CHEDDAR-BROCCOLI MILLET PIE

This recipe is from Mother Earth News Dec 2008/Jan 2009, part of an article about cooking with millet. Next time I try it I'm going to chop up a smoked sausage and add that. I've called for a 3 1/2 quart sauce pan, the original called for 2 1/2 which I found too small. It did not specify how the onions should be cut up, I diced them. My cooking time is only for the baking, I did not put in the 30 minutes sauteing/boiling time, and my prep time is only a guess.

2 cups onions
1 tablespoon extra virgin olive oil
1 cup millet
3 cups chicken stock or 3 cups vegetable stock
1/2 teaspoon salt
1 teaspoon dried thyme
1 medium carrot, chopped
3 cups broccoli florets, cut into small pieces
6 ounces sharp cheddar cheese, shredded
2 large eggs
olive oil, for pan

Steps:

  • Heat a 3 1/2 quart heavy sauce pan over medium-high heat for a few.
  • seconds, then add the oil.
  • Add the onions and saute, lowering the heat as they soften.
  • Cook until golden and sweet.
  • Add the millet and stir, cooking until the grains are hot to the touch and fragrant.
  • Add the stock, salt, thyme and carrot, and bring to a boil.
  • Cover tightly and lower heat to the lowest setting.
  • Cook for 30 minutes.
  • Quickly add broccoli to the pan.
  • Re-cover again and let stand for 5 minutes.
  • Uncover, fluff and let cool.
  • Preheat oven to 400 degrees.
  • In a large bowl, stir the millet with the cheese and eggs and scrape into a greased pie pan.
  • Bake for 45 minutes, until golden on top and firm to the touch.
  • Slice and serve warm.

1 ¼ pounds round steak, cut into small pieces
1 cup apple cider
4 Granny Smith apples - peeled, cored and finely diced
1 ⅓ cups white sugar
2 ½ cups dried currants
2 ½ cups raisins
½ pound chopped candied mixed fruit peel
½ cup butter
1 (16 ounce) jar sour cherry preserves
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
½ teaspoon salt
1 (16 ounce) can pitted sour cherries, drained with liquid reserved
1 recipe pastry for a 9 inch double crust pie
2 tablespoons heavy cream

Steps:

  • In a Dutch oven, combine beef and apple cider. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 20 minutes, or until meat is tender. Remove meat and coarsely chop, then return it to the pot.
  • Stir in chopped apples, sugar, currants, raisins, citrus peel, butter and cherry preserves. Add ginger, cloves, nutmeg, cinnamon and salt. Let simmer, uncovered, over low heat until mixture is very thick, about 90 minutes. Stir in cherries and remove from heat.
  • Refrigerate tightly covered for at least a week before using.
  • Preheat oven to 350 degrees F (175 degrees C). Put filling in unbaked pie shell and place pastry on top. Crimp edges and poke several holes in top pastry. Brush top with cream and sprinkle with sugar.
  • Bake in preheated oven for 40 minutes, or until golden brown.

GLUTEN-FREE WHOLE GRAIN MEDITERRANEAN PIE CRUST



Gluten-Free Whole Grain Mediterranean Pie Crust image

For the flour here I use the same 70 percent whole grain flour to 30 percent starch (like potato starch, arrowroot or cornstarch) that I used in my whole grain gluten-free muffins a few weeks ago. It is based on a formula created by Shauna James Ahern, a gluten-free food blogger. Because there is no gluten involved you don't have to worry about overworking the dough, but the dough can break apart if you try to roll it out. I just press it into the pan, which is easy to do. I love the strong, nutty-flavored combination of buckwheat flour and millet flour. If you want a crust with a milder flavor, try a combination of cornmeal and millet flours or teff and millet flours.

120 grams (approximately 1 cup) millet flour (I make this by grinding millet in my spice mill)
100 grams (about 4/5 cup) another whole grain gluten-free flour, like buckwheat, cornmeal, or teff
95 grams (approximately 7 tablespoons) potato starch, cornstarch, arrowroot or a combination
5 grams (3/4 teaspoon) salt
50 grams (1/4 cup) extra virgin olive oil
150 to 165 grams (2/3 to 3/4 cup) water
10 grams (2 teaspoons) red wine vinegar or strained lemon juice (optional; the reason for the acid is that it relaxes the gluten in flour, but you don't have to worry about gluten)

Steps:

  • Sift together the grain flour and starch. In a large bowl or in the bowl of a standing mixer fitted with the paddle or a food processor fitted with the steel blade, add the salt and mix together. If using a bowl, make a well in the center, add the olive oil and mix in with a fork. If using a mixer or food processor, turn on and add the olive oil. When it is evenly distributed through the grain flour and starch, combine the water and vinegar or lemon juice and add it with the machine running. The dough should come together in a ball. In most cases you won't need as much water as is required for wheat flour dough, because the grain flours don't absorb as much, but each combination behaves a little differently. Divide into 2 equal pieces, shape into a flat circle and wrap tightly with plastic. The dough may be sticky, so flour your hands and work surface. Let rest for 1 hour.
  • To line tart pans place the dough in the center of the pan and, pressing from the heel of your hand, press the dough out to the edges of the pan, then up the sides. It should be soft and easy to manipulate. Pinch an attractive lip around the edge of the pan and refrigerate uncovered until ready to use.
