MAPLE-GLAZED MEATLOAF



Maple-Glazed Meatloaf image

A mixture of maple syrup and Dijon mustard coats this hearty meatloaf of beef, pork and veal.

3/4 pound sliced smoked bacon
1 cup finely chopped onion
3 cloves garlic, peeled and chopped
1/4 cup milk
1/4 cup sour cream or plain yogurt
2 large eggs
1 tablespoon dry mustard
2 teaspoons kosher salt
3/4 teaspoon dried thyme
1 teaspoon Worcestershire sauce
1/2 teaspoon freshly ground pepper
Dash of hot pepper sauce
1 pound ground beef
1 pound ground pork
1 pound ground veal
1/2 cup crushed saltines
1/3 cup finely chopped parsley
1/4 cup maple syrup
2 tablespoons Dijon mustard

Steps:

  • Chop 1/4 pound bacon; sauté until browned but not crisp, about 8 minutes. Transfer cooked bacon to paper towels to drain. Add onion and garlic to pan. Cover, and cook over low heat, stirring occasionally, until softened, about 10 minutes. Remove from heat, and set aside.
  • Heat oven to 375 degrees. In a medium bowl, whisk together the milk, sour cream, eggs, dry mustard, salt, thyme, Worcestershire sauce, ground pepper and hot pepper sauce.
  • In a large bowl, combine beef, pork, veal, cooked bacon, onion mixture and milk mixture. Using your hands, toss lightly to mix. Add saltines and parsley, and toss lightly again until thoroughly combined. Line a rimmed cookie sheet with foil; on it, form meat into a domed loaf about 5 inches by 12. Drape remaining strips of bacon lengthwise over loaf to completely cover.
  • In a small bowl, combine maple syrup and Dijon mustard. Paint a thick coat over bacon. Bake uncovered, until a thermometer inserted into center registers 165 degrees, 1 1/4 to 1 1/2 hours. If desired, baste occasionally with remaining maple syrup mixture. Let meatloaf rest about 10 minutes before slicing and serving.

1 egg, lightly beaten
2/3 cup milk
1 tablespoon Worcestershire sauce
1 cup crushed saltines
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1/4 teaspoon pepper
1-1/2 pounds ground beef
1/4 cup ketchup
3 tablespoons brown sugar
1 teaspoon ground mustard
1/4 teaspoon ground nutmeg

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Pat meat mixture into an ungreased 9x5-in. loaf pan. Bake, uncovered, at 350° for 50 minutes., Combine the ketchup, brown sugar, mustard and nutmeg; spread over top. Bake 15-20 minutes longer or until meat is no longer pink and a thermometer reads 160°. Let stand for 10 minutes before slicing.

MAPLE SAGE MEATLOAF

This recipe was originally adapted from the good ol' Better Homes and Gardens plaid cookbook. I changed it around a little because I don't really like using fillers like cracker crumbs or breadcrumbs. I tend to think of the crumbs as being evil, little, thirsty sponges absorbing all of the fats and grease that would, otherwise, drain out. I confess that I have used TVP (texturized vegetable protein) as an extender when I just didn't have enough ground meat. Grated carrots, mushrooms, zucchini and/or other vegetables can be added in the uncooked mix to lighten up the density. By the way, the leftovers make an unbeatable sandwich! My husband likes to doctor his meatloaf sandwiches up with mayonnaise, ketchup and hot sauce.

1 1/2 lbs ground chuck
3/4 cup sour cream
1 large egg
1/2 cup chopped onion
2 tablespoons dried parsley
1 teaspoon salt

2 tablespoons maple syrup (or brown sugar)
1 teaspoon prepared mustard
1 tablespoon barbecue sauce

Steps:

  • (I like to microwave the chopped onion for a minute or two on High prior to mixing it into the loaf) Combine the first seven ingredients together with your hands until thoroughly mixed.
  • Pat the mixture into a freeform loaf-shape in a casserole dish.
  • Mix together the last 4 ingredients and spread over the top of the loaf, dripping a little down the sides.
  • Bake at 350°F for 1 hour and 15 minutes (I usually drain off the fat after 45 minutes and at the end of the cooking time).

MAPLE SAGE ROASTED TURKEY

Number Of Ingredients 12

One 12- to 14-pound turkey
3 tablespoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 1/2 sticks (12 tablespoons) salted butter, softened
1/4 cup minced fresh sage plus 1 bunch fresh sage
1 yellow onion, cut in half
1 head garlic, top removed
3/4 cup chicken stock
1/4 cup maple syrup
1 bay leaf

Steps:

  • 24 to 48 hours before cooking, rinse the turkey inside and out. Pat dry with paper towels. Mix the salt, pepper, garlic powder and onion powder in a small bowl. Liberally sprinkle the inside and outside of the turkey with the seasoning mix and place on a sheet pan; cover with plastic wrap. Refrigerate 24 to 48 hours. Eight to 10 hours before cooking, remove the plastic wrap and continue to refrigerate uncovered.
  • Mix the butter with the minced sage. Use your fingers to loosen under the skin of the turkey, then rub the butter under the skin. Let sit at room temperature for 1 hour. If any moisture forms on the turkey skin, pat dry with paper towels.
  • Preheat the oven to 350 degrees F.
  • Stuff the turkey's cavity with the onion, garlic and sage bundle. Truss the turkey with kitchen twine, place on a rack in a large roasting pan and put in the oven.
  • Combine the chicken stock, maple syrup and bay leaf in a small saucepan over low heat. Bring to a very low simmer, then remove from the heat. After 30 minutes of roasting time, begin basting the turkey every 30 minutes with this mixture.
  • The turkey is done when an instant-read thermometer registers 160 degrees F in the breast and 165 degrees F in the thigh, 15 to 20 minutes per pound of turkey (3 hours to 4 hours 40 minutes). Tent the turkey with foil and let rest 45 minutes to 1 hour. Carve and serve.

A fine-cuisine meatloaf with three kinds of meat, stuffed with asparagus, and glazed with maple butter and tomato sauce.

Number Of Ingredients 16

1 bunch each of green and white asparagus, trimmed and blanched
900 g (2 lbs) ground pork
1 onion, chopped
125 ml (1/2 cup) breadcrumbs
30 ml (2 tablespoons) Dijon mustard
5 ml (1 teaspoon) tourtière seasoning
900 g (2 lbs) ground wild game meat
15 soda crackers, crumbled
30 ml (2 tablespoons) maple sugar
1 egg, beaten
10 ml (2 teaspoons) fresh thyme, chopped
turkey split breast, sliced into cutlets
A few sage leaves
Salt and freshly ground pepper
1 can of 680 ml (2 3/4 cups) store-bought tomato sauce
250 ml (1 cup) maple butter

Steps:

  • Place rack in middle of oven and preheat to 180 °C (350 °F).
  • Remove asparagus tips and set aside for garnish.
  • In a bowl, combine pork with onion, breadcrumbs, mustard, tourtière seasoning, salt and pepper. Chill in the refrigerator.
  • In another bowl, mix game meat with soda biscuits, maple sugar, egg and thyme. Chill in the refrigerator.
  • Spread pork in a 33×23-cm (13×9-in) rectangle on parchment paper, with the longest side facing you from left to right. Spread game meat over the pork. Arrange turkey cutlets on top and season with sage. Alternating colours, place green and white asparagus lengthwise on top, starting from lower edge of rectangle moving upwards. Using parchment paper, roll up from bottom edge of rectangle.
  • Place meatloaf log in centre of a rimmed baking sheet and bake in oven for 1 hour.
  • For the glaze, combine tomato sauce with maple butter and pour over log. Return to oven and bake another 1 hour.
  • Remove log from oven and transfer to a cutting board using two spatulas. Use a spoon to remove fat from pan juices.
  • Scrape bottom of pan to loosen all meat juices. Add a little water if required to make enough liquid. Strain pan juices through a sieve and pour into a gravy boat.
  • Cut log into generous slices, then arrange on a serving platter. Garnish with herbs and reserved asparagus tips. Serve with sauce.

I decided to experiment a little with meatloaf, since I don't cook often, I tend to experiment when I do. The kids loved it, which is odd for them. I find it works well in a cast-iron dutchoven.

1 lb ground beef, raw
1/2 cup onion, diced
1/2 cup sweet pepper, diced
1 egg
1/2 cup pumpernickel bread, toasted
1/2 cup pure maple syrup
1 tablespoon Worcestershire sauce
salt, to taste
pepper, to taste
8 slices bacon

Steps:

  • Preheat oven to 350°F.
  • Chop vegetables while toasting bread. In a mixing bowl put ground meat, add egg, vegetables and Worcestershire Sauce. Tear bread into small pieces and add to mix. Knead ingredients together and add syrup and salt and pepper. Knead until mixture is homogeneous.
  • Place mixture in lubricated baking dish and spread out evenly. Add bacon in a weaving pattern on top. Cover and place in oven.
  • After about 30 minutes, remove cover and put under the broiler for about 5 minutes or until bacon is of desired crispness.

SAGE MEAT LOAF

I really like this meat loaf because it's moist and the sage flavor in it makes it really yummy. The topping is not too sweet and adds a nice zip to it. It's also a good way to use up those saltine crackers that linger around. Recipe comes from Taste of Home magazine.

  • Crush saltine crackers in ziplock bag with mallet or rolling pin until finely crushed.
  • Combine the first 9 ingredients together in a large bowl and mix well with your hands.
  • Place and form meat loaf into a greased 9x5 loaf pan.
  • Bake uncovered for 50 minutes.
  • Combine sauce ingredients and spread over top of meat loaf.
  • Bake 15-20 minutes longer, until thermometer reads 160°F
  • Let meat stand for 10 minutes before slicing.
  • Enjoy!
