Easy and tasty chocolate bread pudding made in just a few minutes in the microwave. Ordinary sandwich bread works fine or you can use fancier bread for a fancier pudding. Serve with whipped cream or ice cream, if desired.

3 cups milk
6 tablespoons butter (3/4 stick)
1/4 cup chocolate chips
6 -7 slices day-old bread, cut 1-inch cubes (5 cups lightly packed)
1/4-1/2 cup walnuts, chopped
1/2 cup seedless raisin (optional)
1/4 teaspoon salt
2 eggs, beaten
1/3 cup brown sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon

Steps:

  • Combine milk, butter, and chocolate chips in a microwave safe bowl and microwave on HIGH for 90 seconds, then stir; microwave for another 30 seconds and stir again (if butter and chocolate has not melted at this point continue microwaving and stirring at 30 second intervals until melted).
  • In an 8x8-inch glass baking dish or one of similar size, spread bread cubes evenly, then sprinle evenly with raisins, nuts, and salt.
  • Quickly beat together chocolate mixture, eggs, sugar, vanilla, and cinnamon (mix well).
  • Pour mixture over bread and microwave on BAKE-7 or MEDIUM for 12-14 minutes.
  • Let stand for 5 minutes before serving.

I have no idea where I got this recipe, but it is handwritten in a small book where I saved recipes back in the mid-80s. I haven't made this in ages, but I do recall I used to make it a lot. I think I will make it again today! :-) Ordinary sandwich bread works fine, or use a spiffier bread to make a spiffier pudding. Serve with a vanilla custard sauce, whipped cream, or even ice cream.

4 cups lightly packed bread, cut in cubes (about 4 or 5 slices of bread)
1/2 cup packed brown sugar
1/4 teaspoon salt
1/2 cup raisins
2 cups milk (not skim)
1/4 cup butter or 1/4 cup margarine
2 large eggs, beaten

Steps:

  • Spread bread cubes evenly in an 8-inch round glass pan.
  • Sprinkle with the sugar, salt, and raisins.
  • Place milk in a 4-cup glass measuring cup and add the butter.
  • Microwave on High for four minutes, until butter melts and milk is warm.
  • Rapidly, stir in eggs with a fork or small whisk and combine well.
  • Pour over bread.
  • Microwave on Medium-High for 9 to 12 minutes.
  • When cooked, centre may still be slightly soft, but does set up as pudding cools.
  • Serve warm or chilled; your preference.

1/4 cup whipped cream cheese
1/4 cup sugar
1 tablespoon butter
10 slices white bread, cut into 1-inch cubes
15 miniature peanut butter cups, quartered

Steps:

  • In a large microwave-safe bowl, combine the cream, chocolate chips, cream cheese, sugar and butter. Cover and microwave on high for 2-3 minutes or until chips are melted; stir until smooth. Add the bread cubes; toss to coat., Place half of the bread mixture in a greased 8-in. square microwave-safe dish. Sprinkle with peanut butter cups; top with the remaining bread mixture. Microwave, uncovered, on high for 1-1/2 minutes or until peanut butter cups are melted. Serve warm.

1/2 cup brown sugar, packed
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup raisins
2 cups milk
1/4 cup butter or 1/4 cup margarine
2 eggs, beaten

Steps:

  • Place bread cubes in 8" round dish.
  • Sprinkle evenly with brown sugar, nutmeg, salt, then raisins.
  • Measure milk into a 1 qt measuring cup.
  • Add butter.
  • Microwave at HIGH for 2 minutes, or until butter is melted and milk is warm.
  • Rapidly stir in eggs with a fork and mix well.
  • Pour over bread cubes in dish.
  • Microwave at MEDIUM HIGH (power level 7) 9 to 12 minutes.
  • When cooked, center may still be slightly soft but it will set up as pudding cools.
  • Serve warm or chilled.
  • NOTE: As every microwave varies, you may need to adjust cooking time for yours.
  • This recipe was tested in a 1000 watt microwave and 9 minutes is plenty of time.

I'm mostly posting this so I don't have to go hunting for it every time I want to make it. My mom gave it to me ages ago, and while it isn't the most life changing pudding in the universe it's rediculously fast to make, can be easily varried a number of ways to suit your mood and is plenty tasty for those nights when you want pudding NOW! I like to use a shallow glass container so that it cooks faster. You can leave out the chocolate for vanilla pudding. I like to make it with Silk Nog Soymilk around the hollidays.

3 tablespoons cornstarch
1/3 cup sugar
2 cups milk (sub soymilk to make it vegan)
1/3 cup unsweetened cocoa powder
1 teaspoon vanilla

Steps:

  • In a 4 cup microwave safe glass container combine dry stuff, then stir in the wet stuff.
  • Cook on high for 2 minutes, then whisk the mixture.
  • Cook on high one more minute at a time, whisking after each minute, until thickened.
  • Once it's almost thick, you should go for 15- 30 seconds at a time.
  • Allow to cool if you can wait!

1/2 cup half-and-half cream
2/3 cup sugar
1/2 cup 2% milk
1 large egg, room temperature
1 teaspoon vanilla extract

4 slices day-old bread, crusts removed, cut into cubes (about 3 cups)
Optional toppings: Confectioners' sugar and whipped cream

Steps:

  • In a small microwave-safe bowl, melt chocolate; stir until smooth. Stir in cream; set aside. , In a large bowl, whisk sugar, milk, egg, vanilla and salt. Stir in chocolate mixture.
