MESCLUN SALAD

Number Of Ingredients 10

2 tablespoons butter
1 dash cayenne pepper
3 tablespoons sugar
1/2 teaspoon salt
1/2 cup halved pecans
1 red bell pepper
2 oranges
1 tablespoon olive oil
Fresh pepper
2 cups mesclun greens

Steps:

  • In a small saute pan add 2 tablespoons whole butter, dash of cayenne, 3 tablespoons sugar, 1/2 teaspoon salt, and the 1/2 cup of pecans. Cook this slowly over a very low flame, taking care to stir carefully and occasionally. The sugar will burn easily if the flame is too hot. On a stable cutting board, julienne the red pepper and then peel and section the 2 oranges. Squeeze the remaining orange pulp over a large bowl and to this add the 1 tablespoon of olive oil. Toss the salad greens in this and then place on a salad plate. Arrange the oranges and red bell pepper slices on the top and garnish with the caramelized pecan halves. Allow the pecans to cool before eating.

1 garlic clove, minced
1 cup cubed day-old bread
Pinch onion salt

Steps:

  • Pour the oil into an 8-in. square baking pan; add garlic. Bake at 325° until garlic is lightly browned, about 3-4 minutes. Add bread and onion salt; stir to coat. Bake 10-12 minutes longer or until the bread is lightly browned, stirring frequently. Store in an airtight container.

This is a colorful summer salad, but with fresh ingredients available all year round you can make this all-natural healthy salad anytime of the year. I like to change up my salad greens at times and incorporate green leaf, red leaf, spinach, frislee, escarole and romaine into the mix. I wish that many would move away from the traditional iceberg lettuce and into using fresher more nutritious greens like those listed above. Iceberg certainly has the crunch, but it's like eating ice, there is little if any nutritional value in iceberg lettuce. So give this salad a try and you will be surprised with how well you'll like the difference in using fresh mixed greens.

1 small head red leaf lettuce, torn into bite sized pieces
1 small head green leaf lettuce, torn into bite sized pieces
4 cup(s) fresh spinach leaves, stems picked off and torn into bite sized pieces
1 medium red onion, sliced thin
2 - clementines (you can substitute 2 small cans mandarin oranges, drained)
1/4 cup(s) sucanat
1/2 teaspoon(s) salt
1/2 teaspoon(s) dry mustard
1/2 teaspoon(s) paprika, sweet mild
1/2 teaspoon(s) celery salt
1/4 cup(s) grapeseed oil
1/2 cup(s) red wine vinegar

Steps:

  • Mix lettuce and next three ingredients in a large salad bowl, reserving several onion slices and separated clementines segments for garnish.
  • Combine Sucanat and remaining ingredients in a blender or shaker jar; blend or shake well.
  • Add about half of the dressing just before serving; toss well. Garnish with reserved clementines and red onion slices.
  • To make this more a meal add in sliced grilled chicken breast, some fresh sliced strawberries or whole raspberries and blackberries. I like to add fresh croutons and toasted pine nuts or sunflower seeds to give it a nice crunch.

3 cups cubed Italian bread
3 medium tomatoes, chopped
6 ounces cubed part-skim mozzarella cheese
1 medium sweet yellow pepper, cut into 1-inch pieces
1/3 cup minced fresh basil
6 tablespoons olive oil
3 tablespoons white or brown balsamic vinegar
1-1/2 teaspoons minced garlic
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place bread cubes in a single layer in an ungreased 15x10x1-in. baking pan. Bake at 450° for 6-8 minutes or until golden brown, stirring twice. Cool., In a large bowl, combine the tomatoes, mozzarella, yellow pepper and basil. In a small bowl, whisk the oil, vinegar, garlic, salt and pepper. Pour over salad and toss to coat. Sprinkle with croutons.

1 pound shallots (about 10), peeled and quartered lengthwise
3 tablespoons olive oil
Coarse salt and ground pepper
2 tablespoons sherry vinegar
1 tablespoon Dijon mustard
10 ounces mesclun or mixed greens
1 cup crumbled Gorgonzola cheese (4 ounces)
1/2 cup blanched hazelnuts

Steps:

  • Preheat oven to 425 degrees. On a large rimmed baking sheet, toss shallots with 1 tablespoon oil; season with salt and pepper. Roast, tossing occasionally, until browned and tender, 25 to 30 minutes. Let cool slightly; set aside. In a large serving bowl, whisk together remaining 2 tablespoons oil, vinegar, and Dijon; season dressing with salt and pepper.
  • Just before serving, add greens and shallots to dressing; toss, and top with cheese and hazelnuts.

My love for okra began as a child and continues to border on just this side of insanity. I love okra. As a young boy, I would smuggle a brown bag full of fried okra into the movies as my better-than-popcorn snack. On Sunday nights, I was famous for making fried okra and creamed corn sandwiches with fresh slices of tomato and loads of Duke's mayonnaise. Years later, while studying in Italy, I realized that Italians also took leftover vegetables and made sandwiches. All you need are cold vegetables, bread, and mayo. The Caesar salad treatment makes this lighter than a sandwich, although if you want to give it more heft, you can add shrimp, chicken, or duck.

For the salad:
2 cups Fried Okra
2 heads romaine lettuce, leaves separated
1 cup cooked fresh corn kernels, chilled
2½ cups cubed corn bread, toasted
½ cup sliced grape tomatoes
½ cup sliced seedless cucumber
¼ cup sliced red onion
Creole Caesar Dressing (recipe follows)
For the Creole Caesar dressing:
⅔ cup extra-virgin olive oil
3 garlic cloves, peeled
2 tablespoons chopped onion
2 tablespoons red wine vinegar
½ roasted red bell pepper
1 tablespoon finely chopped celery
1 teaspoon light brown sugar
¼ teaspoon cayenne pepper
2 tablespoons mayonnaise
¼ cup grated Parmesan cheese
Salt and pepper

Steps:

  • For the salad:
  • Place half the fried okra in a large bowl and add the romaine, corn, corn bread, tomatoes, cucumber, and onion. Add the dressing and toss until well coated.
  • Divide the salad among six serving plates and top evenly with the remaining okra. Serve immediately.
  • For the Creole Caesar dressing:
  • In a small saucepan, combine the oil, garlic, and onion. Cook over low heat until the garlic and onion are golden and tender, about 15 minutes. Using a slotted spoon, transfer the garlic and onion to a food processor; reserve the oil.
  • Add the vinegar, bell pepper, celery, sugar, cayenne, mayonnaise, Parmesan, and a pinch each of salt and black pepper to the food processor. Pulse until smooth. With the machine running, add the oil in a thin stream and process until emulsified. Taste and season with salt and pepper. Use immediately or store in an airtight container in the refrigerator for up to 1 week.

3 celery ribs
2 heads Bibb lettuce
4 cups loosely packed mesclun (mixed baby greens)

Steps:

  • Preheat oven to 300°F.
  • On a baking sheet bake bread cubes in middle of oven until lightly toasted and let cool. In a small bowl whisk together vinegar, oil, and mustard and season with salt and pepper. Cut celery diagonally unto 1/2-inch slices. Tear Bibb lettuce into bite-size pieces. In a large bowl toss all greens, celery, and croutons with dressing and season with salt and pepper.
