SOUTH AFRICAN MELKTERT (MILK TART)
My 'ouma' South African grandmother's legendary milk tart. It is lip-smacking. The recipe is a real winner. It is a traditional South African tart that is very easy to prepare.

- Preheat the oven to 375 degrees F (190 degrees C). Coat a 9 inch deep dish pie plate with vegetable oil cooking spray.
- In a large bowl, mix together the butter and sugar until smooth. Add the egg yolks and beat until light and fluffy. Sift in the cake flour, baking powder and salt, and stir until well blended. Mix in the vanilla and milk. In a separate bowl, whip the egg whites to stiff peaks using an electric mixer. Fold into the batter. Pour into the prepared pie plate, and sprinkle cinnamon sugar over the top.
- Bake for 25 minutes in the preheated oven, then reduce the temperature to 325 degrees F (165 degrees C). Continue to bake for 25 to 30 minutes, or until the center is set when you gently jiggle the pie. Serve hot or cold.

CRUSTLESS MILK TART
This is a firm family favourite. My mother use to make this with surplus milk (even if the milk was a little sour). It gets more firm the cooler it gets - so give it a chance to set once cooked. I don't think that it needs custard or cream or ice cream with it...besides you won't just want 1 helping!!!

Steps:
- Melt the butter, add the egg yolks and sugar.
- Beat with a fork.
- Add the dry ingredients and milk to the egg mixture.
- Stifly beat the egg whites, fold into the mix and blend well.
- Pour into an oven dish about 35x20cm- the mixture should be about 3cm deep.
- Bake at 160C for 45-60mins.
- It is lovely with cinnamon sprinkled on top before cooking.

MICROWAVE MILK TART
I decide to make a milktart for my DH as he comes from South Africa, then he emigrated to the Seychelles were we met and married. Milk tart I find is a pain to make so I decided to try and make it in the microwave instead of standing in front of the stove.This was the quickest milk tart I have ever made it came out perfect and tasted divine

Steps:
- Method.
- Put the milk into a microwave proof bowl and microwave until boiling make sure that a large bowl is used to prevent the mixture from boiling over.
- While the milk is boiling crush the biscuits, melt margarine and push the mixture into a pie plate,set aside.
- Separate the yolks from 2 of the eggs ( beat the whites from these two eggs until stiff,set aside.
- In a mixing bowl add 1 whole egg, the 2 egg yolks, maziena, flour and sugar beat until creamy.
- When the milk is boiling remove from the microwave and pour one cup of the boiling milk into the above mixture beating as you pour to prevent making scrambled eggs.
- Beating Continuously add the mixture to the milk beat well then.
- put back into the microwave and cook on high for 3 minutes.
- then stir and cook for another 2 minutes remove from microwave, stir at this stage the mixture should be thick.
- Add the vanilla and margarine stir well then fold in the egg whiles.
- and cook in microwave for another 2 minutes on high.
- Remove from microwave stir and pour into pie crust, sprinkle with cinnamon.
- Let the tart cool down completely before putting it into the fridge.
