MARK BITTMAN'S TOMATO-ONION SALSA



Mark Bittman's Tomato-Onion Salsa image

This is a very easy mild salsa recipe from Mark Bittman's excellent cookbook, "How to Cook Everything". This simple recipe is good as is but is also well suited to adding it whatever flavours you enjoy. (You can add some chopped cilantro, lime juice instead of lemon, corn kernels, chile peppers, etc...) Makes about 2 cups.

Number Of Ingredients 8

1 medium onion, peeled
2 medium tomatoes, cored, peeled and seeded
1 teaspoon paprika or 1/4-1/2 teaspoon cayenne
1 garlic clove, peeled
1 tablespoon any good vinegar, plus more to taste
1 teaspoon salt (to taste)
1 teaspoon sugar
1 tablespoon fresh lemon juice (to taste)

Steps:

  • Quarter the onion and tomatoes and whiz them in a food processor or blender with all the other ingredients except the lemon juice.
  • Taste and add more salt and paprika or cayenne if needed along with the lemon juice or vinegar to taste. Serve or refrigerate for up to a day or two before serving.

FRITTATA WITH TOMATOES, ONIONS AND BASIL



Frittata with Tomatoes, Onions and Basil image

6 medium onions, thinly sliced
6 tablespoons olive oil
8 ounces plum tomatoes, peeled
Salt
Black pepper, freshly ground
6 eggs
2 tablespoons freshly grated Parmesan
2 ounces butter
Handful fresh basil

Steps:

  • Sweat the onions in the oil until just browning. Chop the tomatoes and add to the onions with salt to taste. Cook for 10 minutes, stirring occasionally. Press the vegetables to the side of the pan and remove to a bowl with a slotted spoon. Leave to cool.
  • Beat the eggs until well mixed but not frothy. Add the vegetables, cheese, a good quantity of pepper and salt to taste. Tear up the basil leaves, add and stir everything together. Melt the butter in a 12 inch nonstick frying ban until just foaming. Pour in the egg mixture, lower the heat and cook for 15 minutes until the eggs are set but the top is still a bit runny. Then put the pan under the broiler for 30 seconds.
  • Loosen the frittata with a pliable spatula and slide onto a suitable dish. Cut into wedges when cooled. It can be eaten warm with a salad or cold on a hunk of bread.

TOMATO, ONION, AND SERRANO CHILE SALSA

1 1/4 pounds plum tomatoes, cut in half
1/3 cup chopped red onion
3 tablespoons fresh lime juice
2 serrano chiles, coarsely chopped
1 teaspoon salt
Pinch of freshly ground black pepper
1 cup (loosely packed) coarsely chopped fresh cilantro

Steps:

  • Seed and dice 10 tomato halves; transfer to large bowl. Place remaining tomatoes in blender; add onion, lime juice, chiles, salt, and pepper. Blend until smooth. Add cilantro. Pulse just to mix in cilantro. Pour tomato puree into bowl with diced tomatoes. Stir to blend. Season salsa to taste with salt and pepper. (Can be made 4 hours ahead. Cover and refrigerate.)

TOMATO SALSA WITH FRUIT



Tomato Salsa With Fruit image

Number Of Ingredients 7

1 small red onion, finely chopped
2 tablespoons lime juice
1 1/2 cups tomatoes, in 1/4-inch dice
1 habanero chili, or to taste, seeded, stemmed and minced
1/3 cup chopped cilantro (stems are O.K.)
3/4 cup chopped ripe mango, peach, nectarine or pear, in 1/4-inch dice
Salt as needed.

Steps:

  • Soak the chopped onion in the lime juice for 20 minutes while you prepare the other ingredients.
  • Combine the tomatoes, chili, cilantro and fruit. When the onion is ready, stir it in, along with some salt. Add more lime juice if necessary, and serve with duck, chicken, grilled halibut or other fish.

½ cup chopped green bell pepper
1 cup onion, diced
¼ cup minced fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons chopped fresh jalapeno pepper (including seeds)
½ teaspoon ground cumin
½ teaspoon kosher salt
½ teaspoon ground black pepper

Steps:

  • Stir the tomatoes, green bell pepper, onion, cilantro, lime juice, jalapeno pepper, cumin, salt, and pepper in a bowl. Serve.

Number Of Ingredients 4

2 pounds fresh ripe tomatoes, blanched as described below*, or 2 cups canned imported Italian tomatoes, cut up, with their juice
5 tablespoons butter
1 medium onion, peeled and cut in half
Salt

Steps:

  • Put either the prepared fresh tomatoes or the canned ones in a medium saucepan, add the butter, onion and salt and cook uncovered at a very slow but steady simmer for about 45 minutes, or until it is thickened to your liking and the fat floats free from the tomato.
  • Stir from time to time, mashing up large pieces of tomato with the back of a wooden spoon. Taste and correct for salt. Discard the onion before tossing with pasta.

1 cup finely diced sweet white onion, soaked in cold water for 30 minutes and drained
1 cup finely diced firm ripe red tomato
1/2 teaspoon salt
2 serrano chiles, finely chopped
1/2 cup roughly chopped cilantro leaves and tender stems

Steps:

  • Put onion, tomato, salt and chiles in a serving bowl. Mix to combine and let flavor meld for at least 10 minutes. Just before serving, stir in cilantro. Salsa is best if made fresh and used within an hour or two.

My mother-in-law loves Tex-Mex but has an onion allergy. After several attempts, I invented an authentic tasting salsa that derives some of it's smokey flavor from the roasted pepper. I've taken to roasting the peppers in bulk so I can always have some on hand.

1 poblano pepper
3 cloves garlic, peeled
5 ripe tomatoes
1 cup chopped fresh cilantro
½ teaspoon ground cumin
1 teaspoon chili powder
2 tablespoons lime juice

Steps:

  • Preheat the broiler.
  • Place poblano pepper and garlic cloves on a medium baking sheet. Turning pepper frequently, broil at maximum distance from heat until browned, about 15 minutes.
  • In a food processor, place roasted pepper, roasted garlic, tomatoes, cilantro, cumin, chili powder and lime juice. Process using pulse setting until an evenly chunky texture is obtained. Chill until serving.
