LOADED MASHED POTATO CAKES



Loaded Mashed Potato Cakes image

These Leftover Mashed Potato Cakes make an amazing side dish or light dinner or lunch! These are the perfect way to enjoy leftover potatoes and the flavor combinations are endless!

Number Of Ingredients 12

2 cups cold mashed potatoes
1 cup shredded cheese (such as cheddar)
½ cup flour
6 strips bacon
1 medium onion (chopped (or ¼ cup green onion))
2 cloves garlic (chopped)
1 teaspoon salt
½ teaspoon pepper
2 tablespoon fresh basil (chopped)
2 tablespoon fresh parsley (chopped)
2 eggs
4 tablespoon butter or margarine

Steps:

  • Fry the bacon until crispy and drain on a paper towel until cool. Crumble into small bits. Place the bacon bits into a large bowl.
  • Pour off all but 2 tbsp of bacon grease from the frying pan and cook the garlic, and white onion if using, over medium heat until translucent. (If using green onion, no need to precook).
  • Add to the bacon bits along with remaining ingredients (except butter/margarine) and blend well with a spoon or your hands (it'll be sticky).
  • Wash and dry your frying pan, then melt 1 tbsp of butter or margarine in it over medium heat.
  • Scoop up about ¼ of a cup of the potato mixture and form it into a ball. Place it in the hot pan, flattening it out until it's about ½ - ¾″ thick.
  • Fry for about 3 minutes on each side, until they are lightly golden brown.
  • For best results, serve immediately, while hot and crispy.
  • Top with green onions, sour cream or ketchup.

2 cups mashed potatoes
1 cup all-purpose flour
1 onion, diced
1 egg
½ teaspoon ground black pepper
½ teaspoon salt
½ cup vegetable oil, or as needed

Steps:

  • Mix mashed potatoes, flour, onion, egg, black pepper, and salt together in a bowl until batter consistency.
  • Heat vegetable oil in a skillet over medium heat. Drop 4-inch circles of batter into hot oil. Cook until golden brown, about 5 minutes per side. Remove with a slotted spoon and drain on paper towels. Repeat with remaining batter.

Mashed Potato and Butter Bean Cakes with Green Onions image

Number Of Ingredients 7

1 1/4 pounds russet potatoes, peeled, cut into 3/4-inch cubes
1/2 cup whole milk
2 tablespoons (1/4 stick) butter
1 15-ounce can butter beans, drained, coarsely mashed
4 green onions, chopped
1 1/2 cups panko (Japanese breadcrumbs) or fresh breadcrumbs
Extra-virgin olive oil (for frying)

Steps:

  • Cook potatoes in large pot of boiling salted water until tender, about 10 minutes. Drain and return to pot; stir over medium heat until dry, about 1 minute. Add milk and butter; mash. Mix in mashed beans and green onions. Season with salt and pepper; cool 15 minutes.
  • Place panko in large bowl. Drop 1/4 cupfuls potato mixture into panko; turn to coat. Coat bottom of 2 large nonstick skillets with oil; heat over medium heat. Divide potato cakes between skillets. Using spatula, flatten each potato cake to 2-inch round. Fry until golden, about 5 minutes per side.

This special version of mashed potatoes is called "champ" by the Irish- decadent is what I'd call these! These go great with Recipe #54616 and is originally from a 1995 Bon Appetit.

2 lbs russet potatoes, peeled and quartered
1 cup milk
1 cup packed chopped green onion, bottoms and tops
1/2 cup unsalted butter, melted

Steps:

  • Cook potatoes in a large pot of boiling salted water until tender; drain and return to pot.
  • Cook over low heat until any water from potatoes evaporates.
  • Place a kitchen towel across the top of pot, cover pot with lid and remove from heat; let stand 10 minutes.
  • Mash hot potatoes in pot; set aside.
  • Butter large serving bowl.
  • Bring milk to simmer in medium saucepan.
  • Add chopped green onion and simmer 5 minutes.
  • Add milk mixture and half of melted butter to mashed potatoes and mix well; season to taste with salt and pepper.
  • Spoon potatoes into prepared serving bowl; using back of spoon, make a well in center of potatoes.
  • Pour remaining butter into well and serve.

3 cups mashed potatoes (with added milk and butter)
1 cup biscuit/baking mix
1 cup cooked stuffing
2 large eggs, lightly beaten
1 cup French-fried onions, crushed
3/4 cup dry bread crumbs

Steps:

  • In a large bowl, mix potatoes, baking mix, stuffing and eggs until blended. Refrigerate, covered, 30 minutes., Preheat oven to 400°. In a shallow bowl, mix onions and bread crumbs. Shape 1/4 cupfuls of the potato mixture into 3/4-in.-thick patties. Dip patties in crumb mixture, patting to help coating adhere., Transfer to two greased 15x10x1-in. baking pans. Bake 35-40 minutes or until golden brown, turning once. Let stand 5 minutes before serving.

Mash until almost smooth. Season to taste with salt and pepper and serve.
