SEARED MONKFISH WITH BALSAMIC AND SUN-DRIED TOMATOES



Seared Monkfish with Balsamic and Sun-Dried Tomatoes image

I was recently introduced to monkfish (sold as "monkfish tail" in fish markets) and it has become a new favorite of mine. It's often called "poor man's lobster" because its firm flesh and delicate, slightly sweet flavor are similar to lobster. Served with a balsamic, garlic, and sun-dried tomato topping, this recipe comes together in a snap.

⅓ cup sun-dried tomatoes with Italian herbs, drained and chopped
3 tablespoons olive oil, divided
2 tablespoons balsamic vinegar
1 tablespoon sun-dried tomato oil
2 cloves garlic, minced
½ teaspoon white sugar
2 (12 ounce) monkfish tail fillets
1 pinch salt and ground black pepper to taste
1 tablespoon butter
2 tablespoons minced fresh parsley

Steps:

  • Combine sun-dried tomatoes, 2 tablespoons olive oil, balsamic vinegar, tomato oil, garlic, and sugar in a small bowl. Toss to coat and set aside.
  • Use a sharp knife to cut the purple translucent membrane away from each fillet. Cut each fillet crosswise into 3 to 4 pieces. Season with salt and pepper.
  • Heat 1 tablespoon olive oil and butter in a large skillet over medium-high heat. Sear monkfish until golden brown, about 3 minutes. Flip and continue cooking until opaque throughout, 2 to 3 minutes more. Reduce heat to low, remove fish to a plate, and cover with aluminum foil to keep warm.
  • Pour sun-dried tomato mixture into the skillet and quickly stir around the pan until just warmed, about 20 seconds. Spoon topping over fish and garnish with parsley.

2 tablespoons olive oil
12 pearl onions, peeled
16 small mushrooms
4 tablespoons finely chopped shallots
1 bay leaf
4 sprigs fresh thyme or 1/2 teaspoon dried
1 tablespoon finely chopped garlic
2 tablespoons flour
2 cups red wine like Cotes du Rhone or cabernet sauvignon
1 cup fresh fish broth or bottled clam juice
2 cloves
Salt and freshly ground pepper to taste
1 3/4 pounds monkfish fillets, cut into 1/2-inch cubes
2 tablespoons butter
4 tablespoons finely chopped parsley

Steps:

  • Heat oil in a nonstick saucepan over medium-high heat. Add onions, mushrooms, shallots, bay leaf, thyme sprigs and garlic. Cook, stirring, until wilted, about 3 minutes.
  • Add flour and blend well. Add wine, fish broth, cloves, salt and pepper. Blend well with a wire whisk. Bring to a boil and simmer 10 minutes.
  • Add fish cubes, bring to a simmer and cook about 4 minutes or until done. Add butter and blend well. Remove thyme sprigs and bay leaf. Sprinkle with parsley and serve hot with croutons (see recipe) on the side.

3 ounces tiny pearl onions
1 1/2 pounds monkfish
2 tablespoons fine, dry breadcrumbs
2 ounces slab bacon, diced
1/2 cup finely chopped red onion
1 tablespoon minced fresh tarragon
1 cup dry red wine, or more, to taste
1/2 cup fish stock
1 tablespoon tomato paste
Salt and freshly ground black pepper
1 tablespoon soft unsalted butter (optional)
Sprigs of fresh tarragon for garnish

Steps:

  • Bring a small pot of water to a boil, add the onions and cook for two minutes. Drain the onions and run under cold water. Peel the onions and set aside.
  • Cut the monkfish into slices about three-fourths of an inch thick. Pat them dry on a paper towel and lightly dust them on one side with the breadcrumbs.
  • Select a heavy skillet large enough to hold the monkfish in a single layer. Place the bacon in the skillet and cook the bacon over medium heat, stirring it around, until it is crisp and golden brown. Remove the bacon from the skillet to a bowl, draining as much fat as possible back into the skillet.
  • Heat the bacon fat over medium heat, add the pearl onions and toss them briefly in the bacon fat until they begin to turn golden. Remove them from the skillet and add them to the bowl with the cooked bacon.
  • Then add the monkfish to the skillet crumb-side down and sear the fish on one side only over medium-high heat, until it is browned. Remove the fish from the skillet and set it aside on a platter, covered loosely with a sheet of foil or waxed paper.
  • Place the red onion in the skillet and cook it over low heat until it is soft but not brown. Stir in the tarragon, wine and fish stock. Increase the heat and cook the sauce until it is reduced by half. Stir in the tomato paste and cook a few minutes longer, until the sauce has thickened to the consistency of heavy cream. Season to taste with salt and pepper. The recipe can be prepared to this point up to two hours in advance. It will then require only five minutes further cooking before serving. If you are preparing the recipe in advance, cover the pan and set it aside.
  • Just before serving, reheat the sauce over medium heat and adjust the seasonings if necessary. You may want to add a tablespoon or two of additional wine to bring up the flavor. If desired, you can enrich the sauce by swirling in the soft butter. Add the bacon and pearl onions to the sauce, along with any juices in the bowl. Then carefully place the slices of monkfish in the skillet in a single layer, browned side up. Cook about five minutes, until the monkfish is just cooked through.
  • Divide the monkfish slices among four warmed dinner plates. Carefully spoon some of the sauce with the pearl onions and bacon around, not over, the fish. Garnish each serving with a sprig of tarragon. Serve with noodles and mushrooms.

MONKFISH WITH MASHED POTATOES AND THYME



Monkfish With Mashed Potatoes and Thyme image

1 1/2 pounds Yukon Gold or other all-purpose potatoes, peeled and cut into chunks
Salt and pepper
2 tablespoons butter
1/4 cup milk, or as needed
Several sprigs fresh thyme
3 tablespoons extra virgin olive oil
3 or 4 cloves crushed garlic
1 1/2 pounds monkfish, in 1 or 2 pieces, trimmed

Steps:

  • Preheat oven to 450 degrees. Put potatoes in a saucepan with water to cover. Add a large pinch of salt. Cook potatoes until quite tender, about 15 minutes. Drain and put through a ricer or food mill, or mash with a fork or potato masher. Add butter, milk, a few thyme leaves, and salt and pepper to taste. Keep warm in the oven or reheat in a microwave when ready to serve.
  • While potatoes cook, or immediately after they are done, put an ovenproof skillet large enough to accommodate monkfish over medium-high heat. After a minute, add the oil, garlic, a couple of thyme sprigs and then fillets. Sprinkle with salt and pepper. Cook for about a minute, then without turning, transfer to oven.
  • Roast until monkfish is cooked through, 8 to 12 minutes depending on its thickness. (It will be tender but still firm when done; a thin-bladed knife will meet consistent light resistance when inserted in its center.) Reheat potatoes if necessary, then serve monkfish browned side up on top of them, garnished with a little more thyme and pan juices.

  • Heat 1 tablespoon of the olive oil in a large heavy pot over a medium high flame. Sauté half the garlic until it starts to color. Add the onion and sauté until it softens and takes on a golden color. Add half cup of the lemon mixture to deglaze the pan. Add the tomatoes and cook them down until they start to get an orangey color. Add the saffron. Cook for a minute.
  • Add the potatoes and enough stock or water to just cover. Bring to a boil. Lower the heat to medium-low, cover and simmer over a low heat until the potatoes are just tender, about 20 minutes. Taste for salt. Add the chunks of monkfish. Cook for 3-5 minutes.
  • Stir the sea scallops and cod into the stew. Cook 1 minute then add the shrimps. Cook until the shrimps turn pink, about 1 minute.
