SOUTHERN SWEET POTATO PIE

Steps:

• Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. In a small bowl, combine sugar, flour, nutmeg and salt. In a large bowl, beat potatoes, eggs, butter, corn syrup and flour mixture. Gradually stir in milk. Pour into crust., Bake for 55-60 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

Steps:

• 1. In large stockpot, saute onion and corn until tender. 2. Stir in flour and salt until blended. 3. Gradually add milk, bring to a boil- cook and stir about 10 minutes until thick and bubbly. 4. Reduce heat. Add potatoes, parsley and paprika. 5. Heat until potatoes are tender.

Steps:

• Preheat the oven to 350 degrees F (175 degrees C).
• Bring a pot of water to a boil; add sweet potatoes and boil until soft, 20 to 30 minutes. Remove and discard skin; mash potatoes in a bowl until lumps are removed.
• Mix 1 cup mashed sweet potatoes, sugar, condensed milk, butter, eggs, flour, cinnamon, nutmeg, allspice, and cloves together in a bowl. Divide batter evenly between the 2 pie crusts.
• Bake in the preheated oven until firm, about 45 minutes.

FRENCH POTATO SALAD (INA GARTEN) RECIPE

Steps:

• Cook potatoes in large pot of boiling salted water until just tender, about 20-25 minutes. Drain. Return potatoes to pot. Place pot over low heat until liquid from potatoes vaporates, about 2 minutes. Cut warm potatoes into quarters. Toss with wine and chicken stock. In bowl, mix vinegar, mustard, salt & pepper, then slowly whisk in olive oil. Add mixture to potatoes. Add scallions, dill, parsley and basil. Let stand at at room temperature. Toss again and serve.

• Preheat oven to 425 degrees F. Mix the first 8 ingredients to taste before adding the eggs. Bake at 425 for the first 15 minutes reduce heat to 350 and for 45 minute. Mattie suggests serving with vanilla ice cream or a do-lop of whipped cream.
