TURKEY-STUFFED PORTOBELLO MUSHROOMS



Turkey-Stuffed Portobello Mushrooms image

We use portobello caps to make these dinner-sized stuffed mushrooms that are big on flavor without being overly rich. Rather than the traditional sausage filling, this recipe calls for lean ground turkey blended with fresh herbs and spices, topped with golden, melted fontina cheese. Add a tossed salad and a slice of crusty whole-grain bread to complete the meal.

1 tablespoon extra-virgin olive oil
1 sweet onion, thinly sliced lengthwise
2 teaspoons cider vinegar
¾ teaspoon ground sage
½ teaspoon chopped fresh rosemary
½ teaspoon salt
½ teaspoon freshly ground pepper
⅛ teaspoon ground nutmeg
1 pound 93%-lean ground turkey
4 medium-large portobello mushroom caps, gills removed (see Tip)
1 tablespoon Worcestershire sauce
½ cup finely shredded fontina cheese

Steps:

  • Position rack in the lowest position; preheat oven to 400 degrees F.
  • Cook oil and onion in a large skillet over medium heat, stirring occasionally and reducing heat as necessary to prevent scorching, until softened and starting to turn golden, about 20 minutes. Stir in vinegar.
  • Meanwhile, combine sage, rosemary, salt, pepper and nutmeg in a small dish. Place turkey in a medium bowl and sprinkle the spice mixture over it. Gently knead to combine. Form into 4 equal balls. Rub mushroom caps on both sides with Worcestershire. Place one turkey ball in each mushroom cap, patting down to fill the cap. Place on a baking sheet.
  • Bake the stuffed mushrooms on the bottom rack until the mushrooms begin to soften, about 20 minutes. Remove from the oven, spread the onion mixture over the filling and top with fontina. Continue baking until the cheese is melted and golden and the turkey is cooked through, about 10 minutes more.

I found this recipe in the Thanksgiving issue of Easy Home Cooking. Sounds delicious and I need a safe place to keep it.

14 lbs whole turkey, thawed
1 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 cup pecans, chopped
12 ounces chorizo sausage, casing removed and crumbled
1 1/2 cups celery, thinly sliced
1 medium onion, chopped
1 medium red bell pepper, chopped
1 (16 ounce) package cornbread stuffing mix
2 cups chicken stock
1/3 cup butter, cut into small cubes
1 teaspoon dried thyme

Steps:

  • Preheat oven to 325ºF.
  • Remove the neck and giblets from the turkey; discard or reserve for another use.
  • Place on a rack in a large roasting pan, breast side up.
  • In a small bowl, combine the chili powder, oregano, garlic powder, salt and pepper.
  • Rub the turkey evenly with oil and sprinkle evenly with chili powder mixture.
  • Roast for 3 hours or until the breast reaches 170ºF and juices run clear.
  • Meanwhile, place a large nonstick skillet over medium-high heat until hot.
  • Toast pecans in the dry skillet; set aside on a plate.
  • Coat the skillet with non stick spray and add the sausage, celery, onion and bell pepper.
  • Cook until the sausage is no longer pink, about 4 min, stirring frequently.
  • Add the remaining ingredients; stir gently, yet thoroughly to blend.
  • Coat a 13x9" baking dish with cooking spray, add the sausage mixture, cover tightly and bake during last 40 min of roasting the turkey.
  • Cover the turkey with foil and let stand for 15 min before carving.
  • Serve stuffing on the side.

8 large portabella mushrooms
2 tablespoons olive oil
1 large onion, finely chopped
2 -3 large garlic cloves, minced
1 teaspoon paprika
1 lb extra lean turkey, minced with seasoning
1 cup finely chopped dried tomatoe, divided
1/2 cup grated parmesan cheese
fresh ground black pepper
salt (optional)
4 ounces gruyere, thinly sliced

Steps:

  • Preheat the grill to 350°F Line two grill-proof pans with aluminum foil.
  • Remove the stems from the mushroom caps and finely chop the stems. Place the caps in a single layer on the foil-lined pans, gill-side up. Cook the mushrooms on the hot grill with the lid closed for 10-15 minutes or until the caps begin to soften.
  • Meanwhile, heat the oil in a large skillet over medium heat. Sauté the onion until it begins to soften, about 3 minutes. Add the chopped mushroom stems and cook 2 minutes. Add the garlic and paprika, and cook 1 minute. Add the turkey and cook until it's no longer pink, about 3 minutes. Remove from heat. Stir in 3/4 cup chopped dried tomatoes. Add the Parmesan and a grind or two of freshly ground black pepper, mixing until well blended. Add salt, if needed.
  • Stuff the mushroom caps generously with the filling, and top with a thin slice of Gruyère. Return the mushrooms to the grill. Close the cover and cook for 10 to 15 minutes or until the cheese has melted and the mushrooms are tender. Sprinkle with remaining dried tomatoes. Serve immediately.

1 boneless skinless turkey breast half (2 pounds)
1/2 pound uncooked chorizo, crumbled
2 tablespoons olive oil
1 teaspoon salt, divided
1 teaspoon pepper, divided
2 cups water
1 cup milk
1 cup quick-cooking grits
1 can (4 ounces) chopped green chilies
1/2 cup shredded Mexican cheese blend
Minced fresh parsley, optional

Steps:

  • Cover turkey with plastic wrap; flatten to 1/2-in. thickness. Remove plastic. Spread chorizo over turkey to within 1 in. of edges. Roll up jelly-roll style, starting with a short side; tie with kitchen string., Rub with oil. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a large ovenproof skillet, brown turkey on all sides. Bake at 350° for 1-1/4 to 1-1/2 hours or until a thermometer reads 170°. Cover and let stand for 10 minutes before slicing., In a large saucepan, bring the water, milk and remaining salt to a boil. Slowly stir in grits. Reduce heat; cook and stir for 5-7 minutes or until thickened. Stir in the chilies, cheese and remaining pepper. Serve grits with turkey. Sprinkle with parsley if desired.
