4 boneless chicken breasts, cut into bite size pieces or 1 1/2 lbs hamburger meat
1 (8 ounce) package lasagna noodles, no boil
1 (16 ounce) package fresh mushrooms, sliced
1 onion, minced
2 garlic cloves, minced
1 tablespoon olive oil
1 tablespoon flour
1 (16 ounce) jar ragu low-fat alfredo sauce
1/2 cup buffalo, sauce (to taste)
1 (16 ounce) carton cottage cheese, lowfat
1/2 cup parmesan cheese
1 (16 ounce) package mozzarella cheese, shredded
1 egg, slightly beaten
1/2 teaspoon italian seasoning
1/2 teaspoon dried parsley

Steps:

  • In a large skillet, saute the chicken or hamburger, mushrooms, onion and garlic in oil until meat, is no longer pink. Stir in flour until blended; stir in Alfredo sauce and buffalo sauce and bring to a boil. Turn off heat and set aside.
  • In a small bowl, combine the cottage cheese, Parmesan cheese, egg, Italian seasonings and parsley. Set aside.
  • Spread a small amount of Alfredo sauce on the bottom of a 9x13 inch pan that has been coated with nonstick cooking spray. Layer 4 noodles , 2/3 of the cottage cheese, 2/3 of the Alfredo mixture and 2/3 of the mozzarella cheese. Repeat layers two more times.
  • Cover and bake at 350 for about 30 to 40 minutes. Uncover and bake 10 minutes more. Let stand about 10 minutes before cutting.

6 ounces boneless skinless chicken breasts, cut into bite-size pieces
1 cup fresh mushrooms, sliced
2 tablespoons onions, chopped
1 garlic clove, minced
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 cup alfredo sauce
3/4 cup cottage cheese
1/4 cup shredded parmesan cheese, plus
2 tablespoons shredded parmesan cheese, divided
1 egg, lightly beaten
1/2 teaspoon italian seasoning
1/2 teaspoon dried parsley flakes
4 lasagna noodles, cooked and drained
1 1/2 cups mozzarella cheese, shredded

Steps:

  • In a large skillet, sauté the chicken, mushrooms, onion and garlic in oil until chicken is no longer pink. Stir in flour until blended; stir in Alfredo sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
  • In a small bowl, combine the cottage cheese, 1/4 cup Parmesan cheese, egg, Italian seasoning and parsley. Spread 1/2 cup Alfredo mixture in an 8-in. x 4-in. x 2-in.loaf dish coated with nonstick cooking spray. Layer with two noodles (trimmed to fit pan), half of the cottage cheese mixture, 3/4 cup Alfredo mixture and 3/4 cup mozzarella cheese. Sprinkle with remaining Parmesan cheese. Repeat layers.
  • Cover and bake at 350°F for 30 minutes. Uncover; bake 10 minutes. Let stand for 10 minutes before cutting.

I try to make a new pizza a week and I wanted to come up with a good Buffalo pizza. This one turned out so YUMMY! My whole family loved it and can't wait to have it again!

1 mama mary's prepared pizza crust
6 tablespoons ragu light alfredo sauce with parmesan cheese (or eyeball it till it looks like enough to cover crust)
8 ounces mozzarella cheese, grated
1 (6 ounce) package tyson oven roasted diced chicken breasts
6 tablespoons franks redhot buffalo wing sauce
1 (4 ounce) can mushrooms
1 (2 1/4 ounce) can black olives, sliced
1/2 sweet onion, minced
4 tablespoons cilantro, chopped

Steps:

  • In a small bowl mix chicken cubes with Buffalo sauce and set aside.
  • Spread Alfredo sauce on prepared pizza crust and top with 1/2 the mozzarella cheese. Top with chicken cubes (sprinkle on any sauce remaining in the bowl), onions, mushrooms, black olives and cilantro. Finish with the rest of the cheese.
  • Bake at 425 for about 15 minutes or until crust is brown.
