CREAMY CHOCOLATE MARBLE FUDGE



Creamy Chocolate Marble Fudge image

Enjoy this tasty creamy chocolate fudge recipe that's perfect for a dessert.

6 cups sugar
1 can (12 ounces) evaporated milk
1 cup butter or margarine
1 package (8 ounces) cream cheese, softened
2 jars (7 ounces each) marshmallow creme or 1 package (10 1/2 ounces) miniature marshmallows
1 tablespoon vanilla
1 package (12 ounces) white baking chips (2 cups)
1 cup milk chocolate chips
1 package (6 ounces) semisweet chocolate chips (1 cup)
2 tablespoons baking cocoa
1/2 cup chopped nuts, if desired

Steps:

  • Butter rectangular pan, 13x9x2 inches, or line with aluminum foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan. Heat sugar, milk, butter and cream cheese to boiling in 6-quart Dutch oven over medium-high heat and cook 6 to 8 minutes, stirring constantly. Reduce heat to medium. Cook about 10 minutes, stirring occasionally, to 225° on candy thermometer; remove from heat.
  • Quickly stir in marshmallow creme and vanilla. Pour 4 cups hot marshmallow mixture over white baking chips in large bowl; stir to mix. Stir milk chocolate chips, semisweet chocolate chips, cocoa and nuts into remaining marshmallow mixture.
  • Pour one-third of the white mixture into pan, spreading evenly. Quickly pour one-third of the chocolate mixture over top, spreading evenly. Repeat twice. Swirl knife greased with butter through mixtures for marbled design. Cool until set.
  • Refrigerate uncovered about 3 hours or until set. Cut into 12 rows by 8 rows with knife greased with butter. Store covered in refrigerator.

1-1/2 teaspoons plus 3/4 cup butter, divided
3 cups sugar
3/4 cup heavy whipping cream
1 package white baking chips (10 to 12 ounces)
1 jar (7 ounces) marshmallow creme
3 teaspoons orange extract
12 drops yellow food coloring
5 drops red food coloring

Steps:

  • Grease a 13x9-in. pan with 1-1/2 teaspoons butter; set aside., In a large heavy saucepan, combine the sugar, cream and remaining butter. Cook and stir over low heat until sugar is dissolved. Bring to a boil; cook and stir for 4 minutes. Remove from the heat; stir in chips and marshmallow creme until smooth., Remove 1 cup and set aside. Add orange extract and food coloring to the remaining mixture; stir until blended. Pour into prepared pan. Drop reserved marshmallow mixture by tablespoonfuls over the top; cut through with a knife to swirl. Cover and refrigerate until set. Cut into squares.

FUDGY MARBLED CHEESECAKE BROWNIES

Combine two favorite desserts in these super fudgy hybrid bars. A wooden skewer makes the marbled effect easy, but you could also use a toothpick or the probe-end of a digital thermometer instead.

2 sticks (16 tablespoons) unsalted butter, plus more for buttering the foil
1/3 cup unsweetened cocoa powder (not Dutch process)
1/2 teaspoon fine salt
1 3/4 cup all-purpose flour (see Cook's Note)
4 ounces semisweet chocolate, chopped
2 1/3 cups sugar
5 large eggs, at room temperature
12 ounces cream cheese, at room temperature
1 teaspoon pure vanilla extract

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 325 degrees F. Line a 9-by 13- inch baking pan with foil, leaving a 2-inch overhang on at least 2 sides. Butter the foil.
  • Whisk together the cocoa powder, salt and 1 1/2 cups of the flour in a medium bowl.
  • Melt the butter and chocolate, stirring frequently, in a medium saucepan over medium heat. Transfer to a bowl and let cool for 10 minutes. Whisk in 2 cups of the sugar and 4 of the eggs. Add the flour mixture, and stir to combine. Chill for 10 minutes.
  • Meanwhile, beat together the cream cheese, vanilla extract, remaining 1/3 cup sugar and 1 egg with an electric mixer in a large bowl on medium-high speed. Add the remaining 1/4 cup flour and beat until just combined.
  • Use 2 ice cream scoops or large spoons to drop alternating scoopfuls of the 2 batters into the prepared pan. (You will have more brownie batter than cheesecake batter and that's okay; just make sure to disperse the batters as evenly as possible.) Spread a couple of kitchen towels on your countertop. Gently drop the baking pan onto the countertop a few times until the batter evens out (the towels should catch the splatters).
  • Make the swirls: Drag a long wooden skewer through the batter, making sure the skewer reaches down to the bottom of the pan. This will marble the colors in a tie-dye effect. Tap the baking pan on the towels a few more times to smooth out the batter.
  • Bake the brownies, rotating about halfway through, until the top is set and the skewer inserted in the center of the brownies comes out with only a few moist crumbs, about 50 minutes.
  • Let the brownies cool completely in the pan set on a rack. Use the foil overhang to help lift them out of the pan. Cut into 16 pieces. Store in an airtight container at room temperature for up to 3 days.

With help from a common pantry staple you can turn regular brownies into an irresistible treat. By mixing a swirl of rich creamy or crunchy peanut butter into chocolate brownie batter you can create an extra special dessert that's fuss-free and no-fail. Plus, these brownies are ready to eat in just 45 minutes making them ideal for even busy weeknight indulgences.

1 box (1 lb 2.3 oz) Betty Crocker™ fudge brownie mix
1/4 cup water
1/2 cup vegetable oil
2 eggs
3/4 cup creamy or crunchy peanut butter

Steps:

  • Heat oven to 350°F. Grease bottom of 13x9-inch pan with shortening or cooking spray. In medium bowl, stir brownie mix, water, oil and eggs until well blended. Spread in pan.
  • In small microwavable bowl, microwave peanut butter uncovered on High 30 seconds; stir. Drop 20 spoonfuls of peanut butter in 5x4 rows over brownie batter. For marbled design, pull knife through batter and filling about 1 inch apart; turn pan and repeat.
  • Bake 26 to 28 minutes or until toothpick inserted 2 inches from side of pan comes out clean. To cut warm brownies easily, use a plastic knife and short sawing motions. Store tightly covered.

The orange colors in this fudge make it a great treat for Fall! The recipe, although tweaked for my own sweet tooth, comes from Taste of Home Prize Winning Recipes, 2008. Preparation time does not include time needed to set in the refrigerator!

3/4 cup unsalted butter
3 cups granulated sugar
3/4 cup heavy whipping cream
1 (12 ounce) package vanilla chips
1 (7 ounce) jar marshmallow creme
3 teaspoons orange extract
12 drops yellow food coloring
5 drops red food coloring

Steps:

  • Using butter, coat well the inside of a 13"x9" dish.
  • In heavy saucepan, combine sugar, cream & butter.
  • Cook & stir over lo2 heat until sugar is dissolved.
  • Turn up heat & bring to boil, then cook & stir 4 minutes.
  • Remove from heat, then stir in chops & marshmallow creme until smooth.
  • Measure out 1 cup of this hot mixture & set it aside.
  • Add orange extract & food coloring to remaining mixture, stirring until blended.
  • Pour the colored mixture into prepared dish.
  • Drop the 1 cup of marshmallow mixture by teaspoonfuls over the top of the colored mixture, then cut through with a knife to swirl it around.
  • Cover & refrigerate until set, then cut into cubes.
