These lean little lamb chops from Jill Heatwole of Pittsville, Maryland are packed with the flavors of rosemary, ginger and mustard. Marinating makes them so tender. They're something special for spring.

- In a shallow dish, combine the first 10 ingredients; add lamb chops and turn to coat. Cover and refrigerate for several hours or overnight., Drain and discard marinade and onion. Lightly oil the grill rack. , Grill chops, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).

My family loves this recipe. It is quick and easy, and makes for a tasty weekday supper. I often double the sauce to serve over rice.

- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, thoroughly blend soy sauce, vegetable oil, Worcestershire sauce, lemon juice, brown sugar, and ketchup.
- Place pork chops in a medium baking dish, and spread with 1/2 the sauce.
- Bake pork chops 30 minutes in the preheated oven. Turn, and spread with remaining sauce. Continue baking 30 minutes, or until internal temperature of the chops has reached 145 degrees F (63 degrees C).

- In a large resealable plastic bag, combine the first 10 ingredients; add pork. Seal bag and turn to coat; refrigerate overnight., Drain pork, discarding marinade. Grill, covered, over medium heat, for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. Freeze option: Freeze uncooked pork in bag with marinade. To use, completely thaw in refrigerator. Grill as directed.

MARINATED LAMB CHOPS

- Whisk together the oil, balsamic vinegar, parsley, rosemary, cumin, garlic and 2 tablespoons mint in a medium bowl. Place the lamb into a resealable plastic bag and pour half of the marinade over the lamb. Season with salt and pepper, seal the bag and refrigerate for 1 to 2 hours.
- Add the lemon zest and juice and remaining 6 tablespoons mint to the remaining marinade and whisk to combine. Season with salt and pepper and set aside.
- Heat a large grill pan over medium-high heat until very hot; lightly brush with oil.
- Remove the lamb from the bag, letting the excess marinade drip off (discard the marinade). Season with salt and pepper. Grill the chops, turning once, about 3 minutes per side for medium-rare.
- Serve the chops with the reserved marinade.

- In a small bowl stir together the first 7 ingredients. Put the lamb chops in a sealable plastic bag and pour the marinade over them. Move the chops around in the bag so the marinade coats them well. Marinate for 1 hour.

MARINATED LAMB SHOULDER CHOPS

- Whisk together the olive oil, oregano, dill, mint, garlic, lemon zest and juice, red pepper flakes and salt in a small bowl to form a thick paste. Slather on the lamb chops. Marinate the chops at room temperature up to 2 hours or in the refrigerator for up to 2 days.
- If the lamb was in the refrigerator, let it come to room temperature before grilling.
- Preheat the grill to medium. When the grill is hot, brush the grates with a wire grill brush to loosen any crud. Wipe the grates with an oiled side towel to pick up any loose soot or crud.
- Arrange the lamb chops on the grill. Do not move the chops for 2 to 3 minutes to allow lovely grill marks to form. Rotate the chops 90 degrees to create cross-hatch grill marks and grill for another 2 to 3 minutes. Flip the chops and repeat the process. Remove the chops from the grill to a platter and let rest for 5 to 10 minutes before serving.
EASY BAKED PORK CHOPS MARINATED IN ITALIAN DRESSING

- Combine pork chops, Italian dressing, salt, and pepper in a resealable bag. Shake to evenly coat pork chops with the dressing. Spread out in the prepared baking dish.

- For marinade: In a small bowl combine remaining ingredients.
- Pour marinade over chops,seal bag.
- Marinate in the refrigerator for 2-4 hours,turning bag occasionally.
- Drain chops.
- Discard marinade.
- Preheat broiler.
- Place chops on the unheated rack of a broiler pan.
- Broil 3-4 inches from the heat for 10-12 minutes for medium, turning meat over after half the broiling time.

These chops are seriously some of the best I have ever had. I make these a few times a month, at least!.. So juicy and flavorful. I use my cast iron grill skillet when weather does not permit to grill outside. I like seeing those grill marks...lol Enjoy!

- 1. In a large bowl, combine the first nine ingredients. Pour 1/2 cu marinade into a large resealable plastic bag; add the chops. ( I use my tupperware marinade container). Seal bag and turn to coat; refrigerate for at least 2 hours. (I leave overnight). Cover and refrigerate remaining coffee mixture until ready to cook.
- 2. For glaze: Place remaining coffee mixture in a small saucepan. Bring to a boil; cook until is reduced to about 1/2 cup.
- 3. If grilling; coat grill racks with cooking spray before starting the grill. Drain and discard marinade. Grill chops, covered, over medium heat or broil 4 - 6 in. from heat for 4 - 5 minutes on each side or until a meat thermometer reads 160. Spoon glaze over chops, and enjoy!
