Categories     Pasta

Time 1h10m

Number Of Ingredients 8

1 box large pasta shells, boiled until almost done & drained
1 lb ground beef or turkey
1 onion, chopped
salt and pepper to taste
garlic powder or fresh garlic, minced, to taste
1 pt cottage cheese or ricotta cheese
1 pkg shredded italian cheeses
1 jar(s) spaghetti sauce

Steps:

  • 1. Preheat oven to 350 degrees. Prepare pasta shells, drain and set aside.Brown meat & onions w/ salt, papper, & garlic. Drain off any oil & put in a large bowl. Add cottage/ricotta cheese, and 1/2 bag of shredded cheese. Mix well. Stuff each pasta shell and line a 13" X 9" pan that you've sprayed w/ oil. Top stuffed shells w/ spaghetti sauce (I like Prego w/ Mushrooms)& remaining cheese. Bake for 45 minutes until heated through and the cheesy is browning and bubbly. Let it set for 10 minutes if you can... Serve w/ a salad and garlic bread for rave reviews! I have never had anyone dislike this. It is definitely one of our favorite comfort foods.

POOR MAN'S LASAGNA

Poor Man's Lasagna image

This is how I always fix my lasagna- I don't like messing with the real noodles :-) It's really healthier than you'd expect such a fulfilling meal to be. You can use ground turkey instead of beef. I have also made it with squash and mushrooms instead of meat- which was a nice change. It goes great with a big chunk of freshly toasted garlic bread... Edit: After some of the reviews I thought I'd mention that the pasta sauce I use isn't plain tomato sauce, but a flavored sauce that you'd eat over spaghetti (like chunky garlic mushroom flavor.)

Time 45m

Yield 8 serving(s)

Number Of Ingredients 6

1 lb lean ground beef
1 (20 ounce) can pasta sauce
1 lb curly pasta (or your favorite shape, whole grain adds a nice taste)
1 egg
1 1/2 cups fat-free cottage cheese
1/2 lb grated cheese (I use 2% colby jack)

Steps:

  • Brown meat in a skillet. Drain fat from meat (I usually rinse it under warm water.).
  • Meanwhile, boil noodles according to package directions (its OK if they're a little underdone.).
  • Meanwhile mix the egg and cottage cheese in a bowl, and set aside.
  • Spray a 9x13 pyrex. Coat the bottom with a very thin layer of pasta sauce. Layer about half of the noodles on top of the sauce. Layer the meat on top of that, followed by another thin layer of sauce. Layer the cottage cheese mixture on top of that, followed by the remaining noodles. Add the remaining sauce on top of the noodles (I prefer it thin on top, so that the noodles get crispy-chewy.) Sprinkle all of the cheese on top of the lasagna.
  • Bake at 350 for 20-30 minutes depending on how crunchy you like your noodles.
  • I have found that half of a container of cottage cheese is perfect, so I usually go ahead and mix the remaining half with an egg, and freeze it. It defrosts quite easily in the fridge next time.
  • I also usually buy the meat on sale in bulk, and freeze it in pre-cooked portions. If you do that, you can easily put this meal together quickly. It's also easy to make 2 lasagnas at once, and freeze one for later. You can reheat it in the microwave, or in the oven at 350 for 20 minutes, covered.

LASAGNA CASSEROLE - EASY (BUT DELICIOUS!)

Lasagna Casserole - Easy (But Delicious!) image

Provided by Claudia Gomez

Time 50m

Yield 6

Number Of Ingredients 13

10 oz of short pasta
1lb of ground beef
1/2 a cup of chopped onions
1 tsp of minced garlic
25 oz of marinara sauce
1/4 of a cup of water
1 cup of ricotta cheese
1 large egg
3 cups of shredded mozzarella cheese
1/2 cup of grated parmesan cheese
Italian herbs and seasoning
Salt and pepper to taste
Fresh basil to serve

Steps:

  • Bring a large pot of lightly salted water to a boil on the stovetop.
  • Add in your pasta and allow it to cook until it's al dente (cook the pasta for one or two minutes less than it says to on the back of the packet). Once you finish cooking the pasta, drain the water, and keep the pasta ready on your counter.
  • Place a large skillet onto a medium heat on the stovetop and throw in your ground beef, chopped onions, and minced garlic. Allow the ingredients to cook on medium heat until the ground beef is browned all over, and the onions have softened up.
  • Add in your Italian herbs and seasoning alongside salt and pepper to taste. Stir before pouring over your marinara sauce. Pour in a little water (no more than 2 tbsps) to lighten the sauce.
  • Allow the ingredients to simmer in the sauce until it's warmed up (no need to boil), then add your drained pasta to the mix and stir everything together.
  • Now you need to prepare a 13 x 9-inch casserole dish and preheat your oven to 350 °F.
  • While the oven is preheating, pour your ricotta cheese into a large mixing bowl. Crack your large egg into the bowl and whisk it into the cheese.
  • Shred your mozzarella cheese and grate your parmesan. Add half of both kinds of cheese to the mixing bowl. Stir everything together with a light seasoning of pepper.
  • Now it's time to layer your lasagna casserole. First, pour half of the sauce, beef, and pasta into the baking dish. Add a smooth layer of your cheese mixture, then add a second layer of sauce, beef, and pasta.
  • Add any leftover cheese mixture to the top, cover the pan with tin foil, and then place the lasagna casserole into the oven.
  • After 30 min of baking, take the easy lasagna casserole out of the oven, remove the tin foil, and cover the top with the rest of your grated parmesan and shredded mozzarella.
  • Place the lasagna back into the oven, this time uncovered. Bake for a further 10 min to give the lasagna a cheesy, yet golden brown finish.
  • Leave to cool, sprinkle with fresh basil, and serve up to a hungry dinner table!

10-LAYER POOR MAN'S LASAGNA CASSEROLE

10-Layer Poor Man's Lasagna Casserole image

I had to come up with a kid/adult friendly recipe to please everybody while my step-daughter was visiting. So this is what I did. We ALL LOVED this! It ended up making a lot, though, so you might want to make a half a recipe. I'll be taking this to the next potluck or family gathering that comes up! It was so good! It came out WAY better than I thought it would. I was quite surprised and happy! Hope you try it!
