Steps:
- Grease the inside of a microwave-safe 12-ounce mug with the butter. Add the eggs and milk, then beat with a fork until well combined.
- Stir in the cheese, ham, bell pepper, salt and pepper.
- Microwave on a medium-high setting for 1 1/2 minutes, then stir and microwave until the eggs are set, an additional 1 to 1 1/2 minutes.
- Let cool slightly before serving.

- Spray the inside of a large, microwave-safe mug lightly with cooking oil spray: or coat the inside of the mug with olive oil.
- Crack 2 eggs into the mug, add 1 tablespoon of milk, and beat with a fork.
- Add grated cheese and other extras: such as chopped red bell pepper or chives. Add a sprinkle of salt and pepper. Stir with a fork until well mixed.
- Microwave and stir in 20 to 30 second increments: Microwave for 30 second on high. Remove from microwave and stir with a fork. Return to the microwave and cook for another 20 to 30 seconds. (Whether it's 20 or 30 depends on the power of your microwave, you may need to experiment to see what times work best for your situtation.) You'll see patches of firm cooked egg mixture beginning to form. Remove and stir again. Return to the microwave and cook for another 20 to 30 seconds or until the omelette has set.

- Put the butter and chopped shallot into a microwavable mug. Cook for 30 seconds, remove from the microwave and stir. Let the mug cool down a little, then swish the butter and shallot around the mug to coat the sides lightly.
- In a bowl or jug, beat the eggs with a fork, then add the parsley, peppers, chives, cheese and a small pinch each of salt and black pepper.
- Pour the egg mixture into the mug and return it to the microwave, cook for 20 seconds. Next, open the microwave and stir the egg, repeat the cooking for 20 seconds and stir again. Finally, cook for another 20 seconds, during which time the egg will start to set.
- Remove the mug from the microwave and let it stand for 1 min. If the omelette is not set enough for you, put it back in on 50% power for no more than 20 seconds.
