WHITE 'N' SWEET MASHED POTATOES



White 'n' Sweet Mashed Potatoes image

Sweet potatoes are a staple of Southern cooking here in North Carolina. Combined with russet potatoes, this recipe makes simple mashed potatoes a very special treat.

Number Of Ingredients 7

1-1/2 pounds russet potatoes (about 4 medium), peeled and cubed
1-1/2 pounds sweet potatoes (about 4 medium), peeled and cubed
1 cup milk, warmed
1/4 cup butter, cubed
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Place russet potatoes and sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Drain., In a large bowl, mash the potatoes with the milk, butter, salt, cinnamon and nutmeg until potatoes reach desired consistency.

4 large white potatoes, peeled, chopped and cooked
2 large sweet potatoes, peeled, chopped and cooked
8 ounces chive & onion cream cheese, divided
1/2 cup sour cream, divided
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup parmesan cheese, shredded, divided
1/4 cup cheddar cheese, shredded, divided

Steps:

  • Preheat oven to 375°F Place white and sweet potatoes in separate bowls.
  • Add half each of the cream cheese and sour cream to the potatoes in each bowl; season with salt and pepper.
  • Mash with potato masher or fork until creamy.
  • Stir half of the parmesan into the bowl of white potato mix.
  • Mix half of the cheddar cheese into the bowl of sweet potatoes.
  • Alternately layer half each of the white potato mixture and sweet potato mixture in a 2 qt clear glass casserole dish.
  • Repeat layers.
  • Bake 15 minutes.
  • Sprinkle with remaining cheeses and continue baking 5 minutes or until cheeses are melted.

⅓ cup butter
4 eggs, beaten
2 cups mashed sweet potatoes
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup milk
½ cup orange juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix sugar and butter together in a bowl using an electric mixer. Add eggs and beat to combine. Mix in sweet potatoes. Beat in salt, cinnamon, and nutmeg. Pour in milk and orange juice; mix very carefully until combined. Pour into a casserole dish.
  • Bake in the preheated oven until firm, about 45 minutes.

500 g potatoes
500 g sweet potatoes
450 -500 ml milk
1 teaspoon cardamom
1 teaspoon cinnamon
1/2 teaspoon black pepper
1 teaspoon salt
1 pinch chili powder
1 pinch cayenne pepper

Steps:

  • Preheat oven to 175°C Grease an oven-proof dish.
  • Cook peeled potatoes and sweet potatoes until done. Drain and mash. Add hot milk, mix well.
  • Add the spices (you may want to use scant teaspoons first and taste as you go along!).
  • Pour mixture into the prepared dish and bake for 1 - 1 1/2 hours.

For the sweet potatoes:
5 pounds red-skinned sweet potatoes (yams), peeled, cut into 1½-inch pieces
4 large eggs
3 tablespoons pure maple syrup
2 tablespoons vanilla extract
1 tablespoon fresh lemon juice
2 teaspoons salt

Steps:

  • Preheat oven to 350°F. Mix sugar, pecans and butter in small bowl. Cover and chill until ready to use. (Can be made up to 2 days ahead. Keep refrigerated.)
  • Butter 13x9x2-inch glass baking dish. Cook sweet potatoes in large pot of boiling salted water until very tender, about 12 minutes. Drain. Let stand in colander 15 minutes. Purée sweet potatoes in processor.
  • Beat eggs, syrup, vanilla, lemon juice and salt in large bowl. Mix in puréed sweet potatoes. Transfer sweet potato mixture to prepared dish. Sprinkle pecan topping evenly over mixture.
  • Bake until sweet potato mixture is set and topping bubbles, about 1 hour. Let stand 15 minutes and serve.
