MEAT LOAF
Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

- Preheat oven to 350°. Tear bread into 2-inch pieces; place in a blender. Cover and pulse to form coarse crumbs; transfer to a large bowl. Stir in egg, milk, cheese, onion, carrot, salt and pepper. Add beef; mix lightly but thoroughly. Transfer to a greased 9x5-in. loaf pan. , In a small bowl, mix glaze ingredients; spread over loaf. Bake 60-75 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Freeze option: Bake meat loaf without glaze. Securely wrap cooled meat loaf in foil, then freeze. To use, partially thaw meat loaf in refrigerator overnight. Prepare and spread glaze over top; reheat on a greased shallow baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

- Mix ground beef, salt, pepper, onion, bell pepper, egg, tomato's and oats well and place in a baking dish. Shape into a loaf.

MEATLOAF OL'E
This is a spicy meatloaf that enjoys additional nutrition of zucchini and may just win over those who are on the fence about regular meatloaf. The zucchini helps to keep this meatloaf moist and from packing too tightly. The cook time does not include the rest time. *Must mince onion and chili pepper as they are not pre-cooked.

- Preheat oven to 350°F.
- Combine meat, eggs, cornbread, poblano, onion, zucchini, bouillon, cumin, garlic, paprika, oregano, and chili powder.
- Shape into a loaf with hands, place on baking sheet and top with 1/2 of enchilada sauce; bake 30 minutes.
- Top with remaining enchilada sauce and 15 minutes more than top with cheddar cheese and bake an additional 15 minutes.
- Allow to rest 5 to 10 minutes before serving.
EASY OLD FASHIONED MEATLOAF
No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

OLE' CROCK POT ENCHILADA MEATLOAF
I have been making this for more years than I can count! It's a wonderful meat loaf that taste's exactly like beef enchiladas.! There are so many great tasting taco sauces and salsas on the market now that you can find one to suit your family's taste.This recipe is from my very first Crock Pot recipe book. It's old and tattered, but the recipes aren't! I use Nacho Dorito Chips,and La Victoria medium hot taco sauce. As a side note,I must say that my hubby isn't the most artful person, therefor, please don't hold the topping on the meatloaf against him! lol

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- Bake at 350 degrees F (175 degrees C) for 1 hour.

- Preheat oven to 350 degrees F.
- In a large bowl, beat the eggs and add 1/2 cup salsa and the finely crushed corn chips. Add ground beef; mix well. Pat mixture into a loaf pan.
- Bake meatloaf in a preheated oven for 55-60 minutes or until 160 degrees. Drain fat and cool for approx. 10 minutes.
- Transfer meatloaf to a platter. Spread the remaining 1/4 cup salsa over meat loaf and top with cheddar cheese if desired. Sprinkle top with coarsely chopped corn chips and serve with sour cream, if desired.
