CARROT PURéE
You can serve the carrot purée on its own on croutons or pita triangles, or as a dip with crudités. You can also accompany it with garlicky yogurt seasoned with mint, as it would be served in Greece or Turkey.

Steps:
- Steam the carrots above 1 inch of boiling water for 15 minutes or until soft. Remove from the heat and transfer to a food processor fitted with a steel blade.
- Pulse the carrots in the food processor and scrape down the sides of the bowl. Turn on the food processor and while the machine is running pour in the olive oil and lemon juice. Process until the carrots are pureed. Stop the machine and scrape down the sides of the bowl with a spatula. Add the cumin seeds, caraway seeds, Aleppo pepper or chili powder, and salt to taste and process until incorporated. Taste and adjust seasonings. Transfer to a serving bowl or platter.
- If using the seasoned yogurt, combine all of the ingredients and mix together well. Make a well in the middle of the carrots and spoon in the yogurt.
- Serve the carrot puree with pita triangles, croutons, or crudités.

CARROT AND SWEET POTATO SOUP WITH MINT OR TARRAGON
This easy, beautiful purée makes a nice Thanksgiving opener, with the added benefit of extra doses of vitamin A, vitamin C, potassium and fiber. If you're looking to get ahead with your meal, you can make this dish up to two days ahead of the big day.

- Heat the oil in a heavy soup pot or Dutch oven over medium heat. Add the shallots. Cook, stirring, until tender, three to five minutes. Add carrots. Cook, stirring often, for five minutes until they begin to soften. Add the sweet potatoes, water or stock, tarragon sprigs and orange zest, and bring to a simmer. Add salt to taste, reduce the heat, cover and simmer 45 minutes or until all of the ingredients are thoroughly tender. Remove the orange zest, and discard.
- Purée the soup in batches in a blender, removing the stopper from the top and holding a kitchen towel tightly over the top to avoid splashing, or in a food processor fitted with the steel blade. Return to the pot, heat through, and adjust salt and pepper to taste. Stir in the mint or tarragon, and serve.

- Simmer carrots, garlic, broth, and salt in a 1- to 2-quart heavy saucepan, covered, until carrots are very tender, 12 to 14 minutes. Purée mixture with cream and butter in a food processor until smooth.

Season with salt and pepper. Transfer to platter. Sprinkle with 1 1/2 tablespoons tarragon.

- Adjust oven rack to middle position and heat oven to 425 degrees. In large bowl, combine the carrots and shallot quarters with the oil and season with 1/2 teaspoon salt, and a big pinch of black pepper; toss to coat. Transfer the vegetables to a foil- or parchment-lined, rimmed baking sheet and spread in single layer.
- Cover the baking sheet tightly with foil and roast for 15 minutes. Remove foil and continue to cook, stirring once or twice, until carrots are well browned and tender, 30 to 35 minutes. Remove from the oven and set aside to cool.
- In a small sauce pan, heat the butter, cream, lemon zest and tarragon over medium-low, until the butter is melted. Stir to combine.
- Place the carrots and shallot in the bowl of a food processor and purée until smooth. Transfer to a bowl, and stir in the cream mixture and carrot juice (if using) until completely incorporated. Taste, and add salt and pepper as necessary.
