MEDITERRANEAN CHICKEN ORZO SOUP
My husband is Greek, so I'm always trying new Mediterranean recipes. This lemon chicken orzo soup is his favorite dish that I make. Serve it with a little feta or Parmesan and a side of toast. -Kristine Kosturos, Olympia, Washington.

Steps:
- In a large saucepan, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 6-8 minutes or until no longer pink. Remove from pan., In same pan, heat remaining oil over medium-high heat. Add vegetables, salt, oregano and pepper; cook and stir 4-6 minutes or until vegetables are crisp-tender. Add wine, stirring to loosen browned bits from pan. Stir in broth, rosemary and bay leaf; bring to a boil., Add orzo. Reduce heat; simmer, covered, 15-18 minutes or until orzo is tender, stirring occasionally. Return chicken to pan; heat through. Stir in lemon zest and juice; remove bay leaf. If desired, top each serving with parsley.

MEDITERRANEAN SEAFOOD AND ORZO SOUP
Server this soup with French bread toasts topped with chopped marinated artichoke hearts that have been tossed with a little olive oil. From Bon Appetit.

Steps:
- Mix halibut, lemon juice and 4 teaspoons oil in a medium bowl.
- Let mixture stand while preparing soup.
- Heat 1/4 cup oil in a heavy large saucepan over medium heat.
- Add onions and cook until translucent, stirring occasionally, about 10 minutes.
- Squeeze tomatoes through fingers to break up while adding to saucepan.
- Add clam juice, wine, bay leaf, orange peel strips, fennel and dried red pepper.
- Simmer soup for 10 minutes.
- Add orzo and cook for 5 more minutes.
- Add clams to soup.
- Cover and cook for 5 minutes longer.
- Add halibut.
- Cover and cook until halibut is opaque and clams open, about 4 minutes longer.
- Discard bat leaf, orange peel and any clams that do not open.
- Season to taste with salt and pepper.
- Garnish with parsley.
MEDITERRANEAN ONION-ORZO SOUP
If you are an onion-lover such as my family is, I suggest to try this soup! I also suggest to make this a day in advance, the flavors intensify quite a lot! I use 8 large onions for this recipe, one more won't hurt, also the onions must be caramalized for this soup, just softening will not do! You can add in some dry white wine if desired.

Steps:
- Heat butter and oil in a large stockpot oven medium heat; add in the onions with 3 tablespoons white sugar and cook for about 25-30 minutes, stirring occaionally until lightly browned and caramalized (adding in the garlic, chili flakes, thyme and oregano the last 5 minutes of cooking).
- Add in the broth, undrained tomatoes, tomato sauce and bay leaf; bring to a boil and simmer for about 45 minutes on low heat, adding in the orzo the last 10-15 minutes of simmering; cook until the pasta is tender.
- Season with salt and lots black pepper.
- Ladle into bowl, then top with croutons, then sprinkle with Parmesan cheese or Swiss cheese.

- Cook and stir vegetables in large nonstick skillet on medium heat 3 to 5 min. or until crisp-tender. Spoon into medium bowl; stir in orzo.
- Add chicken to skillet; cook 6 to 7 min. on each side or until done (165°F).
- Mix cream cheese spread, pesto sauce and milk until blended. Stir 3/4 cup cream cheese mixture into orzo. Spoon remaining cream cheese mixture into microwaveable bowl. Microwave on HIGH 30 sec. or just until warmed; stir.
- Spoon orzo mixture onto platter; top with chicken, warmed cream cheese mixture and lemon zest.

- In a cast iron skillet, heat 1 tbsp olive oil over medium-high heat until shimmering. Gently add the sea scallops. Sear for about 1 1/2 minutes on each side. Scallops should form a golden brown crust. Sprinkle a large pinch of dried oregano. Transfer to a dish and set aside for now.
- To the same cast iron skillet, add a little more extra virgin olive oil if needed. Again heat over medium-high until shimmering but not smoking. Add the shrimp; sear for about 2 minutes on both sides. You want to see some pink, but don't worry about fully cooking it (you will finish cooking it in the soup.) Remove from the heat and sprinkle a generous pinch of dried oregano.
- In a medium heavy cooking pot, heat 1 tbsp extra virgin olive oil on medium-high. Add the chopped peppers, onions, garlic, tomato paste, salt and the remaining dried oregano. Cook for 5 minutes, stirring occasionally.
