Maryland Crab Cakes (Baked or Fried) image

These classic Maryland crab cakes are made with sweet, juicy chunks of lump crab with VERY minimal filler - just enough to hold them together while it pan-fries in delicious butter.

8 ounces lump crab meat ((or jumbo lump))
2 tablespoons panko bread crumbs
1 egg
1-2 teaspoons old bay seasoning (adjust based on preference)
2 tablespoons mayonnaise
1/2 teaspoon Worcestershire sauce
2 tablespoons unsalted butter (for pan-frying)

Steps:

  • Combine all the ingredients (except butter) together in a bowl. Use a rubber spatula and fold ingredients together carefully, making sure not to break up the pieces of lump crab.
  • Form the mixture into 4 equally sized balls and place on a plate. Chill in the fridge for 1 hour. This will help to make sure your crab cakes don't fall apart.
  • Heat the butter in skillet over medium heat. Add the crab cakes and cook for 3-5 minutes until golden brown on the bottom.
  • Use a spatula to flip the crab cakes and lightly press down on each one to form into a cake instead of a ball. Cook for 2-4 minutes, until golden brown.
  • Remove the crab cakes and sprinkle with minced green onions (optional) and serve with crab cake sauce.

If the Maryland Flag weren't so cool, we'd probably fly a picture of a crab cake over the statehouse. Once you've had your first real one made with handpicked Maryland jumbo lump crab, you'll know why.

1 pound jumbo lump, handpicked Maryland crabmeat
½ cup breadcrumbs
1 egg, beaten
5 tbsp mayonnaise
1 tbsp finely chopped parsley
1 tbsp Worcestershire sauce
1 tsp prepared mustard
1 tbsp Old Bay Seasoning or J.O. Crab Seasoning

Steps:

  • Combine breadcrumbs, egg, mayonnaise, parsley, Worcestershire sauce, mustard, and crab seasoning and mix well.
  • Pour mixture over crabmeat and fold in taking care not to break up the lumps.
  • Form into six cakes and pat until just firm, then deep fry in 350°F corn oil 2-3 minutes until golden brown.

Crab Cakes:
1 pound lump crabmeat (preferably jumbo lump) picked over to remove cartilage and shell fragments
4 medium scallions, green part only, minced (about 1/2 cup)
1 tbsp fresh parsley leaves or cilantro, dill, or basil, chopped
1.5 tsp Old Bay seasoning
2 tbsp dry bread crumbs, or up to 1/4 cup
1/4 cup mayonnaise
1 large egg
1/4 cup unbleached all purpose flour
1/4 cups vegetable oil
Creamy Chipotle Chile Sauce:
1/4 cup mayonnaise
1/4 cup sour cream
2 tsp canned chipotle chile in adobo sauce (minced)
1 small clove garlic, minced or pressed through a garlic press
2 tsp minced fresh cilantro leaves
1 tsp lime juice from 1 lime

Steps:

  • Gently mix crabmeat, scallions, herb, old bay, bread crumbs, and mayonnaise in medium bowl, being carebul not to break up crab lumps. Season with salt and white pepper to taste. Carefully fold in egg with rubber spatula until mixture just clings together. Divide crab mixture into four portions and shape each into a fat, round cake, about 3 inches across and 1.5 inches high. Arrange on baking sheet lined with waxed paper. Cover with plastic wrap and chill at least 30 minutes (Can refrigerate up to 24 hours) Put flour on plate or in pie tin. Lightly dredge crab cakes. Heat oil in large, preferably nonstick skillet over medium-high heat until hot but not smoking. Gently lay chilled crab cakes in skillet. Pan-fry until outsides are cresp an dbrowned, 4 to 5 minutes per side. Serve hot, with or without related sauces. For sauce, mix all of the ingredients in a small bowl. Cover and refrigerate until the flavors blend, about 30 minutes. The cause can be refrigerated for several days.
