.
  • Squeeze some lime juice over the pot or the individual bowls.

Can easily be made vegetarian by using vegetable broth in lieu of chicken broth and made vegan by substituting butter with oil or margarine (and omitting the sour cream or serving it with a vegan alternative instead).

2 tablespoons butter
2 tablespoons grated fresh ginger
3 stalks celery, finely chopped (~1 cup)
1 large onion, finely chopped (~2 cups)
1 tablespoon curry powder
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
1/8 teaspoon nutmeg
2 1/2 lbs sweet potatoes, peeled and cut into 1/2 inch cubes
6 cups chicken broth
1/2 teaspoon dried thyme
1 bay leaf
3/4 teaspoon salt
1/2 teaspoon fresh ground pepper
1/2 cup milk
sour cream, and
chopped roasted peanuts, to garnish

Steps:

  • In a large pot, melt butter over medium heat.
  • Sauté ginger, celery and onion until soft and fragrant (about 5-7 minutes).
  • Add curry powder, cinnamon, cayenne, and nutmeg.
  • Cook 1 minute, stirring frequently.
  • Add sweet potatoes, broth, thyme, bay leaf, salt and pepper.
  • Increase heat to high and bring to a boil.
  • When boil is reached, lower heat to medium-low and simmer, uncovered, for about 25 minutes, or until potatoes are soft and cooked through.
  • Puree in batches in a blender or with a stick blender.
  • Add milk to thin.
  • Serve hot, garnished with sour cream and roasted chopped peanuts.
