SWISS FONDUE

My husband grew up in Switzerland and it's there where I truly began to appreciate fondue. There are many variations of fondue in Switzerland, but this is the most common version. I love the ritual and it's so fun (and easy!) for entertaining. If you can get your hands on it, a splash of kirsch just before serving really gives fondue a fortifying kick.

2 ½ cups shredded Gruyere cheese
2 ½ cups shredded Emmental cheese
2 tablespoons cornstarch
1 clove garlic, halved
1 ½ cups dry white wine
1 (8 inch) French bread, cubed
1 pound new potatoes, raw; baby potatoes
1 cup cornichons, finely chopped
1 cup pickled pearl onions

Steps:

  • Combine Gruyère cheese, Emmental cheese, and cornstarch in a bowl. Mix until the cheese is evenly coated. Set aside.
  • Rub the cut side of the garlic all over the inside of a fondue pot or heavy saucepan. Add wine and place over medium heat. Bring to a simmer, then gradually add cheese and cornstarch mixture. Stir with a spatula, gently stirring in a figure-of-eight motion, until all of the cheese is added and the fondue is smooth and homogenous. Reduce heat to medium-low if the fondue is boiling too vigorously.
  • Immediately serve fondue, preferably over a warmer. If you used a saucepan on the stove to heat the fondue, you can carefully transfer the fondue to a fondue pot to serve.

16 ounces swiss cheese, shredded (about 4 cups)
3 tablespoons flour
1/8 teaspoon pepper
1/8 teaspoon garlic powder
1 cup dry white wine
French bread cubes, for dipping

Steps:

  • In a bowl, mix cheese, flour and seasonings.
  • Microwave wine in a 2 quart baking dish on high power for 1 minute (until hot).
  • Add cheese mixture and stir.
  • Microwave uncovered on medium, 7 to 9 minutes, stirring every 2 minutes.
  • Serve with bread.

1 garlic clove, halved
4 cups gruyere cheese, shredded (or 1/2 Gruye,re &, 1/2 Swiss or emmenthaler)
3 tablespoons flour
1/8 teaspoon white pepper
1/8 teaspoon garlic powder
2 teaspoons Dijon mustard
1 cup dry white wine (such as Fendant)
1 lb French bread or 1 lb sourdough bread, cut into bite-sized cubes

Steps:

  • Rub the inside of a 2 quart microwave-safe casserole dish with cut clove of garlic; then, combine cheese, flour and seasonings in dish, tossing to mix.
  • Mix the mustard with the wine and microwave on High for 1-2 minutes (until hot).
  • Stir wine mixture into cheese mixture.
  • Microwave uncovered on Medium for 7-9 minutes (until smooth), stirring every 2 minutes.
  • Serve with bread.

2 cups shredded Swiss cheese (8 oz)
2 cups shredded Gruyère or Swiss cheese (8 oz)
2 tablespoons all-purpose flour
1 clove garlic, cut in half
1 cup dry white wine or nonalcoholic white wine
1 tablespoon lemon juice
3 tablespoons kirsch, dry sherry, brandy or nonalcoholic white wine
1 loaf (1 lb) French bread, cut into 1-inch pieces
Apple and pear slices, if desired

Steps:

  • In resealable plastic food-storage bag, place cheeses and flour. Shake until cheese is coated with flour.
  • Rub garlic on bottom and side of fondue pot, heavy saucepan or skillet; discard garlic. Add wine. Heat over simmer setting on fondue pot or over low heat just until bubbles rise to surface (do not boil). Stir in lemon juice.
  • Gradually add cheese mixture, about 1/2 cup at a time, stirring constantly with wire whisk over low heat, until melted. Stir in kirsch.
  • Keep warm over simmer setting. If prepared in saucepan or skillet, pour into a fondue pot or heatproof serving bowl and keep warm over low heat. Fondue must be served over heat to maintain its smooth, creamy texture.
  • Spear bread and fruit with fondue forks; dip and swirl in fondue with stirring motion. If fondue becomes too thick, stir in 1/4 to 1/2 cup heated wine.

I don't cook much in a microwave, but I love it for heating or melting things. This is as good as a fondue pot any day, and if it cools down too much, it just takes seconds to reheat.

1 (10 ounce) can cheddar cheese soup
2 1/4 cups swiss cheese (shredded)
1/2 cup water
1/2 teaspoon hot mustard
1/2 teaspoon Worcestershire sauce
French bread, cubed (toasted if you would like)

Steps:

  • Place soup and all ingredients in a microwave-safe 2-quart dish. Stir and mix till smooth.
  • Microwave till cheese is melted, about 5 minutes (stirring about two or three times).
  • Serve hot with bread cubes for dipping.

2 c gruyere cheese, shredded
2 c swiss cheese, shredded
3 Tbsp all purpose flour
1/2 tsp dry mustard
dash(es) garlic powder
3/4 c dry white wine
1/2 tsp worcestershire sauce
vegetable dippers or bread cubes

Steps:

  • 1. Toss together cheeses, flour, mustard, and garlic powder.
  • 2. In a 1 1/2 quart microwave-safe casserole, micro-cook wine, Worcestershire sauce, and 1/4 cup water, uncovered, on 100% power (high) 1 to 1 1/2 minutes or until hot.
  • 3. Add cheese mixture to hot liquid.
  • 4. Micro-cook, uncovered, on 50% power (medium) 7 to 9 minutes or until cheese is melted, stirring every 2 minutes.
  • 5. Serve with vegetable dippers or bread cubes.
  • 6. Reheat as necessary in the casserole on medium 2 to 3 minutes.
