KELAGUEN CHICKEN

This is a classic recipe from Guam, and one of my favorites. It is wonderful wrapped in a tortilla, or served with crackers. It is also wonderful by itself. I hope you like this as much as my family does!

1 tablespoon salt
1 (3 pound) whole chicken, cut into pieces
½ cup lemon juice
1 cup grated fresh coconut
1 hot chile pepper, minced

Steps:

  • Sprinkle chicken with salt and place pieces on a broiler pan. Broil for about 10 minutes, turn and broil for another 5 minutes or until chicken is cooked, but still moist.
  • Bone, and finely chop cooked chicken pieces.
  • In a medium bowl combine the chicken, lemon juice, coconut, and hot peppers. Chill for at least one hour and serve.

This is a recipe out of my grandmother's recipe box from a newspaper clipping dated in the 1960's. I added the use of Mrs Dash since I really don't like lemon pepper, which was available in the 60's in a handmade version. A true Kelaguen would be more like Ceviche with the meat being "cooked" by the marinade but with chicken, it's better to fully cook it instead.

6 chicken breasts
1 cup soy sauce
1/2 cup white vinegar
1 teaspoon garlic, crushed
ground black pepper, to taste
1/4 cup fresh lemon juice
salt, to taste
1 cup unsweetened flaked coconut
1/3 cup chopped green onion
1/8 teaspoon Mrs. Dash seasoning mix or 1/8 teaspoon lemon pepper
1/8 cup chopped green onion (garnish)

Steps:

  • Combine the soy sauce, vinegar, garlic and ground black pepper. Mix together.
  • Marinate chicken in refrigerator for 2 to 4 hours.
  • Remove chicken from refrigerator and dispose of marinade.
  • Broil or barbecue chicken for 25 to 30 minutes or until cooked through and juices run clear.
  • When chicken is cooked, remove bones and dice chicken meat.
  • Put diced chicken in a medium bowl. Add the lemon juice and salt and mix together.
  • Add the coconut, 1/3 cup green onions and Mrs. Dash/lemon pepper. Mix all together then top with green onion garnish and serve.

2 cups soy sauce
1 1/2 cups cane vinegar
1 teaspoon fresh ground black pepper
1 small yellow onion, thinly sliced, plus 1 cup finely chopped
2 1/2 lbs boneless skinless chicken thighs
4 cups thinly sliced scallions
1 1/2 cups unsweetened grated coconut
1/4 cup fresh lemon juice
8 red thai bird chiles, stemmed and thinly sliced
toasted pita bread, for serving

Steps:

  • Combine soy sauce, vinegar, pepper, sliced onion, and 1 cup water in a large bowl; add chicken and cover bowl with plastic wrap. Refrigerate for at least 8 hours or overnight to marinate.
  • Build a medium-hot fire in a charcoal grill or heat a gas grill to medium-high. (Alternatively, heat a cast iron grill pan over medium-high heat.) Cook chicken, turning once, until just cooked through. Transfer to a cutting board and let cool; cut into 1/2" cubes and place in a large bowl. Add chopped onion, scallions, coconut, juice, and chiles, and toss to combine; let sit at room temperature for 1 hour to meld flavors. Serve with pita, if you like.
