THE AMAZING SWEDISH MEATBALL
Yowza! These Swedish Meatballs are fabulous! Very easy to make with such simple ingredients, and they're just delicious. This recipe has been in my family for years - friends and family wait all year to eat them.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, combine ground beef, ground pork, chopped onion, bread crumbs, egg, and milk. Season with parsley, Worcestershire sauce, 2 teaspoons salt, and 1 teaspoon pepper. Mix well with your hands. Shape into walnut-size balls, and place on baking dish.
- Bake for 30 minutes in preheated oven. Turn frequently so they brown evenly on all sides.
- To make the sauce: In a saucepan, combine oil, flour, paprika, 1 tablespoon salt, and 1 teaspoon pepper. Cook over medium heat until sizzling. Stir in hot water and sour cream until smooth and heated through.
- When meatballs have cooked 30 minutes, pour sauce over the top, and return to the oven for 20 minutes, stirring occasionally.

SWEDISH MEATBALLS WITH NOODLES

Steps:
- Preheat the oven to 475 degrees F (245 degrees C).
- Combine ground beef, pork, bread crumbs, 1/2 cup milk, egg, garlic, salt, pepper, and allspice in a large bowl; mix until just combined. Use a rounded 1-tablespoon measure to form mixture into meatballs. Place meatballs on a baking sheet.
- Bake in the preheated oven until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.
- While the meatballs are baking, melt butter in a medium saucepan over medium-high heat. Add flour. Cook, whisking constantly, for about 1 minute, being careful not to burn or brown the flour. Gradually whisk in the remaining milk and broth. Bring to a boil. Reduce heat and simmer until sauce has thickened slightly, 2 to 3 minutes. Add Worcestershire sauce to taste and remove from the heat.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- Drain any grease from the meatballs. Add meatballs to sauce; toss gently to coat. Turn on lowest heat to warm. Add milk or water to thin sauce if too thick.
- Drain egg noodles and serve immediately topped with sauce, meatballs, and parsley.

SWEDISH MEATBALLS (SVENSKA KOTTBULLAR)
Our family's traditional Christmas recipe, frequently doubled and kept warm in a crock pot. Worth the effort, and the meatballs are even better the next day! Reserve brown gravy and add sour cream to it the day you serve the leftovers.

- Preheat oven to 350 degrees F (175 degrees C).
- Place the bread crumbs into a small bowl, and mix in the cream. Allow to stand until crumbs absorb the cream, about 10 minutes. While the bread is soaking, melt 1 teaspoon of butter in a skillet over medium heat, and cook and stir the onion until it turns light brown, about 10 minutes. Place onion into a mixing bowl; mix with the ground beef, ground pork, egg, brown sugar, salt, black pepper, nutmeg, allspice, and ginger. Lightly mix in the bread crumbs and cream.
- Melt 1 tablespoon of butter in a large skillet over medium heat. Pinch off about 1 1/2 tablespoon of the meat mixture per meatball, and form into balls. Place the meatballs into the skillet, and cook just until the outsides are brown, about 5 minutes, turning the meatballs often. Insides of the meatballs will still be pink. Place browned meatballs into a baking dish, pour in chicken broth, and cover with foil.
- Bake in the preheated oven until the meatballs are tender, about 40 minutes. Remove meatballs to a serving dish.
- To make brown gravy, pour pan drippings into a saucepan over medium heat. Whisk the flour into the pan drippings until smooth, and gradually whisk in enough beef broth to total about 2 1/2 cups of liquid. Bring the gravy to a simmer, whisking constantly until thick, about 5 minutes. Just before serving, whisk in the sour cream. Season to taste with salt and black pepper. Serve the gravy with the meatballs.

MEATBALLS ALA SWISS

- 1. Mix beef, 1/3 cup evap milk, catsup, parsley flakes, mustard, salt and pepper. with wet hands, shape into 16 meat balls about 1 1/2 inch diameter. Put in a shallow baking pan. Bake in 350 oven for 20 minutes or until brown. Drain. Mix soup, cheese, 1/3 cup evap milk, water and tabasco. Pour over meat balls and bake 10 min more or until bubbly. Sprinkle with parsley flakes. Makes about 4 servings.
PORCUPINE MEATBALLS ALA SOOZ
These are delicious everyone in my family loves them. I either serve them over mashed potatoes or over noodles. Definitely a kid pleaser and adults will love this dish too!

- Combine ground beef, rice, egg, onion powder, garlic powder, salt, pepper, and 1/4 cup of the tomato soup. Mix well.
- Shape mixture into about 20 small meatballs.
- Place meatballs in a large soup pan with a lid.
- Mix rest of soup, water, and Worcestershire in a small bowl; pour over meatballs.
- Bring to a boil.
- Reduce heat; cover; and simmer 30 - 40 mintes or until meatballs are cooked and rice is soft, stirring often.
- Serve over rice, mashed potatoes, or even egg noodles.

MEATBALLS ALA ANGELA
Mostly everyone loves meatballs. There are many different ways and adaptions of meatballs recipes. Here is my own I use to put in italian red sauce. The longer they cook in the sauce the better. Buon Appetito!

Steps:
- Soak stale italian bread in water until soft and a bit mushy.
- Remove from water and squeeze water from bread.
- All excess water should be squeezed out.
- Place in a large bowl.
- Add all other ingredients to soaked bread and mix thoroghly with your hands.
- Ingredients should be well mixed throughout.
- Take mixture and form balls with your hands.
- If you make smaller balls (golf ball size) this recipe will yield more.
- In a large frying pan/skillet, place about a 1/4 cup of olive oil into pan and put flame/tempature to medium.
- When oil is hot add meatballs.
- Cook meatballs until browned evenly.
- Be sure to watch the tempature, you don't want to burn the meatballs.
- I prefer to set my flame low, it takes longer to cook but they won't burn.
- Please adjust your flame/tempature accordingly.
- Place meatballs into your favorite italian sauce.
- You may also add your meatballs raw into sauce and cook for several hours

- In a medium sized bowl combine ground beef, panko, parsley, allspice, nutmeg, onion, garlic powder, pepper, salt and egg. Mix until combined.
- Roll into 12 large meatballs or 20 small meatballs. In a large skillet heat olive oil and 1 Tablespoon butter. Add the meatballs and cook turning continuously until brown on each side and cooked throughout. Transfer to a plate and cover with foil.
- Add 4 Tablespoons butter and flour to skillet and whisk until it turns brown. Slowly stir in beef broth and heavy cream. Add worchestershire sauce and dijon mustard and bring to a simmer until sauce starts to thicken. Salt and pepper to taste.
- Add the meatballs back to the skillet and simmer for another 1-2 minutes. Serve over egg noodles or rice.
