MAPLE NUT BUTTER
This is wonderful on scones! I recently had friends stay in a Bed and Breakfast near my home. I met them every morning there and was served breakfast with them. This was served with the B&B's Dried Cherry Scones. We all loved it! I will post the recipe for Dried Cherry Scones on this site.

Steps:
- In a small bowl, stir together 1/2 cup chopped toasted pecans, 1/2 cup softened butter, and 1 tsp.
- maple syrup.
- Chill if not using immediately.
- Soften to room temperature before use.

My family loves the flavor of French toast in the morning. So for a little variety, we like to replace maple syrup with this slightly sweet topping.

- In a bowl, beat butter until smooth. Gradually add syrup, continuing to beat until smooth. Freeze in small portions.

- Preheat oven to 350 degrees F. Evenly spread pecans on an ungreased baking sheet. Toast pecans in oven for 7-9 minutes, being careful not to burn nuts. Mine were perfectly toasted at 8 minutes. Remove from oven and allow nuts to cool for a few minutes.
- Add pecans to food processor and process for 5-10 minutes, scraping down the sides as necessary. At this point the pecan should start to clump together. Continue to process until you reach the desired consistency.
- Add in maple syrup, cinnamon, vanilla, and salt and process again until smooth. If the nut butter starts to thicken up too much, you can add 1-3 teaspoon of coconut oil and process again until smooth.
- Transfer to mason jar or container and store at room temperature or in fridge. If you store at room temp, simply give the pecan butter a stir before you use it.

- Add nuts to a parchment lined baking sheet (or toaster oven sheet) and drizzle with maple syrup. Sprinkle on seasonings then stir to combine.
- Toast nuts for 5 - 6 minutes until fragrant and starting to brown. Alternatively you toast them in the oven at 350ºF for 15 - 20 minutes.
- Allow nuts to cool slightly then transfer to a food processor. Process on high until smooth and creamy, about 10 - 15 minutes depending on your food processor. You might also have to scrape the sides a few times to help keep the nuts blending.
