MAPLE-GLAZED GREEN BEANS
After I picked my first green beans one year, I wanted to make a savory dish that was unique, quick and packed with flavor. I loved this so much I couldn't stop eating it, so the next day I picked more beans and made this delicious side dish again. -Merry Graham, Newhall, California

- In a large saucepan, place steamer basket over 1 in. of water. Place beans in basket. Bring water to a boil. Reduce heat to maintain a low boil; steam, covered, until crisp-tender, 4-5 minutes., Meanwhile, in a large skillet, cook onion and bacon over medium heat until bacon is crisp; drain. Stir cranberries, syrup, salt, pepper and, if desired, bourbon into onion mixture. Add beans; heat through, tossing to combine.

MAPLE-MUSTARD GLAZED VEGETABLES
These are so good. The vegetables are baked in a sweet glaze. You won't be sorry you made this, it has become one of my family's favorites!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Place potatoes, beans, and onion into a 9x13-inch casserole dish.
- Stir maple syrup, soy sauce, mustard, olive oil, and garlic together in a bowl. Pour over veggies and mix until evenly coated. Cover with aluminum foil.
- Roast in the preheated oven for 25 minutes.
- Remove veggies from the oven and remove foil. Stir, ensuring sauce is distributed evenly. Reduce oven temperature to 350 degrees F (175 degrees C).
- Return veggies to the oven and bake, uncovered, for an additional 25 minutes.
- Remove from the oven; toss again. Return to the oven and bake until tender, about 25 minutes more. Serve piping hot or lukewarm.

- Preheat oven to 450 degrees.
- Place vegetables in a 9 x 13" casserole dish. In mixing bowl, stir together all the other ingredients until the mustard is dissolved. Pour over the vegetables and mix well until everything is coated. Cover with foil and place in oven. Bake for 25 minutes. Remove from oven and toss everything; use a spoon to drip sauce over the veggies. Turn oven down to 350 degrees and cook for 25 minutes uncovered. Remove from oven, toss again, and cook for 25 more minutes uncovered.

- Preheat the oven to 325 degrees F.
- Halve or quarter any large potatoes.
- In shallow dish large enough to hold potatoes in a single layer, toss potatoes with butter; season with salt and pepper.
- Spread in single layer and roast potatoes, uncovered, for 45 minutes, stirring once or twice during roasting.
- Meanwhile, in small dish, stir together vinegar, maple syrup, and sliced garlic.
- Drizzle potatoes with vinegar mixture, gently tossing with a spoon or spatula to coat.
- Continue to roast about 10 to 20 minutes more, until potatoes are fork-tender and glazed, stirring once or twice.
- To serve, sprinkle potatoes with green onions, thyme, and lemon peel. Makes 6 servings.
ROASTED MAPLE MUSTARD GREEN BEANS
These sweet-savory beans with 2 kinds of mustard and maple syrup are a dressed up _Sunday dinner_ version of one of my favorite sides, roasted green beans. Recipe adapted from Cook's Illustrated.

- Preheat oven to 450 degrees F. Line a baking sheet with foil.
- Combine the maple syrup, mustards and cayenne in a small bowl and set aside.
- Place green beans and carrots on baking sheet. Drizzle with oil and toss with hands to coat evenly. Sprinkle with salt, toss to coat. Distribute in an even layer.
- Roast for 10 minutes. Remove from oven. Drizzle with syrup/mustard mixture and using tongs, toss to coat evenly.
- Return to oven and continue roasting until beans and carrots are dark golden brown in spots and beans are beginning to shrivel, 10-12 minutes longer.
- Remove from oven, season with a little more salt to taste. Transfer to serving dish and garnish with parsley.

- Preheat oven to 350°F. Combine first 4 ingredients in small saucepan. Cook over low heat until butter melts, stirring until well combined.
- Pat hens dry. Tie legs together to hold shape. Place in small baking pan. Season with salt and pepper. Brush with maple mixture. Roast until juices run clear when hens are pierced in thickest part of thighs, basting occasionally with glaze, about 1 hour.
BAKED HAM WITH MAPLE MUSTARD GLAZE

- Preheat the oven to 350 degrees F.
- Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
- Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
- If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! Really slather it on!)
- Remove the ham from the oven, remove the foil, brush with any remaining glaze and cook, uncovered for another 5 minutes. Let it rest for 20 to 30 minutes.
- Serve hot or at room temperature.
MAPLE-GLAZED TUNA WITH PEAR-POTATO SALAD

- 1. Whisk together the mustard, maple syrup, lime juice, and 1 tablespoon of the olive oil. Set aside.
- 2. Season the tuna on both sides with salt and pepper. Heat the remaining 3 tablespoons olive oil in a large cast-iron skillet over high heat. Add the tuna and cook for 30 seconds on each side.
- 3. Remove from the pan and brush both sides of the tuna with the maple-mustard glaze. Transfer to a serving platter and garnish with the cilantro. Serve with the pear-potato salad.
