SICILIAN LENTIL PASTA SAUCE

Sicilian Lentil Pasta Sauce image

This is a very nice, thick sauce. It has a meat taste, without the meat. Nice and hearty, great with a crusty bread on a cold, Fall day.

Time 1h40m

Yield 8

Number Of Ingredients 11

2 teaspoons olive oil
1 cup chopped onion
2 cups fresh sliced mushrooms
1 small zucchini, chopped
3 cloves garlic, minced
1 cup dry lentils
3 cups water
2 (8 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
1 ½ teaspoons white sugar
½ cup water

Steps:

  • In a large saucepan, heat oil over medium heat. Add onions, mushrooms, zucchini, and garlic. Cook and stir until tender, about 5 minutes.
  • Add lentils and 3 cups water to vegetables. Bring to a rolling boil, stirring occasionally. Reduce heat to low, cover, and cook 45 to 60 minutes.
  • Stir in tomato sauce, tomato paste, sugar, and 1/2 cup water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes. If necessary, add more water to keep the sauce from sticking. Be careful not to dilute; the sauce should be quite thick.

MEAT(LESS) TOMATO SAUCE - SICILIAN STYLE

Meat(Less) Tomato Sauce - Sicilian Style image

This is my mom's sauce and it has taken me some time to perfect it to be as good as hers. You can use fresh tomatoes or use good quality canned tomatoes. If you don't want a meat sauce, then just omit it and fry the onions and garlic in olive oil. It's best to make this early in the day or even the day before you plan to use it to allow the flavors to mix.

Categories     Sauces

Time 1h50m

Yield 16 Cups

Number Of Ingredients 7

3 (28 ounce) cans crushed tomatoes
1 1/4 lbs ground beef
2 onions, chopped
2 garlic cloves, minced
1 teaspoon salt
1 (1 g) packet Sweet 'n Low or 1 (1 g) packet Splenda sugar substitute
1 1/2 teaspoons dried basil or 4 -5 fresh basil leaves

Steps:

  • Empty the tomatoes into a large saucepan and turn the heat to medium.
  • In the meantime, heat a heavy skillet over medium heat.
  • When hot, add the ground beef and stir it around until brown.
  • You do not need to add oil as the fat from the beef will suffice.
  • When the meat is cooked, remove with a slotted spoon, allowing excess oil to drip back into the skillet, and transfer the meat to the saucepan of tomatoes and stir.
  • Add the onions and garlic to the fat in the skillet and cook until the onion is tender.
  • Remove with a slotted spoon, again, allowing the excess oil to drip back into the skillet and stir into the tomatoes.
  • Stir in the salt, sugar and basil.
  • Bring sauce to a boil, cover, then turn down the heat to simmer for 1 1/2 hours, stirring occasionally to prevent sticking.
  • Turn off the heat and let the pot sit on the stove until you are ready to use it.
  • If you are planning to use it the next day, refrigerate when cooled.
  • Reheat as necessary or freeze for future use.

MEATLESS ITALIAN SAUCE RECIPE

Meatless Italian Sauce Recipe image

Provided by Simple Italian Cooking Blog

Categories     Main Dish

Time 8h

Number Of Ingredients 8

Size #10 can crushed tomatoes
1 18 oz. can tomato paste
extra virgin olive oil
5 cloves of garlic
2 medium onions chopped
3 bay leaves
distilled/purified water
1 whole carrot washed

Steps:

  • Pour about 3 TBLE olive oil in deep pot and heat over medium heat
  • Add onions and reduce to simmer. Stir so onions are coated with olive oil. Cover and simmer 5 - 8 minutes.
  • When onions are translucent, add in chopped or minced garlic and simmer for 3 more minutes.
  • Add in crushed tomatoes and stir well.
  • Fill can about 1/3rd of the way with water and pour into sauce. Stir well. If you added too much water, leave the lid off.
  • Add bay leaves.
  • Take some sauce out and mix the tomato paste with it until smooth and then pour back into sauce and stir well.
  • Put carrot into sauce. This is used to absorb the acid from the tomatoes. It will not affect flavor and will be removed later.
  • Bring to boil stirring frequently so it won't burn on the bottom.
  • Reduce to simmer and let cook down for about 2-3 hours making sure to stir every once in a while. Cover and let stand for a few more hours. I let it stand over night and then do a reheat in the morning, then freeze the sauce in smaller containers so I can use them on a need be basis.
  • Discard carrot.

FAMILY SICILIAN SAUCE AND MEATBALLS

Family Sicilian Sauce and Meatballs image

My mother's family originally came from Sicily and every family member makes his or her own version - this version came most recently via Brooklyn. If there are any leftovers, they freeze very well. MANGIA! Serve with red wine and a good loaf of crusty Italian bread.

Time 4h55m

Yield 24

Number Of Ingredients 23

3 slices white bread, torn into pieces
¼ cup milk or water
1 ½ pounds ground beef
2 eggs
½ cup grated Romano cheese
1 pinch dried parsley
¾ teaspoon salt, or to taste
¼ teaspoon ground black pepper
3 tablespoons olive oil
4 onion, chopped
6 cloves garlic, chopped
12 (3.5 ounce) links sweet Italian sausage
1 ½ pounds cubed beef brisket
½ pound pork neck bones
4 (6 ounce) cans tomato paste
3 (28 ounce) cans crushed tomatoes
½ cup red wine
4 bay leaves
¼ teaspoon ground cinnamon
¼ teaspoon dried parsley
1 teaspoon dried basil
salt and pepper to taste
3 (16 ounce) packages dry pasta

Steps:

  • To make the meatballs, combine bread and milk or water in a medium bowl. Mix in ground beef, eggs, Romano cheese, parsley, and salt and pepper to taste. Form golf ball-sized meatballs; place into freezer to firm up.
  • To make sauce, heat olive oil in a large pot on medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and 1 sausage link; cook about 3 minutes more.
  • Meanwhile, in a large skillet over medium heat, brown beef chunks and pork neck bones; set aside.
  • When onions and garlic are done, turn heat down to low. Add tomato paste and cook for a few minutes. Stir in the browned beef and pork, crushed tomatoes, wine, bay leaves, cinnamon, parsley, basil, and salt and pepper. Bring sauce to a simmer, then reduce the heat to low and cook for 3 to 4 hours.
  • Once you add the meatballs, let sauce simmer for 1 hour. When sauce is nearly ready, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cover pasta with sauce and meatballs and serve immediately.

OLD FASHIONED SICILIAN SUCCO

Old Fashioned Sicilian Succo image

My Nana used to cook this for me when I was young and as she prepared things and we waited for the sauce to finish, she'd tell me great stories about her life in Sicily and other secret business! This recipe is the best sauce I've ever had- I really think it can bring the family together. Just prepare it and you'll see that when dinner time comes everyone's mouths will be watering because of the great smell, the entire family can gather around the table and there will be enough for everyone, I promise! Good for vegetarians too-just substitute 2 1/2 pounds of chopped zucchini for the meatballs.

  • Begin by soaking the crumb of day old Italian bread (6 cups) in milk or a combination of milk and water. Let stand while you prepare the remaining ingredients.
  • Squeeze some of the milk from the bread, but not all of it, and transfer to a large mixing bowl. You want to retain much of the moisture. Add grated Parmigiano/Pecorino Romano cheeses; large eggs; freshly chopped parsley; finely minced clove of garlic; salt and pepper. Use your hands to combine all ingredients.
  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper and drizzle with olive oil.
  • Shape meatballs into balls using your hands or a 1 tbsp cookie scoop and place onto the prepared baking sheet. The mixture will be very wet and not firm, in fact your meatballs will be slightly oval shaped and flat. Just like my mom always makes them!
