These Meatball Bombs are stuffed with marinara, meatball, and cheese, then wrapped in dough and topped with a seasoned garlic butter. They are quick to make and have so much flavor!

Number Of Ingredients 8

1 can (12 oz) Pillsbury Homestyle Butter Tastin' refrigerated biscuits
8 cooked Italian-style meatballs (if using frozen, let thaw completely)
1 cup marinara/pasta sauce
1 cup shredded cheese (mozzarella or Italian blend)
4 tablespoons butter, melted
2 garlic cloves, minced
1/2 teaspoon Italian seasoning
pinch of salt

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Using your hands or a rolling pin, flatten each biscuit into a 4 inch round.
  • Place 1 meatball and 2 tablespoons marinara in center of each dough round. Top with 2 tablespoons of cheese.
  • Wrap dough around meatball and cheese, pressing edges to seal. Place seam side down, leaving room for spreading on prepared baking sheet. Continue until all biscuits have been completed.
  • In a small bowl, whisk together melted butter, garlic, Italian seasoning and salt. Evenly spoon on top of each biscuit.
  • Bake for 18 to 20 minutes, or until golden brown. Serve warm!

So many layers of goodness in this recipe! The flavors are fabulous. And the cheese in the middle is a wonderful treat. Eat these as a main course, or make them a bit smaller for an appetizer. They are delicious! Don't forget... all ovens are different. In the Test Kitchen, after 40 minutes the bacon was not as crispy as I like. So I raised the temp to 425 and baked another 15 minutes. They came out perfect.

2 pound(s) spicy Italian sausage
1 pound(s) ground beef
16 - small cubes or cheese, Asadero or your favorite
3 - eggs
1 1/2 cup(s) jarred Parmesan or 3 cheese
2 teaspoon(s) McCormick bbq seasoning or your favorite
1 cup(s) bbq sauce
16 slice(s) bacon

Steps:

  • In one bowl mix together Italian sausage, 2 eggs and 1 c Parmesan cheese.
  • In another bowl mix together ground beef, McCormick's seasoning, 1 egg and 1/2 c Parmesan cheese.
  • Cut cheese into about 1" cubes.
  • I used the middle size and large scoops. The middle size for ground beef, the large for sausage.
  • Scoop 16 ground beef scoops. Roll in your hands to make a ball.
  • Then press center down and out, place cheese inside and gently work the meat up and over the cheese. Then roll in hands for a few seconds to tighten it up.
  • Scoop out 16 scoops of Italian sausage with the large scoop.
  • Roll into a ball, then press down and out from center to make a well.
  • Place smaller meatball stuffed with cheese inside. Gently push sausage up and over top of smaller meat ball. Roll in your hands for a few seconds to tighten meat up.
  • Line baking sheet with parchment paper. Lay a slice of bacon on paper, place meatball in center.
  • Then bring bacon up and twist and back down. Tuck under meatball and place little skewer in center.
  • Brush with your favorite BBQ sauce, I use Uncle Gary's Jalapeno BBQ sauce. http://unclegaryspeppers.com/
  • Bake on center rack 325° for 40 min. Serve with potato salad or mac and cheese.

Here's what you need: olive oil, yellow onion, garlic, crushed tomato, salt, pepper, fresh basil, bread crumbs, milk, egg, grated parmesan cheese, salt, pepper, ground beef, onion, lasagna noodles, ricotta cheese, mozzarella cheese, fresh parsley

1 tablespoon olive oil
yellow onion, chopped
3 cloves garlic, minced
28 oz crushed tomato, 2 cans
1 ½ tablespoons salt
1 teaspoon pepper
2 sprigs fresh basil
½ cup bread crumbs
½ cup milk
1 egg
½ cup grated parmesan cheese
2 teaspoons salt
½ teaspoon pepper
1 lb ground beef
½ cup onion, minced
24 lasagna noodles, cooked 2 minutes less than package instructions
16 oz ricotta cheese
12 sheets mozzarella cheese, sliced in half
fresh parsley, for garnish

Steps:

  • Marinara sauce: In a large saucepan, heat the olive oil. Add onion and garlic and saute for 5 minutes, until translucent.
  • Stir in tomatoes, salt, pepper, and basil. Simmer for 15 minutes, stirring occasionally. Remove basil sprigs and set sauce aside.
  • In a small bowl, stir together breadcrumbs and milk and set aside. In a large bowl, whisk together egg, parmesan, salt and pepper.
  • Stir in ground beef, onions, and wet breadcrumbs. Combine well, but do not over-mix.
  • With oiled hands, roll the meat into golf-sized balls.
  • Heat a skillet with a drizzle of olive oil. Brown meatballs on all sides, then remove from pan.
  • Preheat oven to 350ºF (180º C).
  • Lay out a lasagna noodle horizontally on a cutting board. Spread a tablespoon of ricotta onto the noodle. Lay a mozzarella slice on one end of the noodle and place a meatball on top of the cheese.
  • Roll up the noodle with the meatball and cheese inside. Place meatball bomb into the baking dish, with the meatball showing. Repeat with the rest of the meatballs and noodles.
  • Ladle approximately ⅔rds of the marinara sauce into a 9x13-inch (23x33-cm) baking dish. Place the meatball rolls on top of the marinara sauce.
  • Bake dish for 25 minutes, until top is lightly browned and meatballs are cooked through completely.
  • Remove from oven, garnish with parsley and serve with reserved marinara on the side.
  • Enjoy!
