Maple Roasted Yams with Cranberries and Orange image

The most scrumptious yams you'll ever eat - at Thanksgiving or otherwise!

Number Of Ingredients 6

5 lbs orange-fleshed yams (peeled & cut into 1-inch pieces)
1 cup pure maple syrup
1 stick of butter (8 tablespoons butter, melted)
2-4 Tbls. orange juice concentrate OR juice from one large orange (approx. 1/2 cup)
2 tsp. grated orange peel (optional)
1/2-1 cup dried cranberries (I always eyeball and just do two big handfuls)

Steps:

  • Preheat oven to 350 degrees Fahrenheit and bring a large pot of salted water to a boil. Cook cubed yams in the water until they just begin to soften, about 3 minutes. Drain and transfer to a 13x9 baking dish.
  • In a saucepan, melt butter over medium heat and add orange juice and maple syrup. Return to a gentle boil and simmer until it thickens just a bit, 3-5 minutes. Pour mixture over yams.
  • Bake yams uncovered just until tender, about 30 minutes, stirring gently every 10-15 minutes. Mix in cranberries. Continue baking until yams are very tender and juices form a thick glaze around the yams, about 15 minutes longer. Remove from oven, stir, and serve!

5 large sweet potatoes (about 3 pounds), unpeeled and halved crosswise
2 1/8 teaspoons kosher salt, divided
3/4 cup Ocean Spray® Cranberry Juice Cocktail
1/2 cup Ocean Spray® Jellied Cranberry Sauce
3 tablespoons unsalted butter
1 tablespoon brown sugar
Zest from 1 orange, finely grated
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
For the cranberry topping
1/3 cup Ocean Spray® Craisins® Dried Cranberries
1/4 cup cranberry juice

Steps:

  • Preheat the oven to 425oF. Generously butter a 9 X 13-inch baking dish or equivalent.
  • Serve the potatoes: Sprinkle the softened cranberries over and around the potatoes and serve.

From 1998 Bon Appetit this yam dish has a wonderful maple glaze that's sweet, but doesn't take the place of dessert, like so many other recipes. The part that makes it special is that you par-boil the potatoes, which ensures that they get done, but still remain soft. We made it last Thanksgiving and it was a favorite.

4 3/4 lbs yams, peeled, cut into 1 inch pieces (red-skinned sweet potatoes)
3/4 cup pure maple syrup
4 tablespoons butter, melted
1/2 teaspoon orange zest
6 tablespoons dried cranberries
chopped fresh parsley

Steps:

  • Preheat oven to 350.
  • Cook yams in boiling salted water 3 minutes.
  • Drain.
  • Transfer to 13x9 baking dish.
  • Blend syrup, butter, and peel in a small bowl.
  • Pour over yams.
  • Sprinkle with salt and pepper and toss to coat.
  • (Can be made one day ahead. Cover and refrigerate.).
  • Bake yams uncovered until just tender, stirring and occasionally basting, about 30 minutes.
  • Mix in cranberries.
  • Continue baking until yams are very tender and juices form thick glaze, about 15 minute longer.
  • Garnish with chopped fresh parsley and serve.

Candied Yams with Cranberries image

This is a delicious variation on candied yams. The fresh cranberries add a slight tartness that cuts down on the sweetness characteristic of traditional candied yams. This recipe was taken from a bag of miniature marshmallows many years ago and I recently re-discovered it. Hope you like it as much as I do!

1/2 cup flour
1/2 cup packed brown sugar
1/2 cup oatmeal, uncooked
1 teaspoon cinnamon
1/3 cup butter
2 (17 ounce) cans yams, drained
2 cups cranberries, raw
1 1/2 cups miniature marshmallows

Steps:

  • Combine flour, sugar, oats and cinnamon.
  • Cut in butter until mixture resembles coarse crumbs.
  • Lightly toss 1 cup crumb mixture with yams and cranberries.
  • Arrange in a 1 1/2 quart casserole.
  • Sprinkle with remaining crumb mixture.
  • Bake at 350 degrees for 35 minutes.
  • Sprinkle with marshmallows and return to oven until marshmallows are lightly browned.

4 medium sweet potatoes (2 to 2-1/4 pounds), peeled and cut into 1/4-inch slices
1/2 cup orange juice
6 tablespoons butter
1/4 cup packed brown sugar
1/4 cup maple syrup or honey
1 tablespoon grated orange zest
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
TOPPING:
1/3 cup old-fashioned oats
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons cold butter
1/4 cup chopped pecans

Steps:

  • In a large saucepan over medium heat, cook sweet potatoes in boiling water until tender but still hold their shape, about 5 minutes; drain. Arrange in a buttered 2-qt. baking dish so slices overlap slightly. , In a saucepan, combine juice, butter, sugar, syrup, zest and spices; bring to a boil over high heat, stirring occasionally. Reduce heat to medium; cook until thickened, about 5 minutes. Drizzle over potatoes., In a small bowl, combine oats, sugar and cinnamon. Cut in butter until crumbly. Stir in pecans. Sprinkle over potatoes. Bake, uncovered, at 350° for 30 minutes.
