ITALIAN FENNEL SAUSAGE RECIPE (BAKED ITALIAN SAUSAGE)

Don't believe that the Italian fennel sausage recipe is terribly complicated. It's so easy! And you'll have the best baked Italian sausage

4 lbs (2 kg) minced pork (the more fat in it, the better)
2 lbs (1 kg) chicken fillet (cut into small pieces)
sausage casing (I always use natural hog casings but you can also choose the synthetic collagen ones)
2 tbsp mustard (paste, not seeds or powder)
1 cup + 1 Tbsp (250 ml) cold water
4 tsp salt (the amount of salt can be changed depending on your taste)
½ tsp black pepper
1 tsp your favorite meat seasoning (optional), I always use a salt-free one
2 tbsp dried fennel seeds

Steps:

  • Cut chicken fillet into small pieces
  • Mix minced pork and chicken fillet with seasonings, salt, pepper, dried fennel seeds, and mustard.
  • Add water too
  • Mix everything well by hand, cover, and leave in the fridge to marinate overnight
  • The next day fill the casings with the meat and spices stuffing (I use a hand meat grinder that has a sausage stuffer attachment. Tie the sausages with threads).

Meat Lover's: Bacon, Salami, Fennel Sausage, Guanciale, Tomato, and Mozzarella image

Pellicano offers a meat lover's pizza, so I felt I had to offer one, too. Our version should be called a "pork lover's pizza" because all four of the meats we put on it-fennel sausage, salami, guanciale, and bacon-are pork.

Yield makes 1 pizza (serves 1)

Number Of Ingredients 21

1 round of Nancy's Pizza Dough (page 126)
1 tablespoon extra-virgin olive oil
Kosher salt
1/4 cup Passata di Pomodoro (page 25) or tomato sauce
2 ounces low-moisture mozzarella, cut into 1/2-inch cubes
2 ounces Fennel Sausage (recipe follows)
2 thick slices applewood-smoked bacon
5 thin slices salami
1/4 ounce thinly sliced guanciale or pancetta
3 tablespoons fennel seeds
4 pounds boneless pork shoulder
1 pound pork fatback
3 tablespoons finely chopped garlic (about 10 large cloves)
2 tablespoons kosher salt
2 tablespoons sugar
2 tablespoons freshly ground black pepper
2 tablespoons hot paprika
1 tablespoon fennel pollen (see page 19)
1/4 cup red wine vinegar
3/4 cup ice water
(makes 5 pounds)

Steps:

  • Prepare and stretch the dough and preheat the oven according to the instructions given in "Nancy's Scuola di Pizza" (page 128).
  • Brush the rim of the dough with olive oil and season the entire surface with salt. Ladle or spoon the sauce onto the center of the dough and use the back of the ladle or spoon in a circular motion to spread the sauce over the surface of the dough, leaving a 1-inch rim without any sauce. Scatter the cheese on the pizza. Break the sausage into 1/2-inch pieces and scatter them over the pizza. Cut the bacon slices in half crosswise and rumple one half onto each quadrant of the pizza and scatter the salami slices and guanciale slices over the pizza. Slide the pizza into the oven and bake until the cheese is melted and the crust is golden brown and crispy, 8 to 12 minutes. Remove the pizza from the oven, cut it into quarters, making sure that each slice of pizza gets a piece of bacon, and serve.
  • Toast the fennel seeds in a small skillet over high heat, shaking the skillet to keep the seeds from burning, until they are fragrant, about 1 minute. Pour the seeds onto a plate and set aside to cool to room temperature.
  • Cut the pork shoulder and fatback into 1-inch cubes and put the cubes in a large bowl. In a small bowl, combine the garlic, salt, sugar, pepper, paprika, fennel pollen, and toasted fennel seeds. Stir the seasonings together and sprinkle them over the pork and fatback. Toss to coat the meat with the seasonings, cover the bowl tightly with plastic wrap, and refrigerate for at least 24 hours and up to two days. (If you are in a hurry, you can put the meat in the freezer until it is ice cold, but not frozen.)
  • Fit a meat grinder with the largest die and have the bowl of a standing mixer handy. Remove the meat from the refrigerator (or freezer) and pass it through the grinder, catching the gound meat into the mixer bowl.
  • Fit the standing mixer with the paddle attachment. Combine the vinegar and ice water. Put the bowl with the ground meat in it on the standing mixer and mix them on low speed, gradually adding the vinegar and water until the meat is slightly sticky; you may not use all of the liquid. Use the sausage according to your recipe, or transfer it to an airtight container or several containers. Refrigerate the sausage for up to five days or in the freezer for up to three months.

TOMATO-SAUSAGE SAUCE

6 tablespoons olive oil
4 spicy Italian sausages, pierced several times with toothpick
1 large onion, finely chopped
4 large garlic cloves, minced
1 1/2 28-ounce cans crushed tomatoes with added puree
1/4 cup chopped fresh Italian parsley
2 small bay leaves
2 teaspoons dried basil
2 teaspoons dried oregano

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add sausages, onion, and garlic. Sauté until onion begins to color, about 10 minutes. Add crushed tomatoes and herbs and bring sauce to boil. Reduce heat to medium-low, cover, and simmer until flavors blend and sausages are cooked through, stirring often, about 30 minutes. Season with salt and pepper. Slice sausages thinly, if desired.

AMATRICIANA (GUANCIALE, TOMATO, AND PECORINO ROMANO)



Amatriciana (Guanciale, Tomato, and Pecorino Romano) image

For the condimento:
2 1/2 ounces (70 grams) guanciale, cut into thin strips
2-3 tablespoons extra virgin olive oil
1 small onion (any kind), chopped (optional but recommended)
1 pound (450 grams) red, ripe sauce tomatoes, broken into pieces, or canned Italian peeled tomatoes, drained
1 small piece dried chile
salt
To make the dish:
1 pound (450 grams) pasta (see note below)
7 rounded tablespoons (70 grams) grated pecorino (see headnote)

Steps:

  • Put the guanciale and oil in a saucepan. Turn the heat to medium and heat gently so the guanciale renders some fat and starts to brown. Taste a piece to assess how salty it is. Then, when it just begins to become crisp, add the chopped onion (if using) and sauté gently until transparent. Add the tomatoes and chile, then taste for salt (how much you need will depend on the guanciale).
  • Finish cooking the sauce, covered, over low heat. You'll know it's done when the liquid has thickened somewhat and the fat shows on the surface, about 20 minutes.
  • Make-ahead note: This much can be done earlier in the day, but this sauce is not customarily made in advance or kept, except casually as leftovers for the next day.
  • Bring 5 quarts (5 liters) of water to a boil in an 8-quart (8-liter) pot over high heat. Add 3 tablespoons kosher salt, then add the pasta and cook, stirring occasionally, until al dente.
  • Warm a serving bowl or platter in a low oven. If the oven is not practical, warm the bowl just before use with hot water, even a ladleful of the pasta cooking water.
  • Drain the pasta and put it in the warmed serving bowl. Toss it first with the grated cheese, then with the sauce. Serve immediately.

ITALIAN FENNEL SAUSAGE

Make this simple fennel-scented sausage to toss into pasta or onto pizza. Par-cook large crumbles to fold into Thanksgiving stuffing or a pot of soup. Or fry up patties and serve alongside crusty bread and a bowl of tender white beans doused generously in olive oil. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless sausage. Twenty percent by weight is a good ratio, though 25 doesn't hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon.

2 teaspoons Diamond Crystal kosher salt or 1 teaspoon fine sea salt
1 1/2 teaspoons coarsely ground fennel seed
1/2 to 1 tablespoon red-pepper flakes
1 pound ground pork (20 to 25 percent fat by weight)
1 teaspoon pounded or very finely grated garlic
1 teaspoon dry white wine or vermouth
Extra-virgin olive oil

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • In a large bowl, combine salt, fennel seed and red-pepper flakes. Add pork to the spice mixture along with the garlic, and wine. Using your hands, mix thoroughly for 1 full minute, until the pork begins to appear tacky and sticks to the palm of your hand.
  • Heat a cast-iron pan over medium heat. Use a heaping tablespoon of pork mixture to make a small, thin sausage patty. Add a teaspoon or so of olive oil, and cook the patty for 2 to 3 minutes on each side, or until cooked through. Taste, and if needed, add salt or any other seasonings to the uncooked sausage mixture and mix to combine.
  • Divide and form the remaining sausage into 8 2 1/2-inch patties, placing them on the prepared baking sheet as you go. Cover, and refrigerate for 30 minutes to allow the flavors to come together. (Patties can be made ahead and covered and refrigerated or frozen at this point until ready to use.)
  • To cook, wipe out cast-iron pan, and return to medium heat. Add 1 tablespoon olive oil. When it shimmers, add patties in a single layer, leaving space between them. Cook 3 to 4 minutes per side, or until browned on the surface and just cooked through.
  • Drain sausages on paper towels, and serve hot.
