MAPLE-CURED CANADIAN BACON RECIPE

This recipe was a lesson on the complexity of the loaded term "Canadian-bacon," where the maple-cured and smoked pork loin I made is just one of many possible interpretations.

1 gallon water, divided
1 cup kosher salt
1 cup maple syrup
1/3 cup light brown sugar
2 teaspoons pink salt (aka InstaCure, Prague Powder)
4 bay leaves
3 medium cloves garlic, smashed
1 tablespoon black peppercorns
1 boneless pork loin, trimmed of excess fat (about 4 to 5 pounds)
1 to 2 fist-size chunks of light smoking wood, such as apple or cherry

Steps:

  • To make the cure, combine 1 quart of water, kosher salt, maple syrup, brown sugar, pink salt, bay leaves, garlic, and peppercorns in a medium saucepan. Bring to a boil over high heat, stirring to dissolve salt and sugar. Boil for 1 minute, then remove from heat. Transfer to a large container and stir in remaining 3 quarts of water. Place in refrigerator until completely chilled. Fully submerge pork loin in cure and let sit in refrigerator for 3 to 5 days.
  • Remove pork from cure and place in large container. Add enough fresh water to fully submerge loin. Let sit for 30 minutes, then remove pork from water and pat dry with paper towels.
  • Fire up the smoker or grill to 225°F (107°C), adding chunks of smoking wood when at temperature. When wood is ignited and producing smoke, place pork in and cook until an instant-read thermometer registers 140°F (60°C) when inserted into thickest part of the pork loin, about 2 to 3 hours.
  • Let pork cool for 30 minutes. Slice and pan fry before serving.

Maple-Mustard Glazed Canadian Bacon:
1/4 cup grade B pure maple syrup
1 heaping tablespoon Dijon mustard
2 tablespoons canola oil
6 slices thick-cut Canadian bacon
Vermont Cheddar and Herb Scramble:
12 cherry tomatoes, halved
Salt and freshly ground black pepper
12 large eggs
3 ounces grated aged white Vermont Cheddar
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh parsley leaves
2 teaspoons finely chopped fresh tarragon
6 tablespoons unsalted butter, cut into pieces
Popovers:
1 tablespoon unsalted butter, melted and cooled, plus more for greasing pans
3/4 cup all-purpose flour
3/4 cup whole milk, at room temperature
1/2 teaspoon kosher salt
1/2 teaspoon coarsely ground black pepper
2 large eggs, at room temperature

Steps:

  • For the canadian bacon: Whisk the maple syrup and mustard in a small bowl. Set aside. Heat the canola oil in a large cast-iron pan over high heat. Add the Canadian bacon and cook until browned on the bottom, about 3 minutes. Flip and brush generously with the maple syrup mixture. Cook for another 2 minutes, and then transfer to a platter.
  • For the cheddar and herb scramble: Heat the canola oil over high heat in another cast-iron skillet. Add the cherry tomatoes cut-side down and cook until seared, 1 to 2 minutes. Season them with salt and pepper, and transfer to a plate.
  • Whisk together the eggs, Cheddar, chives, parsley and tarragon in a large bowl and sprinkle with salt and pepper. Heat the butter in a large nonstick pan over medium-low heat until it begins to sizzle. Add the egg mixture and slowly cook, stirring with a wooden spoon, until soft curds form. Remove from the heat and set aside.
  • For the popovers: Preheat the oven to 425 degrees F. Generously brush a 6-slot aluminum popover pan with softened butter. Place the pan in the oven to heat 5 minutes before you are ready to add the batter.
  • Whisk together the melted butter, flour, milk, salt, pepper and eggs until smooth. The batter should be thin. Fill the popover pans less than halfway full and bake for exactly 30 minutes. Do not open the oven door while popovers are baking. Make the popovers last because they need to be eaten almost immediately once removed from the oven.
  • For assembly: Open the popovers and fill each half with a slice of the bacon. Top each with the eggs, and a cherry tomato half. Serve the remaining tomatoes on the side.

cayenne pepper, to taste
3/4 lb canadian bacon, thinly sliced (about 18 slices)

Steps:

  • 1. Preheat broiler.
  • 2. In a small bowl stir together mustard, syrup, and cayenne.
  • 3. Arrange bacon slices in one layer on rack of a broiler pan or in a jelly-roll pan and brush 1 side of each bacon slice generously with glaze.
  • 4. Broil bacon about 4 inches from heat 3 minutes.
  • 5. Turn bacon and broil just until golden around edges, 3 to 4 minutes.

1 lb approximately Canadian bacon

Steps:

  • Preheat oven to 300°F (150°C).
  • Combine vinegar, maple syrup, and brown sugar in a bowl. Set aside.
  • Slice Canadian bacon about ½-inch thick. Arrange the slices in a casserole or baking dish, and spoon the syrup mixture over the slices.
  • Bake for 30 minutes. Serve hot or at room temperature. (To serve as a snack, cut slices into bite-sized pieces and serve with toothpicks.).

1 tablespoon Dijon mustard
1/4 teaspoon cracked black pepper
16 thick-cut slices double smoked bacon

Steps:

  • Preheat the oven to 400 degrees F. Whisk together the maple syrup, mustard and pepper in a small bowl. Lay the bacon on a baking sheet. Bake in the oven for 9 to 10 minutes. Remove the bacon and place on a baking rack over a separate baking sheet. Using a paper towel, blot and soak up any excess oil. Then, using a pastry brush, generously glaze the bacon with the syrup. Return the bacon to the oven for another 1 to 2 minutes, to desired crispness. Transfer to a platter and serve.

1 tablespoon light brown sugar
2 1/2 teaspoons dijon-style mustard
1 teaspoon fresh lemon juice
1 pinch salt (optional)

Steps:

  • Combine syrup, brown sugar, mustard, lemon juice and salt in a 10 inch skillet over medium heat.
  • Stir until mixed.
  • When hot, add bacon slices and gently shake pan until the bacon slices are coated.
  • Remove from heat and transfer bacon to serving platter.
  • Brush with additional glaze.
  • Serve immediately.

12 slices bacon
1/4 cup maple syrup
1 teaspoon Dijon mustard
1 -2 teaspoon brown sugar

Steps:

  • Cook the bacon in a large skillet over medium-high heat until browned, but NOT crispy; drain on paper towels; set aside.
  • In a small bowl whisk together the maple syrup, Dijon mustard and brown sugar; set aside.
  • Return the bacon back to the skillet and brush with glaze, then turn the bacon over.
  • Cook the glazed side down for 2 minutes over low heat.
  • Glaze then turn and cook for another 2 minutes over low heat.
  • Repeat until all the glaze is used up.
  • Serve immediately.
