Ingredients

1 1/2 lbs ground beef
2 medium onions
1 (28 ounce) can diced tomatoes
1 (6 ounce) can Italian-style tomato paste
1 cup water
1 beef bouillon cube
1 (40 ounce) can dark red kidney beans
1/2 whole green bell pepper, diced
4 garlic cloves, minced
2 teaspoons salt
2 teaspoons oregano
2 teaspoons chili powder
1 teaspoon coriander
1 teaspoon cumin
1 1/2 teaspoons crushed red pepper flakes
1 bay leaf
3 tablespoons flour
1/2 cup cold water
3 tablespoons tequila (optional)

Steps:

Combine the ground beef and onions in a kettle until meat is brown.
Drain fat.
Then add the remaining ingredients, except for the flour and 1/2 cup of water.
Stir to blend.
Cover and simmer for 1½ hours, stirring occasionally.
When done, mix the 3 tbsp of flour with the 1/2 cup of cold water into the chili, mixing well until desired thickness.
Remove bay leaf and enjoy.

Ingredients

3 (16 ounce) cans crushed tomatoes
1 onion, chopped
1 green bell pepper, chopped
2 lbs browned ground beef
2 (12 ounce) cans red beans
1 (12 ounce) bottle beer
1 (8 ounce) can tomato paste
chili seasoning mix

Steps:

Brown beef with onions.
Put tomotoes in pot.
Add beans.
Add browned meat mixture.
Add green bell pepper.
Heat to boiling.
Add chili seasoning to taste.
Bring to a boil.
Add tomato paste and beer.

Heat oil in a large pot or Dutch oven over medium heat. Add the onion, bell pepper, and carrots, cover and cook, stirring occasionally, until vegetables are soft (roughly 10-12 minutes). Add the cumin and cook for a couple of minutes. Add the ground beef and jalapenos (if using).
Cook beef until no longer pink, breaking up clumps of meat. Stir in tomatoes, 2 cups of water, green chiles and juice, chili powder, oregano, sugar, salt, and pepper. Stir together until all ingredients are well-blended.
Cook partially covered for 30 minutes, stirring occasionally. Add all of the beans and 1 cup of water, and cook for an additional 30 minutes. Season to taste with salt and pepper.
