MAPLE PECAN BARS
Baking these bars fills me with warm memories of my Grandma Marie, who made a similar recipe. The pecan treats are popular at our office cookie exchange.-Amanda Spearing, Newton, Iowa

- Preheat oven to 350°. In a large bowl, combine flour and confectioners' sugar. Cut in the butter until crumbly. Press into a greased 15x10x1-in. baking pan. Bake until edges are lightly browned, 12-15 minutes., Meanwhile, in a large heavy saucepan, combine brown sugar, butter, syrup, cinnamon and salt. Bring to a boil. Cook and stir over low heat until butter is melted. Stir in pecans, cream and vanilla. Remove from the heat; spread over crust., Bake until bubbly, 20-25 minutes longer. Cool on a wire rack. Cut into bars.

- Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a bowl, whisk eggs and sugar until smooth. Add maple syrup, butter, vanilla, salt and pecans. Pour into crust. , Bake until a knife inserted in the center comes out clean, 30-40 minutes. Cool on a wire rack for 1 hour. If desired, top with whipped cream to serve. Store in the refrigerator.

- To make the crust, preheat the oven to 350 degrees F. Grease a 9x13 inch baking pan. Line the bottom of the pan with aluminum foil, and lightly grease the foil. Set aside.
- In the bowl of a food processor, combine the flour, sugar, and salt. With the machine running, add the butter pieces and continue to process until the mixture resembles very fine, moist crumbs. The mixture won't come completely together in the processor.
- Turn the crumbs out onto the prepared baking sheet and using your hands, gently press to form a smooth, even layer. Bake until the crust is a light golden brown, 30 to 35 minutes. Set aside.
- While the crust is baking, combine the butter, brown sugar, maple and corn syrups in a saucepan. Heat over medium heat, stirring constantly, until the butter has melted and the mixture is completely combined and smooth. Cook one additional minute, then remove from heat and set aside.
- In a large mixing bowl, whisk together the eggs, cream, vanilla and salt. Slowly whisk in about 1/4 cup of the warm sugar mixture to temper the eggs. Slowly whisk in another 1/4 cup, then slowly stir in the rest. When fully combined, stir in the pecans.
- Pour the pecan mixture over the prepared crust. Return to the oven and bake until the pecan mixture is bubbling and jiggles when gently tapped, an additional 20 to 25 minutes.
- Remove from the oven and place the sheet on a rack to cool completely. Lift the foil from the sheet to get the bars out of the pan. Cut into squares. Store in an airtight container.

Steps:
- Base: Preheat oven to 350 degrees to cook cookie base.
- Rub the flour, sugar and butter together in bowl, mix well and press firmly into 8 x 10" pan.
- Bake for 5 minutes.
- Remove from oven and set aside.
- Topping: Combine sugar and syrup in pot.
- Simmer on stove for 5 minutes.
- Cool and pour over the beaten eggs.
- Stirring well add the remaining ingredients.
- Pour over the partially baked dough and bake at 450 degrees for 10 minutes.
- Reduce heat to 350 degrees and continue to bake for 20 minutes longer.
- Cool and cut into squares-- enjoy-- enjoy-- enjoy.

- Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 8x8 baking dish with foil or parchment that goes all the way up the sides, so it is easy to remove the bars from the baking pan. Set aside.
- Combine the flour, 1/2 cup of light brown sugar, 1/2 teaspoon salt, and 1 1/2 sticks butter in a food processor and pulse until mixture begins to form small lumps. Alternately you can combine the ingredients in a large bowl and using a pastry cutter, break the butter into the flour until the butter is cut enough to resemble the size of peas or oat flakes. Sprinkle the mixture into the baking dish and press, creating an even layer of shortbread crust. Bake for 20 minutes or until golden brown in color.
- In a medium bowl that is microwave safe, melt the remaining 1/2 stick of butter. Whisk in the corn syrup, remaining 3/4 cup of brown sugar, maple syrup, eggs, remaining 1/2 teaspoon salt, and vanilla extract. Continue to whisk until all the lumps from the brown sugar have been worked out. Add the pecans and stir. Pour into the prepared shortbread crust. Bake for 20 - 25 minutes until the center is set and the pecans start to brown. Cool the baking pan on a wire rack. Remove from baking pan and allow to cool completely before cutting and serving. Serve by themselves, with whipped cream, or a big scoop of vanilla ice cream.
