Steps:
- Cook macaroni according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , Add the tomatoes, tomato juice, beans, garlic, chili powder, salt, oregano and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Drain macaroni; add to beef mixture. Stir in pickle relish; heat through.

- In a Dutch oven, cook beef, onion and peppers over medium-high heat until beef is no longer pink and vegetables are tender, breaking up beef into crumbles, 8-10 minutes; drain. Transfer to a 7-qt. slow cooker. Stir in tomatoes, beans, chili powder and cumin. Cook, covered, on low until flavors are blended, 5-6 hours., Meanwhile, cook macaroni according to package directions; drain. Add to slow cooker. Stir in cheese until melted. If desired, serve with sour cream and additional cheese.

MARVELOUS MACARONI CHILI

Steps:
- Cook macaroni until al dente, about 6 minutes, and drain.
- In a large saucepan, heat oil and add the onion, bell pepper, celery, and garlic and cook for about 7 minutes, stirring occasionally.
- Stir in all the remaining ingredients and bring to a simmer.
- Reduce heat to medium-low and cook for 15 minutes.
- Add the macaroni and cook for 5 minutes over low heat.
- Remove from heat and let stand 5-10 minutes before serving.
- Serve with warm cornbread if desired.

MOM'S MARVELOUS MACARONI SALAD
This is the best macaroni salad. It makes a huge batch, so it's great for a potluck or barbeque party, or for sharing with friends. Plan to make it a day ahead of time...it has to "percolate" overnight to blend flavors.

- Mix milk, mayo, sugar and vinegar.
- Add to cooled pasta.
- Add remaining ingredients.
- Cover and refrigerate overnight.
- Don't be disturbed by the strong vinegar aroma. This will disappear overnight.

BAKED CHILI MAC
In searching what to make for dinner tonight, I took out a package of ground meat (buffalo, specifically) from the freezer, and found a box of elbow macaroni. Looked like Chili Mac makings to me! :) I had never made Chili Mac before (I just remember having it in the cafeteria when in grade school), so I took a look at what was here on Zaar... and was surprised not find many recipes for it. I put together a recipe out of what I found here and elsewhere online, but the below meat chili mac was somewhat adapted from Miss Annie's vegetarian Marvelous Macaroni Chili. Very tasty, very flexible! :) This is a Pantry Challenge recipe.

- Preheat oven to 350 degrees F.
- Cook the pasta according to package directions until al dente (if using regular macaroni this will take about 6 to 7 minutes, if using lower-carb versions it'll take about 15 minutes); drain and set aside.
- While pasta is cooking, in a large sauté pan cook the ground meat, onion, and garlic until meat is browned, about 5 to 7 minutes; drain fat if desired or necessary.
- Add the tomatoes, tomato paste, mild green chiles, beans, chili powder, ancho, oregano, cumin, pepper, salt, and tabasco (to taste) and simmer for 5 minutes.
- Add the cooked macaroni and stir well to incorporate.
- Pour mixture into a lightly pan-sprayed large casserole dish and sprinkle with the cheddar cheese.
- Bake at 350 degrees F for 20 to 30 minutes or until the cheese is golden and bubbly.
- Serve with a bit of sour cream for topping and veggies.
MARVELOUS MACARONI AND CHEESE
This is the most awesome Macaroni & Cheese that we have ever eaten. It is a family favorite and we have it once a week. All four of my kids request it often, and my husband thinks it's incredible. Hope you enjoy this comfort food.

Steps:
- Preheat oven to 450 degrees.
- Cook macaroni according to package instructions.
- Drain, rinse and set aside.
- In same pot over low heat, melt the butter.
- Add flour, salt and pepper and whisk into melted butter until smooth.
- Simmer and stir until mixture thickens into a paste and is golden.
- Slowly add milk and whisk into butter mixture until smooth.
- Bring to boil and then simmer until thickened.
- There is no way to tell you how thick, except to say it should be thicker than gravy but not as thick as pudding.
- If you have made basic white sauce, you will know when it is thick enough.
- Remove pot from heat.
- Add cheddar cheese and stir until cheese starts to melt.
- Add macaroni and stir until coated.
- Pour into a 9 x 12 baking dish or 2 quart casserole.
- As an extra indulgence, you can sprinkle 4 oz more cheese on top.
- I only do this if I happen to buy a 12 oz bag or block instead of 8 oz.
- Bake about 20- 30 minutes, when you see top getting a bit crispy and brown.
CHILI MACARONI
A easy and delicious dish. I make it often. A friend of mine, with 4 boys, makes it once a week. I hope you like it! I have also made it from all shelf stable ingredients, except the cheese. Just use dehydrated onions and canned beef.

- Drain oil and return to the skillet.
- Add kidney beans, tomato sauce, water, chili powder and salt.
- Cover and simmer for 15-20 minutes.
- Add cooked macaroni and stir.
- Sprinkle cheddar cheese on top, cover and simmer just until the cheese melts.
