Seasoning:
2 tsp dry mustard
2 tsp paprika
1 1/2 tsp salt
1 1/2 tsp dried thyme
1 1/2 tsp dried basil
1 tsp pepper
1 tsp garlic pwd
1 tsp onion pwd
1/2 tsp white pepper
Meatloaf:
3 slices bacon, diced
1 1/2 C chpd onions
1 C chpd green bell pepper
1 C chpd celery
4 bay leaves
1 C tomato juice
1/2 C evaporated milk
1 1 /2 lb gr. beef
1/2 lb gr. veal (or add extra 1/2 lb beef)
1/2 C unsalted saltine crackers (about 12)
2 eggs

Steps:

  • Preheat oven to 350 Combine seasoning in small bowl. Makes 1/4 C. Cook bacon until crispy (about 8 min) If fat starts to smoke lower heat to med. Remove bacon with slotted spoon and set aside. Add onions to skillet and cook until golden (about 5 min.) Add peppers, celery, bay leaves and 2 T seasoning mix and cook, stirring and scraping occasionally about 4 min. Add remaining seasoning mix and cook, stirring often about 5 min. Remove from heat and discard bay leaves. Combine tomato juice, evap. milk and cooked bacon in large bowl. Add cooked vegetables and blend mix. Gently add meat, eggs, cracker crumbs in another large bowl. Add vegetable mixture and gently incorporate everything together without packing mixture. Spray 9 x 13 pan with cooking spray. Turn meat into pan and mold into loaf. Bake at 350 for 30 min. Turn pan around and bake another 15 in. Cut into 3/4 inch slices.

8 slices bacon, cooked, diced
1.5cups chopped onion
1cup chopped bell pepper
1cup chopped celery
4 bay leaves
1cup tomato juice
.5cup evaporated milk
1.5lb ground beef
.5lb ground veal
2 eggs, lightly beaten
.5cup saltines crumbled, about 12 crackers
vegetable oil/cooking spray

Steps:

  • - preheat oven to 350F - mix seasonings together, makes ~.25cups - saute onions in bacon fat - add green peppers, celery, bay leaves, 2tsp of the seasoning mix - cook ~5-6 minutes, stirring often - remove and discard all 4 bay leaves - mix tomato juice, milk, bacon, and cooked vegetables - gently combine meat, eggs, cracker crumbs in another bowl. - add the vegetable mix to the meat mix, stirring so as not to pack it tightly, but thoroughly incorporating. - spray a 13x9inch loaf pan or rectangle casserole dish with cooking spray. - mold the meat mixture into the pan. - bake 30 minutes, turn the pan, and bake another 15 minutes. - slice and serve.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

PAUL PRUDHOMME'S CAJUN MEAT LOAF

I've never been a fan of meat loaf. After all, its a loaf of meat with ketchup on it...or so I thought. My friend made this for me last night and it was so good! The recipe is from Paul Prudhomme (of K-Paul's, New Orleans). Warning: this is very spicy and if you're not used to eating "cajun" type foods, you might want to back off on the cayenne & hot sauce just a bit.

2 whole bay leaves
1 tablespoon salt
1 teaspoon cayenne (ground red pepper)
1 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground nutmeg
4 tablespoons unsalted butter
3/4 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped green bell pepper
1/4 cup finely chopped green onion
2 teaspoons minced garlic
1 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce
1/2 cup evaporated milk
1/2 cup catsup
1 1/2 lbs ground beef
1/2 lb ground pork
2 eggs, lightly beaten
1 cup very fine dry breadcrumb

Steps:

  • Combine the seasoning mix ingredients in a small bowl and set aside.
  • Melt the butter in a 1-quart saucepan over medium heat. Add the onions, celery, bell peppers, green onions, garlic, Tabasco, Worcestershire and seasoning mix.
  • Saute until mixture starts sticking excessively; about 6 minutes, stirring occasionally and scraping the pan bottom well.
  • Stir in the milk and catsup.
  • Continue cooking for about 2 minutes, stirring occasionally.
  • Remove from heat and allow mixture to cool to room temperature. REMOVE BAY LEAVES.
  • Place ground beef and pork in an ungreased 9 x 13 inch baking pan.
  • Add the eggs, cooked vegetable mixture (cooled) and the bread crumbs. Mix by hand until thoroughly combined.
  • In the center of the pan, shape the mixture into a loaf that is about 1 1/2 inches high, 6 inches wide and 12 inches long.
  • Bake uncovered at 350° for 25 minutes, then raise heat to 400° and continue to cook until done, about 35 minutes longer.
  • Serve Immediately as is or with "Very Hot Cajun Sauce for Beef".

1 cup cracker crumb
1 1/4 teaspoons salt
1/4 teaspoon pepper
1 large egg, beaten
1 medium onion, chopped
1/2 cup tomato sauce
3/4 cup ketchup
2 tablespoons firmly packed brown sugar
1 cup water
2 tablespoons mustard
2 tablespoons vinegar

Steps:

  • Preheat oven 325 degrees Fahrenheit.
  • In a large mixing bowl, combine ground beef, cracker crumbs, salt, pepper, egg, onion and tomato sauce.
  • Mix lightly.
  • Shape into a loaf and place in a baking dish.
  • In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.
  • Brush the loaf with this mixture.
  • Place meat loaf in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.
