This is a fantastic salad recipe that I got off a family member. It is always a hit when she makes it and takes it to barbeques and I have made it three or four times and it is just as successful. The dressing is best made the day before if you can as it lets the flavours blend into one another and the taste improves. It stores in the fridge for ages.

Ingredients

125 g spiral pasta
410 g peach slices, drained and chopped into smaller pieces
1/3 cup chopped parsley
1/3 cup chopped celery
3 spring onions, chopped fine
4 slices bacon, cooked and chopped
5 tablespoons white vinegar
2 tablespoons sugar
2 teaspoons dried basil
1/2 teaspoon salt
1 teaspoon curry powder
2 garlic cloves, crushed
1/2 cup vegetable oil
1/2 teaspoon dried thyme
1/4 teaspoon black pepper

Steps:

Combine all the dressing ingredients in a jar and shake well. Store in the fridge until needed.
To make the salad, mix all the ingredients together in a bowl and pour over the dressing.
Stir to combine.

My good friend Debbie gave me this recipe and boy is it good. My whole family loves it and I make it often. The dressing is very good and uses ingredients that are usually in my pantry all the time. Enjoy!

Ingredients

1/2 lb spinach
2 tablespoons toasted almonds
3/4 cup shredded purple cabbage
1/4 cup raisins or 1/4 cup dried cranberries
1/4 cup sugar
3/4 teaspoon ground mustard
3/4 teaspoon salt
1/2 teaspoon celery seed
1 1/2 tablespoons minced onions
1/4 cup vinegar
1/2 cup vegetable oil

Steps:

Blend dressing ingredients all together.
Pour over salad.
Enjoy!
If you are not going to eat the salad right away, keep dressing in another container and pour dressing over spinach when ready to eat, or the salad will get soggy.

In a large bowl toss together baby spinach leaves, radicchio, green onion slices and Chinese broccoli. Set out 4 plates and divide evenly. Sprinkle evenly on top of each salad the raw garbanzo bean sprouts and pea sprouts, microgreens and berries. Drizzle with the honey mustard dressing and garnish with mint leaves.
