1 lb pizza dough, divided
2 tablespoons olive oil
8 cloves garlic, minced, divided
salt, to taste
pepper, to taste
3 cups tomato puree
1 tablespoon dried basil
1 tablespoon dried oregano
12 oz tomato paste
1 lb low-moisture mozzarella, sliced
2 lb meatballs
2 cups caramelized onions
3 cups bell peppers, chopped, sauteed
Parmesan, to serve

Steps:

  • Preheat oven to 450°F (230°C).
  • Cut a 1 pound ball of pizza dough in half and roll out two large discs of dough.
  • Spray the inside of a springform pan with cooking spray and lay in one of the dough discs. Press the dough into the corners.
  • Sprinkle the olive oil, 2 cloves of the minced garlic, salt, and pepper on the dough and brush to cover the surface. Press the bottom of the dough with a fork.
  • Bake until the dough is cooked and lightly golden brown, 15 minutes.
  • Mix together the tomato puree, dried basil, 4 cloves of minced garlic, dried oregano, and tomato paste in a bowl. Season to taste with salt and pepper.
  • Into the partially cooked bottom layer of pizza dough, shingle a layer of mozzarella slices and then a layer of the homemade marinara sauce.
  • Spiral the meatballs in the dish as tightly as possible. Cover with more marinara sauce.
  • Add a layer of caramelized onions, and more sliced mozzarella.
  • Add the green, yellow, and orange bell peppers on top of the mozzarella.
  • Cut the second piece of dough into strips to form into a lattice pattern on top of the pie.
  • Brush with 2 tablespoons more of olive oil, 2 cloves minced garlic, and kosher salt.
  • Bake for 40 minutes to an hour, or until the dough on top is browned and the sauce, meatballs, and cheese are heated through.
  • Slice the pie, serve with extra marinara sauce and grated parmesan.

In the middle, it's your average cheese pizza, but it's surrounded by a crust loaded with homemade meatballs. It's the sort of show-stopping party app you'll want to bookmark for a special occasion.

1 large egg
½ yellow onion, finely diced
½ cup bread crumbs
½ cup grated parmesan cheese
¼ cup fresh parsley, chopped

1 tablespoon oil, for cooking
11 oz pizza dough
½ cup marinara sauce
1 cup shredded mozzarella cheese
olive oil, for brushing

Steps:

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, mix the ground beef, egg, onion, bread crumbs, Parmesan, parsley, garlic, salt, pepper, and oregano.
  • Roll the mixture into golf ball-sized meatballs.
  • In a medium cast iron or nonstick skillet, heat oil over medium heat.
  • Working in batches cook the meatballs until browned on all sides, about 5 minutes. Set aside.
  • On a sheet of parchment paper, press the pizza dough into a large circle, about 12 inches (30-cm) in diameter.
  • Cut 8 evenly spaced 2-inch (5-cm) slits on the edge of the dough.
  • Place one meatball on the edge of the dough between 2 slits. Pull the corners of the dough around the meatball and press into the dough, sealing the meatball in a dough pocket. Repeat with the remaining meatballs.
  • With the help of a friend, transfer the pizza and parchment to a baking sheet.
  • Spoon marinara sauce into the middle of the pizza and spread evenly.
  • Sprinkle mozzarella over the sauce, or add your favorite pizza toppings! Brush the dough around the meatballs with olive oil.
  • Bake for 25 minutes, or until the cheese is bubbly and the dough is golden and just cooked through.
  • Slice with a pizza cutter and serve.

1 cup grated Parmesan
2 tablespoons dried parsley

5 slices spicy capicola, diced
5 slices sharp provolone, diced
5 slices Black Forest ham, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the ground meat with the eggs and mix well. Add the meat mixture and breadcrumbs to the bowl of a small stand mixer fitted with a paddle attachment and mix until well combined. Add the Parmesan, parsley, garlic powder, salt and pepper and mix on medium speed for 3 minutes (do not over mix). Scoop out 18 meatballs using an ice-cream scoop (or form the meatballs to ice-cream-scoop size). Mix the mozzarella, capicola, provolone, ham and salami in a mixing bowl. Stuff each meatball by making a hole in the middle and placing 1 tablespoon of the meat-and-cheese mixture in the center. Seal the meatballs well by pinching them back together. Bake, covered with foil, 45 minutes.

2 tablespoons olive oil
8 ounces sweet Italian sausage, casings removed
1 1/2 cups prepared marinara
Pinch of crushed red pepper flakes, optional
Kosher salt and freshly ground black pepper
1 pound mozzarella
1 cup fresh ricotta
1/4 cup freshly grated Parmesan
3 cloves garlic, minced
1 1/2 pounds store-bought pizza dough
1 ounce sliced pepperoni (about 1/4 cup)
3 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 400 degrees F.
  • For the sauce: Heat the oil in a large ovenproof skillet over medium-high heat until shimmering. Add the sausage and cook, breaking it up with a wooden spoon, until lightly browned, 2 to 3 minutes. Stir in the marinara, scraping up any browned bits from the bottom of the skillet. Add the red pepper flakes if using and sprinkle with salt and several grinds of black pepper. Bring to a simmer, reduce the heat to medium low and cook, uncovered and stirring often, until thick, 8 to 10 minutes. Remove from the heat and set aside.
  • For the ricotta mixture: Shred half the mozzarella into a medium bowl. Stir in the ricotta, Parmesan and 1 clove garlic until combined. Set aside.
  • Assemble the dip: Cut the remaining mozzarella into thirds and then cut each third into 6 rectangular pieces for a total of 18 pieces of cheese. Divide the dough into 18 small pieces. Wrap each piece of dough around one of the mozzarella rectangles, so that the cheese is sealed inside the dough like a purse.
  • Ring the edge of the skillet with the stuffed dough, placing the pieces seam side-down on top of the sauce. Spread the meat sauce around so that it fills the spaces between the dough. Dollop the ricotta mixture on top of the meat sauce in the center of the skillet (it will spread a bit while cooking). Distribute the pepperoni over the top of the ricotta mixture.
  • Stir together the butter and remaining 2 cloves garlic in a small bowl and brush on the dough.
  • Bake until the dough is golden brown and the ricotta mixture is melted and bubbly, 35 to 40 minutes. Let rest for 15 minutes before serving.

1 pound refrigerated pizza dough
Coarse cornmeal, for dusting
2 slices thick-cut bacon
8 ounces ground beef
1/4 cup grated parmesan cheese, plus more for topping
1 large egg, lightly beaten
2 tablespoons breadcrumbs
2 tablespoons milk
2 tablespoons finely chopped fresh parsley
1 clove garlic, grated
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
1 cup shredded part-skim mozzarella cheese (about 4 ounces)
1/2 cup plus 2 tablespoons marinara or pizza sauce

Steps:

  • Put a pizza stone or inverted baking sheet on the middle oven rack and preheat to 425 degrees F for 1 hour. Meanwhile, bring the pizza dough to room temperature. Sprinkle a 15-inch round pizza pan with cornmeal.
  • Pulse the bacon in a mini food processor until very finely chopped. Mix the ground beef, chopped bacon, parmesan, egg, breadcrumbs, milk, parsley, garlic, oregano, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl with your hands until combined. Form into 1 1/2-inch meatballs (about 12); arrange on a baking sheet and bake until firm and cooked through, about 10 minutes. Set aside to cool.
  • Stretch the dough all the way to the edge of the pizza pan, pressing with your fingertips (lightly oil your hands if the dough is too sticky). Arrange the meatballs evenly around the edge of the dough. Sprinkle the middle with 3/4 cup mozzarella, then top with 1/2 cup sauce. Top the meatballs with the remaining 2 tablespoons sauce and 1/4 cup mozzarella.
  • Put the pan on the hot stone and bake until the crust is slightly puffed and golden brown, 20 to 25 minutes. Top with grated parmesan.

200ml milk
300g strong white bread flour
1 tsp fast-action dried yeast
½ tsp golden caster sugar , plus a pinch
3 tbsp olive oil , plus a drizzle
250ml passata
2 garlic cloves , squashed
½ tsp dried oregano
1-2 tbsp polenta
250g grated mozzarella
toppings of your choice , we used pepperoni slices, chopped chorizo and basil

Steps:

  • You can make the pizza dough up to 48 hrs before you want to cook the pizza. Warm the milk in a saucepan until steaming but not boiling. In a large bowl combine the flour, yeast, sugar and 1 tsp salt. Add 1/2 tbsp oil to the milk and leave to cool until just warm -when you place a finger in the liquid it should feel body temperature. Pour the liquid into the bowl and either mix with a wooden spoon or food mixer, until the ingredients are well combined. Tip out onto your work surface and knead for 10 mins, or continue mixing in the mixer for 5-7 mins, until you have a smooth and elastic dough. Clean and oil the bowl, return the dough and cover with cling film. Leave somewhere warm to rise for 1-2 hrs, until doubled in size, or place in the fridge for up to 48 hrs.
  • Meanwhile, make the sauce. Pour the remaining oil and passata into a saucepan and add the squashed garlic, oregano and a pinch of sugar. Season well and simmer for 5-10 mins, until the sauce is thick. Remove the garlic cloves and set aside until you're ready to assemble the pizza.
  • If the dough has been chilled remove from the fridge and leave at room temperature for 1 hr. Dust the work surface with polenta and tip the dough onto it. Punch the dough down to knock out the air bubbles then shape into a disk. Roll out the dough to a pizza base, about 35cm wide. Dust a large baking sheet with polenta and place the dough on top, making sure the dough can move around freely. Use 125g of the mozzarella to create a ring around the outside edge of the pizza base, leaving 1/2cm gap between the edge. Brush a little water inside the mozzarella ring then fold over the outside edge to enclose the mozzarella and create a stuffed crust. Press firmly to stick the dough in place.
  • Spoon the sauce over the middle of the base and top with the remaining mozzarella. Scatter with your chosen toppings (save any fresh herbs for scattering over at the end) and brush the stuffed crust with a little oil, then lightly cover with oiled cling film and set aside for 20-30 mins, until the dough has puffed up a little. Meanwhile heat oven to 240C/220C fan/gas 9 with a large baking sheet on the middle shelf to heat up.
  • When the oven is hot and the pizza dough has puffed up, quickly open the oven door and slide the pizza onto the hot tray. Shut the door and cook for 15-20 mins, or until bubbling and cooked through. Leave to cool for a few mins before eating.

250-300ml semi-skimmed milk
500g strong white bread flour, plus extra for dusting
1¼ tsp salt
1½ tsp fast-action dried yeast
½ tbsp caster sugar
5 tbsp olive oil plus extra for proving, the baking tray and crust
230g grated mozzarella
300g pork mince
50g fresh breadcrumbs
1 medium egg yolk
½ tsp fennel seeds, crushed (optional)
½ tbsp fine polenta
20g parmesan
a few leaves of oregano, to serve (optional)
1 tbsp olive oil
1 small onion, finely chopped
1 garlic clove, crushed
400g can chopped tomatoes
1 tbsp tomato purée
2 tsp dried oregano
1 tsp sugar

Steps:

  • Gently heat the milk in a small saucepan until steaming, then remove from the heat and leave to cool slightly. Combine the flour, salt, yeast and caster sugar in a large bowl. Make a well in the centre, and pour in 4 tbsp olive oil and 250ml of the warm milk. Stir to combine, adding the rest of the milk if the dough feels dry. Tip out onto a lightly floured surface and knead for 10 mins, then put in a lightly oiled bowl. Cover and leave to rise for 1 hr 30 mins-2 hrs until doubled in size.
  • To make the sauce, heat the oil in a saucepan over a low heat and fry the onion with a large pinch of salt for 12-15 mins, or until the onion is softened and translucent. Add the garlic and fry for 1 min more. Stir in the tomatoes, tomato purée, oregano and sugar. Bring to the boil, then reduce to a simmer and cook uncovered for 15-20 mins, or until the sauce has thickened. Season. If you prefer a smooth sauce, blitz with a hand blender.
  • Lightly oil a roughly 33 x 23cm baking tray. Roll the risen dough out slightly with a rolling pin, then stretch it over the tray and into the corners, pushing it up the edges to make a lipped crust. Spread over the tomato sauce and top with most of the mozzarella. Cover and leave to rest for 30 mins.
  • Heat the oven to 240C/220C fan/gas 8 with a baking sheet inside to heat up - it should be large enough to hold the pizza tray. Combine the pork, breadcrumbs, egg yolk, fennel seeds and some seasoning in a large bowl. Mix everything with your hands for about 5 mins until well combined, then roll the mixture into 12 balls. Heat the remaining oil in a large non-stick frying pan over a medium heat, and fry the meatballs for 5 mins until evenly browned. Set aside.
  • Brush the crust of the pizza with a little oil, then sprinkle over the polenta. Top the pizza with the meatballs, pressing them into the sauce and cheese a little, then scatter over the remaining mozzarella. Immediately slide the pizza tray onto the hot baking sheet and bake for 15-18 mins, or until the pizza is cooked through in the middle and crisp around the edges. Scatter over the parmesan and oregano, then slice into six squares to serve.

  • In the space between the center cuts and the edge of the crust (kinda looks like a wheel), spread the ricotta, place the meatballs, and sprinkle the Mozzarella cheese.
  • Gently pull the point of each star back and tuck it under the outer crust, rolling both sides inward so they overlap. (SEE VIDEO – it will be easier to understand.)
