1 tablespoon white vinegar
8 large eggs
2 teaspoons chili powder
1 teaspoon garlic powder
17 ounces prepared polenta, log
2 tablespoons olive oil
1 cup smoked cheddar cheese
2 cups salsa
1/2 cup sour cream
1 Hass avocado, diced
2 green onions, sliced

Steps:

  • To make eggs, fill a medium saucepan half way up with water; place over medium-high heat. Bring water to a boil and add vinegar; reduce heat to a simmer. Crack eggs, one by one, into a cup and slide gently into simmering water; cook until egg whites have set, about 3 to 4 minutes. Cook 4 eggs at a time. Remove eggs to a plate with a slotted spoon; cover to keep warm.
  • To make polenta: slice polenta into 8 rounds. Combine chili powder and garlic powder in a cup; dust mixture over polenta rounds. Place a large nonstick skillet over medium-high heat; add oil and cook polenta until brown on both sides, about 3 minutes per side. Remove from heat and keep warm until ready to use.
  • To assemble, place two polenta rounds on each of 4 plates. Top each with an egg, 2 T cheese, 1/4 cup of salsa, 1 T sour cream, avocado and green onion.

  • Heat the oil in a medium skillet. One by one, add a tortilla and cook until very golden on the bottom, flip, and repeat for the other side. Use kitchen tongs to pop a hole and release air if they puff too much.
  • Crack an egg into a small bowl. Use the end of a wooden spoon to stir the water in the pot to make a gentle whirlpool (stress gentle, we don't want a tsunami). Gently pour the egg into the center of the whirlpool. Turn off the heat, place on the lid of the pot, and cook 5 minutes. Immediately remove the egg with a slotted spoon.
  • While egg is poaching (no peeking!), take a toasted tortilla and spread a layer of guacamole, then chicken. Top with the poached egg and ranchero sauce. Garnish with cilantro and jalapeno.

  • You want to prep everything before you poach the eggs. First, cook the bacon. I like to cook the bacon in the oven. I place it on a parchment-lined baking sheet and bake it for 10-12 minutes until crispy. I place it on a paper towel to soak up any excess grease.
  • Then warm up the refried beans and the poblano cream sauce. Microwaving them separately in small bowls will do it.
  • Next, poach the eggs. To poach the eggs, pour 2 inches of water into a skillet, add the vinegar, and bring to a slow boil. Then crack the eggs into small bowls being careful not to break the yolk. Once the water has boiled, gently lower the eggs into the water, being sure to space them out so they do not touch. If the egg white spreads out too much you can pull it back together with a rubber spatula. After 2 minutes carefully make sure that the eggs are not stuck to the bottom of the pan and roll the eggs over. Cook for 3-4 minutes total, until the whites are fully cooked.
  • While those eggs are cooking, warm the tortillas. I place them directly over a gas burner for 10 seconds. Then start assembling the benedicts. Spread the refried beans over the tortillas and crumble the bacon over. Add a layer of avocado on top. Place small piles of cheese over the avocado.
