Maple Tea Crème Brûlée image

Know somebody that's had every crème brûlée in the book? Surprise them with this marvellous concoction with rich Earl Grey and smooth maple syrup.

Number Of Ingredients 8

30 ml (2 tablespoons) tea leaves (Earl Grey or other tea)
100 ml (3/8 cup) water
160 ml (5/8 cup) fresh cream
160 ml (5/8 cup) milk
50 ml (1/4 cup) Golden maple syrup (Golden)
4 egg yolks
Maple sugar
Orange slices, blueberries, raspberries, and mint leaves for garnish

Steps:

  • Preheat oven to 140 °C (275 °F).
  • Pour water and tea leaves into a pan, heat over high flame, and brew a strong tea.
  • Straining the tea leaves, pour the tea into a different pan, add fresh cream, milk, and maple syrup. Heat over low flame until warm to the touch (30-40 °C or 86-104 °F).
  • Turn off heat. Pour in beaten egg yolk and mix until the mixture thickens. Pour into ramekins.
  • Place the ramekins in a baking dish, fill the pan with hot water 1/3 of the way, and bake in a 140 °C (275 °F) oven for 25-30 minutes.
  • When done, sprinkle maple sugar on top, place ramekins in a preheated over toaster, and brown topping to desired brownness.
  • Garnish with orange slices, blueberries, raspberries, and mint leaves, as desired.

Number Of Ingredients 9

3 cups all purpose flour
4 tablespoons (packed) dark brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
1/2 cup (or more) plus 6 tablespoons whipping cream
1/2 cup plus 2 tablespoons pure maple syrup
2/3 cup (about) powdered sugar

Steps:

  • Preheat oven to 375°F. Whisk flour, 2 tablespoons dark brown sugar, baking powder, baking soda and salt in large bowl to blend. Add butter and rub in with fingertips until mixture resembles coarse meal. Stir 1/2 cup whipping cream and 1/2 cup maple syrup in small bowl to blend. Gradually add cream mixture to flour mixture, stirring just until dough comes together and adding more cream by tablespoonfuls if dough is dry. Turn dough out onto lightly floured surface. Knead dough gently until smooth, about 5 turns. Using floured hands, pat out dough to 8-inch round; cut dough into 8 wedges. Transfer wedges to baking sheet, spacing 2 inches apart.
  • Bake scones until golden and tester inserted into center comes out clean, about 20 minutes. Transfer to rack.
  • Meanwhile, whisk remaining 2 tablespoons dark brown sugar, 6 tablespoons whipping cream and 2 tablespoons maple syrup in medium bowl to blend. Gradually whisk in enough powdered sugar to form thick glaze.
  • Drizzle or spread glaze over warm scones. Let stand until glaze sets.

  • Pour the tea into a cup. Stir the maple syrup into the tea, top with whipped cream, and sprinkle with cinnamon.

  • Fill mug with boiling water.
  • Dip lemon slice in a few times but do not leave in mug.
  • Let steep for about 5 minutes.
  • Drink.
